EASY PASTA SALAD RECIPE
Steps:
- Place all the ingredients for the dressing in a glass jar or container with a tight fitting lid. Shake vigorously until well blended. Set aside.
- Cook the pasta according to the package directions. Drain and place the pasta in a large mixing bowl. Drizzle a few tablespoons of the dressing on the warm noodles and toss to prevent them from sticking together.
- Place the broccoli florets in a large colander. Pour hot water (almost boiling) over the florets then rinse with cold water. Drain. The hot water will give the broccoli a lovely bright green color and take the raw edge off the vegetable. Add the broccoli to the bowl with the pasta.
- Add the tomatoes, onion, olives and seasoned salt. Pour the prepared dressing over the top of the pasta salad and toss gently to combine. Cover and refrigerate until ready to serve.
- Add the cheese just before serving.
- Refrigerate leftovers.

ASPARAGUS PASTA SALAD WITH HONEY MUSTARD DRESSING
Steps:
- Bring a pot of salted water to a boil and cook the pasta according to the directions.
- Heat the olive oil in a skillet over medium heat. Add the asparagus with a pinch of salt and pepper. Cook, tossing often, until the asparagus is bright green in color and slightly softened (like as if you would eat it straight from the pan!), then turn off the heat.
- In a large bowl, combine the cooked pasta, the asparagus, tomatoes, green onions and cheddar cheese. Pour in the dressing and toss well to combine. Taste the pasta salad and add another pinch of salt and pepper if you find that it needs it (this will depend on how much you use for the boiling pasta, dressing and asparagus!). Stir in the fresh herbs.
- You can store this in the fridge now until serving, or you can serve it immediately. It will last in the fridge for 2 to 3 days. If you are making it a day or so ahead of time, I suggest tossing in the fresh herbs right before serving.
- Enjoy!

It uses some of my favorite ingredients and I can not wait until late Spring when fresh, local asparagus is in season! A neighboring town, Hadley, Massachusetts is famous for its asparagus and I eat more than my fill every year!

- Prepare Italian Dressing according to directions. Refrigerate until ready to use then shake or whisk to recombine before using.
- Cook tortellini in salted water according to package directions. Rinse with cool water, drain and add to a large serving bowl. Pour half of the dressing over the warm pasta and toss to combine. Add the remaining salad ingredients to the tortellini.
- If serving within the hour: toss with desired amount of remaining dressing. Although you can serve salad immediately, I highly recommend refrigerating for at least 30 minutes for the flavors to meld and salad to chill.
- If serving later: Gently toss ingredients to combine but do NOT add remaining dressing yet. Cover and refrigerate. When you are ready to serve, toss with desired amount of remaining dressing. This salad is excellent the next day.
