BOB MARLEY'S JAMAICAN JERK CHICKEN SKEWERS
From Emeril Lagasse Emeril Live show, this has gotten great reviews! This is served at the Marley Cafe in Orlando, Florida. This is traditionally served with cucumber sauce and yucca fries(you can sub french fries). I have given the recipe for the sauce. Prep time includes marinating overnight. This is also popular in Florida.

Steps:
- Marinade:.
- Mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, oil and vinegar. These ingredients can also be combined in a food processor.
- Skewer 2 1/2 ounces of chicken onto each skewer(about 4 pieces). Place the skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight.
- Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side.
- For the dipping sauce:.
- Peel and seed cucumbers and roughly chop. Add sour cream and mayonnaise. Add rest of ingredients and puree in a blender. Yield: about 1 1/2 quarts.

JERKED CHICKEN KABOBS
Steps:
- In a food processor, combine the orange juice, olive oil, soy sauce, thyme, allspice, cinnamon, nutmeg, garlic, green onions, ginger, lime juice, onions, peppers and some salt and pepper; puree until smooth. Add all but 1/4 cup of the mixture in a 1-gallon plastic resealable bag. Add the chicken to the bag and marinate in the refrigerator for 1 to 2 hours. Heat the grill to medium-high. Skewer the chicken pieces and grill on one side for about 5 minutes. Flip and grill the other side until cooked through and grill marks appear. Top with the Mango Salsa and serve with the 1/4 cup reserved (unused) marinade as a dipping sauce.
- In a medium bowl, combine the lime juice, sugar, ginger and hot sauce. Mix thoroughly and add the green onions, cucumber and mango. Toss and refrigerate for 1 hour.
SPICED BEEF AND CHICKEN KABOBS WITH CUCUMBER YOGURT
Steps:
- For the yogurt sauce: Stir together the yogurt, mint, lemon juice and cucumbers. Add salt to taste. Refrigerate while the meat marinates. (The sauce can be made up to 1 day ahead.)
- For the kabobs: Mix the yogurt, cilantro, coriander, cumin, turmeric, allspice, 2 tablespoons of the olive oil, 1 1/2 teaspoons salt and 1/4 teaspoon pepper together in a large bowl. Add the beef and chicken (you can separate them into 2 bowls if you prefer) and toss to coat in the marinade. Cover and refrigerate for at least 1 hour and up to 3 hours.
- Prepare a grill for cooking over medium-high heat.
- Toss the peppers and onions with the remaining 1 tablespoon olive oil. Season with 1/2 teaspoon salt and pepper to taste.
- Thread the chicken and beef onto separate skewers (about 5 pieces of meat per skewer), threading a piece of onion between each piece of meat--for even cooking, avoid overcrowding the skewers. Use 2 skewers to thread the peppers, to make them easier to turn. (Make 4 double skewers with 3 peppers each.)
- Grill the kabobs, turning occasionally, until lightly charred on the outside and cooked through, 6 to 7 minutes for the beef (medium-rare), 10 to 12 minutes for the chicken, and about 12 minutes for the vegetables.
- Serve the kabobs with lemon wedges and the yogurt sauce on the side.
JAMAICAN JERKED CHICKEN WITH BARBECUE SAUCE

- Place chicken thighs in a medium mixing bowl and pour in 2 cups of the vinegar. Rub the vinegar into the chicken with your clean hands and drain.
- Rinse the chicken in cold water and pat dry with paper towels. Place chicken inside a large resealable plastic food storage bag and set aside. Wash hands thoroughly before proceeding.
- For the marinade: In the bowl of a food processor, combine the remaining teaspoon of vinegar, the green onions, jalapenos, soy sauce, browning and seasoning sauce, lime juice, allspice, bay leaves, garlic, salt, sugar, thyme and cinnamon. Process until smooth, stopping to scrape down the sides with a rubber spatula as needed.
- Reserve 2 tablespoons of the marinade for the Jamaican Barbecue Sauce.
- Pour the remaining marinade inside the plastic bag to coat the chicken. Place the bag inside another resealable plastic food storage bag or in a shallow dish and refrigerate overnight.
- Position rack in center of oven and preheat the oven to 375 degrees F. Lightly grease a 13 by 9-inch baking dish and set aside.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat.
- Place half of the chicken thighs, skin side down, in the skillet and cook 2 minutes or until skin is browned. Turn chicken thighs using tongs and cook an additional 2 minutes.
- Place the browned chicken thighs in the prepared baking dish.
- Using oven mitts or pot holders, carefully wipe the hot skillet clean with paper towels.
- Heat the remaining tablespoon of oil in the skillet and brown the remaining chicken thighs. Transfer the browned chicken to the baking dish.
- Bake for 35 to 40 minutes or until chicken is cooked through.
- Serve with Jamaican Barbecue Sauce.
- In a medium saucepan, combine the ketchup, soy sauce, Pickapepper sauce, reserved 2 tablespoons of jerk marinade, green onion, garlic, ginger, brown sugar and vinegar.
- Bring the sauce to a boil, stirring to dissolve the sugar.
- Reduce the heat to a simmer and continue to cook another 12 minutes, until the sauce has thickened slightly.
- Remove the sauce from the heat and cool to room temperature.
- Place the sauce in a food processor and process until smooth, stopping to scrape down the sides of the bowl with a rubber spatula, as needed.
- Serve at room temperature with the Jamaican Jerked Chicken.
GRILLED JERK CHICKEN KABOBS

