BETTY'S MINT JELLY
An easy fuss free recipe from a friends mother. I had to publish it before the recipe written on a piece of paper disappears forever. It's a recipe whereby I would always have the ingredients therefore will never go without.

Steps:
- Disolve sugar in the vinegar. Use a small amount of this mixture to disolve the gelatine. Add the disolved gelatine back into the vinegar sugar mixture. Add finely chopped mint and green food colouring if needed.
- Pour into steralised jars and store in the fridge.
AUNT BETTY'S MOCK CHERRY PIE
Here in New England, where cranberries are more plentiful (and less expensive) than cherries, my dear sister-in-law would make this pie every year. We lost her a few years ago, but will always remember her warm and loving personality through her recipes.

Steps:
- Put cranberries and raisins into a blender and chop up together.
- Sift flour and sugar together and add to fruit mixture.
- Add water and vanilla.
- Pour into an unbaked pie crust.
- Top with crust and cut slits for steam to escape.
- Bake at 425 degrees for 30 to 40 minutes.
- 5 minutes before it is done, brush with milk and sprinkle with sugar.
- Chill.
- (The taste is better when it is cold).

AUNT BETTY'S CREAMY TO DIE FOR BEEF CASSEROLE
My aunt Betty makes this amazing casserole. Though hard boiled eggs and chipped beef are hardly haute cuisine, I think you'll agree after trying this one that the flavor is outstanding. You have to mix this up and refrigerate it overnight before baking it to fully enhance the flavors. Do not add any salt--the beef and the soup are salty enough. You may want to rinse the beef before adding it to the casserole as it is quite salty. Add a green salad and "presto" dinner is ready. Prep time is minimal but you need to mix this up the day before you want to bake it.

- Put soup in a 2 quart casserole dish.
- Stir until creamy.
- Gradually add milk, stirring well.
- Add cheese, macaroni, onion and beef; blend well.
- Fold in sliced eggs.
- Cover and store in the refrigerator at least 3 hours or overnight.
- Stir briefly and bake uncovered at 325°F for one hour.

- Blend flour, shortening and salt.
- In a seperate bowl beat in egg, vinegar and water until fluffy. Add to the flour mixture.
- Use immediately or wrap in waxed paper and refrigerate. Will keep in refridgerator for almost 2 weeks. Before using refrigerated dough, allow to come to room temperature.
