Baked Eggs that are breakfast made with simple ingredients. Eggs, cottage cheese, and Pepperjack cheese which gives them a little kick. Everyone asks for this casserole recipe when I make these baked eggs

1 tablespoon butter, melted
12 eggs, beaten
1 lb (16 ounces) shredded Pepperjack cheese ((other types of cheese can be used))
1 (16 ounce) container cottage cheese
1/2 cup all-purpose flour
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees and brush a 9x13 baking pan with the melted butter.
  • Whisk together the eggs, pepperjack cheese, cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.
  • Bake in the preheated oven until eggs are completely set about 50-60 minutes. Start checking it around 45 minutes. Cut into squares and serve with salsa, sour cream, guacamole, tomatoes, or onions if desired.

1 cup shredded sharp cheddar cheese (i love Cracker Barrel extra sharp cheddar)
1 cup shredded monterey jack cheese
10 eggs
2 cups milk
2 teaspoons dry mustard
2 teaspoons dill
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon white pepper
salt
1/2 small yellow onion, chopped
chives (optional)
green pepper (optional)
red pepper (optional)
orange bell pepper (optional)
yellow bell pepper (optional)
mushroom (optional)
broccoli (optional)

Steps:

  • Prepare a 9 X 13 pan (greased).
  • Spread cubed bread evenly; cover with cheese.
  • Beat eggs until light and fluffy.
  • Add remaining ingredients.
  • pour over bread and refrigerate overnight.
  • Bake for 50 minutes at 350 degrees or until set.

1 (5.5 ounce) package seasoned croutons
1 ½ cups shredded Cheddar cheese
1 cup shredded Swiss cheese
1 cup shredded pepperjack cheese
8 eggs
1 pint half-and-half cream
1 ½ cups milk
1 ½ teaspoons dry mustard
1 tablespoon minced onion
salt and pepper to taste

Steps:

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with Cheddar cheese, Swiss cheese, and pepperjack cheese. Top with the cooked sausage.
  • In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage. Cover, and refrigerate overnight.
  • The next morning, bake in an oven preheated to 350 degrees F (175 degrees C) for 45 to 60 minutes. Let sit for 20 minutes before serving.

1 tablespoon olive oil
1 small red onion, chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
1 cup sliced fresh mushrooms
12 large eggs, lightly beaten
1 can (12 ounces) evaporated milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1-1/2 teaspoons salt-free seasoning blend
3/4 teaspoon salt
1/4 teaspoon pepper
4 cups shredded cheddar or Monterey Jack cheese

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Add onion and red and green peppers; cook and stir 4-5 minutes or until crisp-tender. Add mushrooms; cook 2-3 minutes or until tender. Remove from heat., In a large bowl, whisk eggs, milk, flour, baking powder and seasonings until blended. Stir in cheese and vegetable mixture. 5 large egg whites
3 large egg yolks
2 tablespoons unsalted butter, halved
salt, to taste
pepper, to taste
fresh chive, chopped, for garnish

Steps:

  • Separate the egg whites and the egg yolks in two separate bowls. You'll only need 3 yolks, so discard the other 2 or reserve for another use.
  • Whisk the egg yolks until they become homogenous and pale in color. Set aside.
  • Transfer the egg whites to a large bowl and whisk until they triple in size and become white with medium peaks.
  • Carefully fold the egg yolks into the egg whites until fully incorporated.
  • Pour the egg mixture into a medium nonstick frying pan with a lid. Cook over medium-low heat until bottom of omelet has set, about 5 minutes.
  • Lift up each side of the omelette and drop a tablespoon of butter underneath.
  • Cover the pan and cook for another 5 minutes, or until the top of the omelet has set.
  • Remove the lid and season the omelet with salt and pepper. Remove the pan from the heat.
  • Fold the omelette onto a plate and sprinkle with chives.
  • Enjoy!