- In shallow glass or plastic dish or resealable food-storage plastic bag, mix chicken and 1/4 cup of the jerk sauce. Cover dish or seal bag; refrigerate 1 hour to marinate, stirring occasionally.
- Heat gas or charcoal grill. Drain chicken; discard marinade. On each of 6 (15-inch) metal skewers, thread chicken, pineapple, bell peppers and onion alternately, leaving space between each piece. Brush vegetables with remaining jerk sauce.

- In a blender or food processor, combine peppers, garlic, ginger, green onion, parsley, lime juice, soy sauce, agave, and spices. With blender or food processor running, drizzle oil through top. Pulse several times until marinade is smooth, scraping down sides as necessary. Season with salt and pepper to taste.
- Reserve 1/4 cup marinade in a small bowl or container and refrigerate. Pour remaining marinade in a large bowl or container and nestle chicken into marinade until evenly coated. Cover bowl, refrigerate, and allow chicken to marinade at least 4 hours, preferably overnight.
- If using wooden skewers, soak in cold water 10 minutes. Once chicken is done marinating, remove from marinade and thread onto skewers with pineapple, sweet peppers, zucchini, and onion.
- Preheat grill to medium-high heat and grill kabobs 10-15 minutes, turning occasionally until chicken is cooked through to 165F and vegetables are slightly charred and tender.
- Just before serving, drizzle warm kabobs with reserved jerk marinade and serve with hot rice and beans if desired. Enjoy!

BOB MARLEY'S REGGAE: JERK MARINATED CHICKEN BREAST SKEWERS, CHARGRILLED AND SERVED WITH CREAMY CUCUMBER DIPPING SAUCE AND YUCCA FRIES

- For the marinade: mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, oil and vinegar. These ingredients can also be combined in a food processor. Preheat the fryer. Skewer 2 1/2 ounces of chicken onto each skewer. Place the skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight. Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side. Place the Yucca fries in the fryer and fry the fries until golden brown. Remove and drain on paper towels. Season with salt. Place 3 of the skewers on the left side of the plate. Place green tai leaf on the other end of the plate and top with a wedge of fresh pineapple. Place 6 ounces of cooked yucca fries in the middle of the plate. Place 3 ounces of cucumber sauce in a souffle cup next to the skewers and serve.

JERK CHICKEN SKEWER WITH JERK SAUCE

- Cut the chicken into 20 thin strips, about the size of your small finger. Thread onto 1end of each skewer and place into a bowl until marinade is ready. Keep the bamboo handles all on 1 side so as not to touch the marinade when it is added.
- In a food processor, place the rest of the ingredients and blend until smooth.
- Pour 1/2 the marinade over the chicken only, trying not to touch the skewers. Make sure to coat the chicken entirely. Let sit in the refrigerator for at least 2 hours.
- Place the remainder of the marinade into a small saucepan and add:
- Place over medium heat until thickened and the tomato has broken down, about 30 minutes. Puree, if desired for a smoother consistency. Let cool and serve with the chicken skewers when they are ready.
- To finish, place the chicken end of the skewers over a hot, well-oiled grill and cook about 3 minutes per side. Time might vary depending on how hot the grill is or how thick the chicken is. If a grill is not available, you can place under a broiler for about the same time. Serve with the jerk sauce.
