LEMON CRANBERRY BREAD



Lemon Cranberry Bread image

This lemon cranberry bread is quick and easy to make. It's filled with tart cranberries in a sweet, lemon flavoured bread with a lemon glaze.

1 cup Fresh Cranberries, halved if large
1 tablespoon Lemon Zest, from about 1 lemon
1/2 cup Granulated Sugar, plus 1 tablespoon
2 1/2 cups All-Purpose Flour
2 1/2 teaspoons Baking Powder
1 teaspoon Salt
2 large Eggs
1/2 cup Unsalted Butter, melted and cooled
1 cup Milk
1 1/2 teaspoons Pure Vanilla Extract
1 cup Powdered Sugar
2 tablespoons Lemon Juice, from about 1 lemon

Steps:

  • Preheat the oven to 350°F. Lightly spray a 9x5 inch loaf pan with non-stick spray and set aside.
  • In a small bowl, toss the cranberries and lemon zest with the 1 tablespoon of granulated sugar. Set aside.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, whisk together the remaining 1/2 cup sugar, eggs, and melted butter until well combined.
  • Add the milk and vanilla and whisk until combined.
  • Add this mixture to the flour mixture and stir until just combined.
  • Fold in the cranberries.
  • Scoop the batter into the prepared loaf pan, smoothing the top.
  • Bake 45-55 minutes, or until a toothpick inserted in the centre of the loaf comes out clean.
  • Allow the bread to cool for 10-15 minutes in the loaf pan, and then remove it to a wire rack to cool completely.
  • In a small bowl, whisk together the powdered sugar and lemon juice until smooth to make the glaze.
  • Drizzle the glaze over top of the cooled bread.

1/2 cup butter
1 cup sugar
2 eggs
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 medium sized lemon zested (just the lemon zest)
1 medium sized lemon juiced (just the lemon juice)
1/4 cup sugar

Steps:

  • Preheat your oven to 350 degrees F.
  • Prepare a 1.5L loaf pan (8 by 4.5 inches) by lining it with wax paper. Set aside.
  • With a mixer cream together the butter and sugar.
  • Add in the eggs, 1 at a time.
  • In a separate bowl combine the flour, baking powder and salt.
  • Add 1/2 of the flour mix to the butter mix.
  • Then add 1/2 of the milk.
  • Add the remaining flour mix.
  • Mix in the remaining milk and lemon zest.
  • Bake for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.
  • In the mean time, combine the juice from 1 lemon with 1/4 cup sugar.
  • When the cake is done baking, take it out of the oven, and pierce holes in it with a knife - make sure to get to the bottom of the loaf so the lemon juice mixture can get right down into the cake. Pour lemon juice/sugar mix over warm cake.
  • Let sit. This cake is even better the next day.
  • Enjoy!

I have used this cake for so many different things. Its great if you need something at the last minute. Its always comes out good. It's good just as a pound cake, without the drizzled lemon. We like it for strawberry shortcake.

1 tablespoon lemon juice
1/4 teaspoon salt

Steps:

  • Mix together 1 cup sugar and butter.
  • Add eggs and 1 tablespoon of lemon juice; mix well.

  • Mix 1/3 cup lemon juice and 1/4 cup sugar.

1 cup sugar
4 eggs
2 tablespoons lemon zest
2 ¼ cups self-rising flour, sifted
¼ cup almond flour
2 tablespoons lemon juice, or juice of one lemon
2/3 cup fresh cranberries
4 tablespoons lemon juice, or juice of two lemons
1 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees. Use the butter wrappers to grease a loaf pan or use a bit of neutral-flavored oil.
  • Using a stand mixer or hand mixer, cream together the butter and sugar.
  • Add eggs. Mix in the lemon zest.
  • Fold in flour and ground almonds and then stir in the lemon juice.
  • Add cranberries.
  • Pour into loaf pan, scattering a few extra berries over the top.
  • Bake for one hour, checking for doneness with a toothpick. Cool completely.
  • Mix lemon juice and powdered sugar to make a glaze. Add additional lemon juice if a thinner glaze is desired. Drizzle over the top of the lemon cake.

2 cups all-purpose flour (284 grams)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon lemon zest
1/2 cup unsalted butter (softened)
1 1/4 cup granulated sugar
3 eggs (room temperature)
1/2 cup lemon juice
1/2 cup milk (room temperature)
1/2 cup icing sugar (sifted)
1/4 cup lemon juice

Steps:

  • Preheat the oven to 350℉ (175°C) .
  • Grease and flour (or use non-stick spray) a 9 x 5 inch loaf pan.
  • Sift together flour, baking powder, soda, and salt. Stir in lemon zest. Set aside.
  • In a large mixing bowl of stand mixer beat butter on medium speed for 2-3 minutes.
  • Gradually add the sugar and continue beating for another 2-3 minutes.
  • Add eggs, one at a time. Make sure you scrape the bottom of your bowl.
  • Add lemon juice (the batter will curdle).
  • Alternate addition of flour and milk (in 2 additions). Mix on low speed until combined. Do not over mix.
  • If using add-ins, combine gently at this point.
  • Bake in preheated oven for 60-75 minutes until golden and cake tester comes out clean.
  • Transfer pan to a rack where it can cool down for about 10 minutes before removing loaf to cool down completely on a wire rack.

