SUMMER PEA AND WATERCRESS SOUP

1 onion, peeled and chopped
2 sticks celery, trimmed and chopped
1 medium potato, peeled and cubed
2 litres organic chicken or vegetable stock
500 g fresh peas, podded
200 g watercress, washed and spun dry
sea salt
freshly ground black pepper
142 ml soured cream
extra virgin olive oil

Steps:

  • In summer, a light pea soup feels totally right - the watercress in this recipe adds a mustardy bite.
  • Heat a large saucepan and pour in a little olive oil. Throw in the chopped onion and celery. Turn the heat down and cook very gently with the lid on for 10 minutes, or until the onion has softened, but not browned.
  • Add the potato and stock and bring to the boil. Simmer for 10 minutes or until the potato is cooked. Next, drop in the peas and watercress and simmer for a further 5 minutes until the peas are cooked.
  • Remove the pan from the heat. Whiz the soup with a hand blender, or in a liquidizer, until smooth. Taste, then season with salt and pepper.
  • Serve the soup with a spoonful of soured cream swirled in, a drizzle of extra virgin olive oil and some crusty bread and butter.
  • Tip: You can use frozen peas - just simmer them in the stock a couple of minutes

This beautiful, seasonal spring soup is a wonderful canvas for whatever you have on hand. I like to finish it off with a little feta to highlight that Mediterranean idea behind the soup. Beautiful, wonderful tahini and sumac flavors really come through.

2 tbsps unsalted butter
2 shallots, diced
1 cup celery, diced
1 cup yellow potato, diced
2 sprigs fresh thyme
2 bay leaves
4 cups chicken stock
1 pound asparagus, trimmed and cut in 1-inch pieces
3/4 tablespoon kosher salt
2 cups Watercress
1/2 tsp ground sumac
2 tbsps tahini
2 tbsps heavy cream
Feta cheese, for garnish
Potato chips, for garnish
Chopped scallions, for garnish
Aleppo pepper, for garnish
Olive oil, for garnish

Steps:

  • For the soup base: Melt the butter in a soup pot over medium heat. When the butter is bubbling and frothy, add the shallot and the celery and cook for 2 minutes. Add the diced potato, thyme, bay leaf, and stock. Turn the heat to high, bring to a boil, and then reduce to a simmer for 10 minutes until potatoes are tender.
  • Finish the soup: While the soup base simmers, snap the woody ends off the asparagus, about 2 inches from the root end. Discard those ends and cut the remaining spears into 1-inch long pieces. Add the cut asparagus to the pot, cover, and cook for 4 more minutes. Add the watercress, tahini, cream, salt, and sumac. Remove (and discard) the bay leaf and thyme sprigs and remove from heat. Carefully pour the soup into a blender and puree until smooth. Ladle into soup bowls.
  • Garnish the soup: Garnish the soup with feta, potato chips, scallions, aleppo pepper, olive oil, and serve.

1 large onion, chopped
3 tablespoons flour
2 cups asparagus, cut into 1 inch pieces
2 cups milk
1 (14 1/2 ounce) can chicken broth
8 ounces cubed red potatoes
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
4 ounces shredded cheddar cheese
1 small tomatoes, seeded and chopped
1/3 cup sour cream

Steps:

  • Heat oil in a large sauce pot, add onion and cook over medium heat until tender.
  • Add flour and stir to coat onions.
  • Add asparagus, milk, broth, potatoes, salt and pepper, increase heat to medium high and cook until thick and bubbling, stirring often.
  • Reduce heat to low, cover and simmer, stirring ocassionaly, 10-12 minutes or until vegetables are tender.
  • Add cheese, tomato and sour cream and simmer until cheese is melted.

