3 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon nutmeg
13 ounces mushrooms, drain but reserve broth
milk
1/4 cup sour cream
4 slices toast
chopped pimentos, if desired

Steps:

  • Melt butter and stir in four, salt and nutmeg.
  • Drain broth from mushrooms and add milk to broth to make 1-1/4 cups.
  • Add to flour mixture and cook, stirring until thickened.
  • Add mushrooms and heat through.
  • Blend in sour cream.
  • Arrange warm asparagus spears on toast.
  • Top with sauce and garnish with pimento.

salt to taste
8 slices white bread
2 tablespoons butter, or to taste
4 thick slices ham, cut in half
8 slices Edam cheese

Steps:

  • Peel white asparagus with a vegetable peeler from top to bottom, starting below the tips. Cut off any woody ends with a knife.
  • Place asparagus spears and salt in a large, wide saucepan and pour in enough water to just cover. Bring to a boil. Reduce heat; simmer until spears are tender and easily pierced with a knife, 15 to 25 minutes. Drain.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast bread slices; arrange on a baking sheet. Spread butter over warm bread.
  • Lay 1/2 slice ham on top of each slice of bread; trim excess on all sides. Cut asparagus spears in half; divide evenly over ham. Cover asparagus spears with Edam cheese.
  • Place under the preheated broiler until cheese starts to bubble and brown slightly, about 3 minutes.

1 tablespoon extra virgin olive oil
2 tablespoons fresh chervil, chopped
2 tablespoons fresh chives, chopped

1 loaf sourdough French bread
vegetable oil cooking spray
1/2 lb vidalia onions or 1/2 lb other sweet onion, thickly sliced
parsley sprig
1 cup part-skim ricotta cheese

Steps:

  • Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired.
  • Drop asparagus and onion wedges into a large saucepan of boiling water; cook 3-4 minutes.
  • Drain and plunge into ice water; drain well.
  • Pat dry with a paper towel; set aside.
  • Combine ricotta cheese, fresh thyme, chives, and chervil in a bowl; stir well, and set aside.
  • Cut bread crosswise into 6 (1-inch-thick) slices; reserve remaining bread for another use.
  • Toast bread slices under broiler until golden brown.

1 tablespoon olive oil
1/2 cup heavy cream
4 ounces Parmigiano-Reggiano cheese, finely shredded (about 1 1/2 cups)
1 teaspoon lemon zest (from 1 small lemon)

Steps:

  • Melt butter in a small skillet over medium-high. Add panko, crushed red pepper, and 1/8 teaspoon of the salt. Cook, stirring often, until toasted, 2 to 3 minutes. Stir in parsley and tarragon; set aside.
  • Preheat oven to high broil with rack in middle position. Place asparagus on a rimmed baking sheet, and drizzle with olive oil; toss to coat. Sprinkle with remaining 1/4 teaspoon of the salt, and broil until asparagus is tender-crisp, about 5 minutes (do not stir).
  • While asparagus broils, place heavy cream in a small skillet. Bring to a gentle simmer over medium, stirring occasionally. Add Parmigiano-Reggiano 1/4 cup at a time, stirring until completely melted and smooth after each addition.

2 hard-boiled large eggs, sliced
1/4 cup plus 3 tablespoons butter, divided
1/4 cup all-purpose flour

2 cups whole milk
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs
4 slices bread, toasted and halved

Steps:

  • In a large skillet, bring 1/2 in of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain. Transfer to a greased 11x7-in. baking dish. Arrange eggs over the top. , In a large saucepan, melt 1/4 cup of butter; gradually stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Pour over eggs. , In a small skillet, melt the remaining butter; toss with bread crumbs.   • Place asparagus into a large pot or skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.
  • Mix 3 tablespoons butter and flour together in the same pot over medium-low heat until flour is dissolved and mixture is smooth, 2 to 3 minutes. Add milk, asparagus, and salt to butter-flour mixture and simmer until thickened, 10 to 15 minutes.

100g whole blanched almonds
juice 1 lemon
50g best-quality manchego cheese (or vegetarian hard cheese)

Steps:

  • Bring a pan of salted water to the boil and plunge in the asparagus. Cook for 2-3 mins, drain, then leave them to sit somewhere warm.
  • Next, put the butter into a cold pan with the almonds. Carefully heat it up, watching that the butter doesn't get too dark. When it just turns golden brown and is beginning to foam, remove from the heat and pour in the lemon juice to stop the cooking.
  • Arrange the asparagus onto 6 serving plates and spoon over some of the brown butter and almonds. Shave the cheese with a peeler, scatter over and serve.