3 eggs
1 cup unsweetened yogurt (270g)
½ cup sugar (100g )
½ cup olive oil (light or mellow in flavour, Extra virgin is too strong.)
1 lemon (large)
2 cups flour
2 tsp baking powder
½ cup desiccated coconut
3 Tbsp lemon juice
1 Tbsp sugar

Steps:

  • Heat your oven to 180 degress celsius (360 F)
  • Line and grease your loaf tin, if you are using silicone bake ware you may not need to
  • Place egs, yoghurt and sugar in a medium mixing bowl, whisk until combined
  • Add olive oil, whisk until combined
  • Add the zest and juice from one lemon, whisk until combined
  • In a large mixing bowl place the remaining dry ingredients (flour, baking powder, deiccated coconut). mix these ingredients with a clean dry whisk or fork so that they are evenly distributed.
  • Add the wet ingredients to the dry ingredients. mix until just combined
  • Pour batter into loaf tin
  • Bake for 35-40 minutes. When done the loaf will be firm, the top may have cracked a little and will be golden in colour. When you insert a toothpick into the centre it will come out clean
  • (Optional) Lemon syrup glaze. This needs to be done while the loaf is still warm and in its loaf tin. Combine the second measure of lemon juice and sugar in a small bowl or measuring cup, heat until the sugar dissolves. I use a microwave
  • Pierce the surface of the loaf with a toothpick, creating regulalry spaced holes across the surface
  • Pour on the lemon syrup
  • Leave loaf to cool in the tin

225g/8oz unsalted butter, softened, plus extra for greasing
225g/8oz caster sugar
4 free-range eggs
225g/8oz self-raising flour
1 unwaxed lemon, zest and juice
85g/3oz icing sugar

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease a 900g/2lb loaf tin with a little butter and line with baking paper.
  • Tip the remaining butter and caster sugar into a food processor and blend for a few seconds. Add the eggs one at a time, blending after each addition. Add the flour and lemon zest and blend until smooth.
  • Pour the batter into the lined baking tin, flatten the top with the back of a spoon and bake for 50-55 minutes.
  • Meanwhile, stir together the lemon juice and icing sugar. When the cake has cooled a little, poke holes in the top using a skewer, chopstick or a piece of raw spaghetti. Drizzle over the icing, set aside for a few minutes, and serve.

2 cups flour
2 1/2 teaspoons baking powder

Steps:

  • Cream the butter with the sugar.
  • Add the egg and lemon peel and beat well.
  • Combine the flour, baking powder and salt.
  • Add the flour mixture to the creamed mixture alternately with milk, beating well after each addition.
  • Spoon the batter into a well greased 9 X 5-inch loaf pan.
  • Bake at 350°F about 55 minutes or until a fork or toothpick inserted comes out clean.
  • Shortly before removing the bread from the oven, make the glaze: combine the powdered sugar and lemon juice and stir until the sugar dissolves.
  • Pour the glaze over the bread while it's still in the pan and hot.

  • Preheat oven to 325 F. Grease and flour a 9x5 loaf pan and set aside.
  • In a large bowl whisk together flour, baking powder and salt. Set aside.
  • In a large bowl cream together granulate sugar with butter and butter-flavored shortening.
  • Mix in eggs, one at a time, until combined.
  • Stir in lemon extract, vanilla extract, lemon zest and sour cream.
  • Gradually mix the dry ingredients with the wet ingredients, while alternating with the lemon juice and milk. (Batter should be fluffy and no streaks of flour remaining)
  • Batter will be pale yellow. On low speed mix, add in the enough yellow food coloring to achieve your desired shade. (if desired)
  • Spoon batter into prepared pan. Shake and tap the pan on the counter to release any air bubbles and level out the batter.
  • Bake for 1 hour and 10 minutes (check on it at the 1 hour mark. (Glass pans will cook a bit faster)
  • Remove from oven and let cool (Keep in mind, cake will continue to cook as it cool)

  • Weigh out the butter - cut into cubes and soften for about 30 seconds in the microwave
  • Weigh out and add the caster sugar, beat together with a wooden spoon or electric mixer
  • Weigh out the flour but put to one side. Add the eggs individually, beating fast to add air for a light sponge. If the mixture begins to look lumpy, add in a small portion of the flour, fold in slowly and gently until the mixture is smooth again
  • Gradually add the lemon juice, beating the mixture hard to add air for a light texture
  • Slowly fold in any remaining flour, ensuring there are no lumps. Spoon the mixture into a pre-greased 2lb loaf tin and Place on the middle shelf of the oven at around 180/200°. Bake for 20 minutes before covering with silver foil and returning for a further 20 minutes or until a sharp knife returns clean
  • Leave the cake to cool (still in the tin) and prepare the Drizzle by heating spoonfuls of sugar with lemon juice in a small pan. Start over a low heat and stirring continuously increase the temperature allowing it to bubble and thicken slightly. Taste the mix and add more sugar accordingly if needed. Add the peel if you wish for it to be candied (optional - can also be presented fresh on top of cake) Once the mixture is a runny but slightly stiffer in texture remove from the heat and pour evenly over the top of the cake

Reintroducing our easy lemon loaf! We heard your feedback on our 3-Ingredient Lemon Loaf, so we took it back to our test kitchens. With a couple of added ingredients, this lemon loaf cake is one that everyone can agree on.

1 box Betty Crocker™ Super Moist™ white cake mix
2 containers (6 oz each) Yoplait® Original yogurt lemon burst
1/2 cup butter, melted
1 tablespoon grated lemon peel
2 eggs
2 teaspoons coarse sugar, if desired

Steps:

  • Heat oven to 350°F. Grease 9x5-inch loaf pan with shortening; lightly sprinkle with flour.
  • In large bowl, beat cake mix, yogurt, melted butter, lemon peel and eggs with electric mixer on low speed until ingredients are moistened; scrape bottom and side of bowl. Beat 2 minutes on medium speed. Pour batter in pan. Sprinkle with coarse sugar.
  • Bake 40 to 50 minutes or until toothpick inserted in center of loaf comes out clean. Cool in pan on cooling rack 10 minutes; run metal spatula around edge of loaf to loosen. Remove from pan to cooling rack. Cool completely, about 1 hour.