  • In a large saucepan, saute onion in butter 3-4 minutes or until soft. Stir in flour to form a smooth paste. Cook for 2 minutes. Gradually stir in broth and bring to a boil. Add asparagus and watercress; cover and simmer 5-7 minutes or until vegetables are tender. Cool. , In a blender, process soup in batches until smooth. Return all to pan; stir in cream. 15ml/1 tbsp olive oil
1 small onion, chopped
1 small stick celery
350g/12oz potato, peeled and diced
600ml/1pt chicken or vegetable stock
3 (85g) bags watercress
150ml/1/4pt milk
pinch of nutmeg
squeeze of lemon juice
salt and freshly ground black pepper

Steps:

  • 1. Heat the oil in a large pan, add the onion and celery and sauté over a medium heat for 5 mins until pale golden. Stir in the potato and stock and bring to the boil. Cover and simmer for 10 mins or until the potato is tender.
  • 2. Stir in the watercress, cover and cook for a further 5 mins or until the watercress is wilted. Transfer the soup to a food processor and blitz until smooth. Return the soup to the rinsed out pan add the milk, nutmeg, lemon juice and seasoning to taste. Gently reheat until piping hot and serve with crusty bread.

2 tablespoons butter
1 cup chopped shallot
1 cup chopped peeled potato
1 medium clove garlic, minced
1 sprig fresh thyme
Kosher salt and freshly ground black pepper
3 1/2 cups chicken broth
1 cup firmly packed chopped watercress
1/4 to 1/2 cup heavy cream, as desired
Sliced toasted almonds and chopped chives, for serving

Steps:

  • Heat the butter in a medium saucepan over medium heat. Add the shallot and cook, stirring, until tender, 3 to 5 minutes. Add the potato, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the watercress and cook 5 minutes more. Remove from the heat, discard the thyme and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Stir in the cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot sprinkled with almonds and chives.

1 tablespoon oil
1 leek, white part only, chopped
2 garlic cloves, chopped
1 celery stalk, chopped
1 teaspoon freshly grated nutmeg
500 g (1 lb 2 oz/4 medium) potatoes, chopped
1 litre (35 fl oz/4 cups) chicken stock or vegetable stock
250 ml (9 fl oz/1 cup) milk
1 handful mint

Steps:

  • 1. Reserve a few watercress leaves for serving. Pick off the remaining leaves in bunches, discarding the thick stems. Roughly chop and reserve the watercress. 2. Heat the oil in a large heavybased saucepan. Add the leek, garlic and celery. Stir for 2 minutes to coat the vegetables in the oil. Reduce the heat, cover and simmer, stirring occasionally, for 5 minutes. Do not allow the vegetables to brown. 3. Add the nutmeg, potato and stock. Slowly bring to the boil, then reduce the heat and simmer, covered, for 20 minutes. Stir in the chopped watercress. Set aside to cool for 10 minutes. 4. Stir the milk and mint into the soup. Using an immersion blender fitted with the chopping blade, whizz for 1 minute, or until puréed to the desired consistency. 5. Gently reheat the soup and season well with salt and freshly ground black pepper. Ladle into bowls and garnish with the reserved watercress leaves.

1/2 pound asparagus, trimmed and sliced
1 cup chopped leeks, white and pale green part only
1-1/2 cups, peeled, cubed baking potatoes
4 cups chicken stock
1 Tbsp. chopped fresh tarragon

1/3 cup sour cream

Steps:

  • Place the first 4 ingredients in a pot and gently simmer until the vegetables are quite tender. Puree the mixture in a food processor, and then transfer to a bowl. Stir in the tarragon, salt and white pepper. Chill at least 4 hours in the fridge. Ladle the soup into chilled bowls; top with a dollop of sour cream. If desired, garnish the top with a few blanched asparagus spears or with a sprinkle of chopped chives. Options: Make the soup vegetarian by using vegetable stock instead of chicken. Use chopped fresh dill to flavour the soup instead tarragon. Make chilled white asparagus soup by using it to make the soup instead of green. Be sure to peel the tougher skinned white asparagus before slicing and cooking until very tender.

  • In a medium saucepan, heat 1 tablespoon oil over medium. Add leeks and season with salt and pepper. Cook until tender, stirring occasionally, 4 to 6 minutes. Add broth, potato, and the water. Bring to a boil; reduce to a simmer and cook, partially covered, until potato is tender, 10 to 12 minutes.
  • Add two-thirds of the watercress and cook until bright green and tender, about 3 minutes. Working in batches, purée soup until smooth in a blender, being careful not to fill jar more than halfway each time. Return to pan and season soup with salt (reheat over medium if necessary).
  • In a small bowl, whisk together remaining 1 tablespoon oil and the lemon juice; season with salt and pepper. Add remaining watercress and toss. Serve soup topped with watercress.
