Steps:

  • Cook chicken, sauce and water in saucepan on medium heat 5 min. or until heated through, stirring occasionally.
  • Meanwhile, mix mayo, dressing, celery and blue cheese.
  • Fill buns with chicken mixture, cheddar and mayo mixture.

Steps:

  • Preheat oven to Broil.
  • Place chicken in a foil-lined broiling pan. Pour hot pepper sauce and green hot pepper sauce over chicken, then sprinkle with paprika. Top with onion slices.

1 1/2 cups shredded rotisserie chicken
1/4 cup brie cheese (rind removed), cut into small pieces
1/4 cup crumbled blue cheese
1/4 cup thinly sliced celery
1/2 teaspoon celery seeds

Steps:

  • Preheat the broiler. Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Broil until toasted, 1 to 3 minutes. Remove from the oven and preheat to 400 degrees F.
  • Melt the butter with the hot sauce in a small saucepan over medium-high heat, whisking, until smooth. Toss the chicken with all but 1 tablespoon of the spicy butter in a medium bowl.
  • Spread the chicken mixture evenly on the bottom bread piece; dot evenly with the cheeses and sprinkle with the celery. Cover with the top bread piece, then brush the roll tops with the reserved 1 tablespoon spicy butter and sprinkle with the celery seeds. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

I found this recipe online and made a few changes to suit what I had available. If you have leftover grilled chicken, use it instead of the pre-cooked chicken strips. I like to use homemade blue cheese dressing. These are very sloppy sandwiches so be sure to have lots of napkins or a wet washcloth handy! Enjoy!

2 tablespoons barbecue sauce

2 c flour
2 tbsp. Corn starch
1 tsp. Salt
1 tsp. pepper
4 whole eggs
Vegetable oil
12 oz. Buffalo Wing Sauce
Blue cheese crumbles
Potato buns
Lettuce

Steps:

  • Using a heavy metal shallow skillet, fill with vegetable oil ⅔rds full. Place on medium high heat. Meanwhile, in a separate bowl, whisk together flour, cornstarch, salt and pepper. In another bowl, whisk eggs until yolks and whites have combined. Pour buffalo sauce in a bowl or container that is big enough to dip the chicken breasts and set aside.
  • Dredge the chicken breast through the flour mixture on both sides, shake off excess; dredge through the egg mixture on both sides, shake off excess; and dredge through the flour mixture again on both sides and shake off excess. Place in hot oil and cook on both sides for 7-10 minutes on each side, just until gold brown. Remove from heat using tongs and place on plate lined with paper towel and turn on both sides to remove excess oil and while still hot, dredge through buffalo sauce on both sides and place on cooling rack.
  • Once chicken is finished, serve on potato bun with butter lettuce and bleu cheese crumbles to preference.

1 teaspoon sweet paprika, 1 /3 palm full
1 teaspoon chili powder, 1/3 palm full
A drizzle extra-virgin olive oil
2 tablespoons butter
1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
Bib or leaf lettuce leaves
4 crusty rolls, split
2 cups sour cream
4 scallions, thinly sliced
1/2 pound blue cheese, crumbled
Small red onion, thinly sliced
8 ribs celery, cut into sticks
2 large carrots, peeled and cut into sticks

Steps:

  • Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.
  • Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.
  • Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

1 - 8 ounce package cream cheese, softened

1/2 cup hot sauce

1 tablespoon powdered ranch powder

Steps:

  • Preheat oven to 375°. Spray a 9x13 pan with cooking spray.
  • In a mixing bowl, combine shredded warm chicken, green onions, and 1/2 cup cheese.
  • Stir together ranch dressing, softened cream cheese, and hot sauce. Pour over chicken mixture and mix thoroughly.
  • Slice Hawaiian rolls in half horizontally and separate the top from the bottom. You can keep the rolls together and don't have to separate them. Place the bottom half of the rolls in the baking pan.

1 lb (approx.) chicken breast tenderloins
2/3 cup mild Buffalo wing sauce (hot for spicier)
3 medium celery ribs finely chopped (about 1 1/4 cups)
3 Tbsp Kraft Ranch Dressing
3 Tbsp Kraft Real Mayo (or Salad Dressing)
3 Tbsp Kraft Natural Blue Cheese crumbles
12 Slider buns
1 pkg (5-oz.) Kraft Sharp Cheddar Cheese Cracker Cuts

Steps:

  • Cook chicken: In 12-inch skillet, heat oil over medium-high heat. Add chicken tenders and cook 4 to 5 minutes or until chicken loses its pink color throughout and internal temperature reaches 145 degrees F. Transfer chicken to cutting board; cut into 1/2 inch pieces or slightly shred. Return chicken to skillet over medium heat. Stir in wing sauce and heat through, 2 or 3 minutes.
  • Meanwhile, preheat broiler with oven rack about 6 inches from broiler.
  • Make dressing: In small bowl, mix together well ranch dressing, mayo, and blue cheese. Stir in diced celery until well blended.
  • Prepare buns: slice tops off buns gently and set tops aside. Place bottoms on broil pan or rimmed baking pan WITH SIDES TOUCHING.
  • Assemble sandwiches: top each bun with 1/4 cup or so chicken mixture. Top chicken with rounded tablespoon blue cheese mixture and 1 square cheddar slice.
  • Broil sandwiches about 1 minute, watching carefully, or until cheese melts.
  • Serve: Remove from oven, put tops on sandwiches, and use a spatula to serve (hot!)
