CRISPY BAKED DUCK LEGS (EASY ONE PAN MEAL)

Crispy Baked Duck Legs (easy one pan meal) image

Duck legs don't have to be hard to make, but they do need to be crispy. Get dinner on the table with just three ingredients and one pan.

Provided by Asian Test Kitchen

Categories     Main Course

Number Of Ingredients 4

2 ea duck legs
1 lb potatoes or sweet potatoes (chopped into 2" chunks)
salt and pepper
hearty herbs such as thyme, rosemary, marjoram, oregano, and/or sage (fresh or dried)

Steps:

  • Preheat oven to 350 degrees F;
  • Score duck with 3 slashes through the skin. Season with salt and pepper. For me this is about 1/2 tsp of salt and 1/4 tsp of pepper per duck leg.
  • Heat a pan over medium heat and put the duck legs in the pan skin side down. Sear for 3-5 minutes until browned and the legs start to release some fat.
  • Remove pan from heat. Add potatoes and coat with the duck fat in the pan. Season with salt and pepper. (You may need to remove duck legs from the pan if that makes it easier to stir the potatoes.)
  • Nestle the duck legs into the center of the pan. Put in the oven and cook for an hour and a half or until the duck legs are golden brown and crispy.

ASIAN STYLE OVEN BAKED DUCK LEGS

Asian Style Oven Baked Duck Legs image

I bought a bag of duck legs recently. There were 10 of them in a 2kg bag, all beautifully trimmed and ready to cook. Normal eaters might eat one each but we ate two and our son ate 3 of them!

Provided by JustJanS

Categories     Duck

Time 2h5m

Yield 5-6 serving(s)

Number Of Ingredients 10

2 kg duck legs
3 garlic cloves
2 star anise
1/2 teaspoon cinnamon
1/2 teaspoon red chili pepper flakes
2 teaspoons sesame oil
3 tablespoons soy sauce
3 tablespoons sweet chili sauce
2 tablespoons rice wine vinegar
4 tablespoons green ginger wine

Steps:

  • Marinate duck in remaining ingredients for about 8 hours (from the morning until dinner time is good). Turn occasionally through the day.
  • Heat oven to 160c/330f.
  • Remove the duck from the marinade and lay on a foil lined baking sheet.
  • Bake for 2 hours or until very tender.
  • You may need to pour off the fat a couple of times during the cooking time.
  • I served our duck on rice with Oriental Noodle Salad.

ROASTED DUCK LEGS AND POTATOES

Roasted Duck Legs and Potatoes image

This is one of those leave em' and love em' meals. For all the ease of the express-style food, there is something to be said for simply stashing something in the oven for an hour or two when stuck in too-tired-to-cook mode. True, one needs a little patience, which might make this more of a lazy weekend dinner than the answer to your everyday exhaustion issues. You don't need to serve much alongside, perhaps no more than a fennel salad dressed with a spritz or two of orange juice and a squeeze of lime, or some bitter green salad leaves. When you're in a hurry, a duck breast can seem like the solution, but the leg, cheaper yet richer, is more of a treat for those who like to eat. Of course, it's fattier than the appropriately named leaner magret: that's what makes the leg taste better. And please - enough with the supposed health concerns. I mean: it's not as though the obesity-epidemic was caused by the overconsumption of duck legs. Besides, as the late great James Beard sniffily wrote "A gourmet" - and that's him, not me, I'm just greedy - "who looks at calories is like a tart who looks at her watch."

Provided by Nigella Lawson : Food Network

Time 2h15m

Yield 2 servings

Number Of Ingredients 4

2 duck legs
2 baking potatoes or 1 pound other large white-skinned potatoes
Few sprigs of fresh thyme
Salt and pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • On the stove, heat a small roasting pan (I use one like a slightly oversized tarte tatin pan) and sear the duck legs, skin-side down over medium heat until the skin turns golden and gives out some oil.
  • Turn the legs over, and take the pan off the heat while you cut the potatoes into 1-inch slices across, then cut each slice into 4. Arrange these potato pieces around the duck legs, then let a few sprigs of thyme fall over the duck and potatoes, and season with salt and pepper, before putting into the preheated oven.
  • Cook for two hours, occasionally turning the potatoes, for optimal outcome, which is tender duck legs and crispy potatoes, though both will be ready to eat after 1 1/2 hours.
  • Making leftovers right: If you have even a small amount of meat left, you could bag and mark it up and store it in the freezer for up to two months for future use. Thaw overnight in the refrigerator.

PEKING DUCK

Peking Duck image

I have made this recipe and it is delicious. It can be served with plum sauce as well as a fruit sauce. This is actually a short-cut version but it is fantastic.

Provided by Allison

Categories     World Cuisine Recipes     Asian     Chinese

Time 3h50m

Yield 4

Number Of Ingredients 15

1 (4 pound) whole duck, dressed
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground white pepper
⅛ teaspoon ground cloves
3 tablespoons soy sauce
1 tablespoon honey
1 orange, sliced in rounds
1 tablespoon chopped fresh parsley, for garnish
5 green onions
½ cup plum jam
1 ½ teaspoons sugar
1 ½ teaspoons distilled white vinegar
¼ cup finely chopped chutney

Steps:

  • Rinse the duck inside and out, and pat dry. Cut off tail and discard. In a small bowl, mix together the cinnamon, ginger, nutmeg, white pepper and cloves. Sprinkle one teaspoon of the mixture into the cavity of the duck. Stir one tablespoon of the soy sauce into the remaining spice mixture and rub evenly over the entire outside of the bird. Cut one of the green onions in half and tuck inside the cavity. Cover and refrigerate the bird for at least 2 hours, or overnight.
  • Place duck breast side up on a rack in a big enough wok or pot and steam for an hour adding a little more water, if necessary, as it evaporates. Lift duck with two large spoons, and drain juices and green onion.
  • Preheat the oven to 375 degrees F (190 degrees C). Place duck breast side up in a roasting pan and prick skin all over using a fork.
  • Roast for 30 minutes in the preheated oven. While the duck is roasting, mix together the remaining 2 tablespoons of soy sauce and honey. After 30 minutes, brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 500 degrees F (260 degrees C). Roast for 5 minutes, or until the skin is richly browned. Do not allow the skin to char.
  • Prepare the duck sauce by mixing the plum jam with the sugar, vinegar and chutney in a small serving bowl. Chop remaining green onions and place them into a separate bowl. Place whole duck onto a serving platter and garnish with orange slices and fresh parsley. Use plum sauce and onions for dipping.

  • Turn heat down to medium low, and cook until the skin on the duck legs is evenly golden brown. Do not attempt to move the duck legs until you’ve seared them properly. Flip the duck legs and sear on the other side for 1 minute.
  • Remove the duck legs from the pot, and pour off the excess duck fat (strain it into a container and refrigerate it for use in other cooking applications).
  • Add the Shaoxing wine, stock, soy sauce, oyster sauce, sesame oil, white pepper, ginger, garlic, and scallions to the pot. Also throw in the star anise and bay leaf, if using. Return the duck legs to the pot, skin side up. The liquid should come halfway up the duck legs but not cover them.
