- For the Vegetable Saute: Warm the oil in a large skillet over medium-high heat. Add the shallot and the garlic and cook until tender, about 2 minutes. Add the mushrooms and asparagus to the pan and cook until tender. Add the artichoke hearts and season with salt and pepper, then cook until the artichoke hearts are heated through. Remove the skillet from the heat, then add in the tomatoes and stir to warm them up.
- For the Tarragon Vinaigrette: Combine the oil, vinegar, tarragon, salt and pepper in a glass screw-top jar. Seal the jar and shake vigorously to mix the vinaigrette.
- Toss the vegetables with the vinaigrette and serve.

- Put morels, porcinis or both in a bowl with very hot water to cover; soak until soft, about 20 minutes. Drain morels and reserve soaking liquid. Cut morels in half; if porcinis are large, chop them roughly.
- Melt butter in a large skillet over medium-high heat; when butter is hot and foam has subsided, add shallots and reconstituted and fresh mushrooms to pan. Cook until shallots soften and fresh mushrooms have released their liquid and it has cooked off, about 10 minutes.
- Add asparagus and 1/2 cup reserved liquid to pan. Bring liquid to a boil, cover, reduce heat so mixture simmers, and continue cooking for another 2 to 4 minutes, or until asparagus is crisp-tender. Add cream and tarragon or chervil and continue cooking, uncovered, until sauce thickens slightly and asparagus is tender, about 4 minutes more. Season with salt and pepper and serve.

- Cook the potatoes in a large pan of boiling water for 8-10 mins until tender, then drain and keep warm in the pan. Season the chicken with ground black pepper. Heat the oil in a large non-stick frying pan. Gently fry the chicken with the onion and garlic for 5 mins until both are lightly browned. Turn over the chicken once and stir the onion regularly.
- Pour over the stock, add 2 sprigs of tarragon and bring to a gentle simmer. Cook for 5 mins, then turn the chicken, add the asparagus and cook for 3 mins more. Chop the remaining tarragon.

ASPARAGUS MUSHROOM PASTA SAUCE (MOOSEWOOD)
We're yet to try this but it looks yum, so I'm sharing it here to remind myself to make it & to make changing the measurements easier. Serve with some parmesan or minced dill scattered over the top. This recipe, the following description and note come courtesy of Moosewood Cookbook. Although designed for pasta, this sauce is also good in crepes or on rice or baked fish. If you have some left over, try filling an omelette with it. Note: The alcohol in the wine will evaporate during cooking.

- Steam the asparagus until just tender, transfer to a colander & rinse under cold running water then set aside to drain well.
- Melt the butter in a large skillet. Add onion & salt and saute for about 5 minutes.

- Steam asparagus as directed and set aside. Melt 1 Tbsp olive oil in pan over med high heat add garlic and saute till almost golden. Add mushrooms and continue to saute till mushrooms soften. Set Aside.
- Combine eggs and milk in med bowl. Whisk till well beaten. Add salt pepper and tarragon. Whisk till well blended. Add cheese and whisk till light and fluffy.
- Melt 1/2 tb oil and 1/2 tbs butter on low/med heat in large pan. Add egg mixture. Once bottom starts to settle lift up sides of egg and let the uncooked slide under. Spread asparagus and mushrooms onto egg. Once most of egg has cooked or has started to get a nice light golden brown, invert onto plate and place back into pan to cook other side. About 2-3 minutes.
- Slide onto platter or large dinner plate. Slice into 8 "pizza slices" (or 4 :O))and serve immediately.

This recipe is so simple, healthy, and yummy! It is based on one I found in Gourmet Magazine (May 2007). They recommend using morel mushrooms, but the recipe works just as well with any kind of mushroom. If you don't have tarragon, you can use fresh basil instead. If you can find the white asparagus, you can use 1 pound of the white asparagus and one of the green for a lovely presentation. If you do use the white asparagus, cook it for a little longer (about 5 minutes) in a separate pot.

- Trim the tough ends from the asparagus, reserving the ends for flavoring the broth. Cut the asparagus spears in 1-inch pieces. Cut off 1 thin slice from the tip of each mushroom stem, and reserve the slices to flavor the broth.
- To make the broth, combine the asparagus ends, mushroom stem slices, tarragon and parsley stems in a saucepan. Add the water, cover and bring to a boil. Cover and cook over low heat until the broth is aromatic and delicately flavored and the asparagus ends are tender when pierced with a knife, about 30 minutes. Strain and discard the vegetable and herb trimmings.
- Return the broth to a boil. Add the asparagus pieces and a pinch of salt. Return to a boil and cook uncovered over medium-high heat until the asparagus is crisp-tender, 3 to 4 minutes. Remove the asparagus with a slotted spoon, rinse briefly with cold water and drain. Pour the broth into a measuring cup and add water if necessary to make 2 cups. Dry the pan.
- Heat 1 tablespoon oil and 1 tablespoon butter in the saucepan over medium heat. Add two-thirds cup chopped onion and cook, stirring occasionally, until softened, about 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the bulgur and cook, stirring, for 2 minutes. Add the hot asparagus broth, standing back to avoid any steam. Add one-half teaspoon salt and a pinch of pepper. Stir and bring to a boil. Reduce the heat to low, cover and cook without stirring until the broth is absorbed and the bulgur is tender, about 15 minutes. Add the red pepper and mix in lightly. Cover the bulgur and set aside for 5 to 10 minutes.
