1 1/2 pounds top sirloin steak
2/3 cup soy sauce
6 garlic cloves (minced)
1/4 cup sesame oil
1/4 cup olive oil
½ cup sugar
1 Tablespoon grated ginger
2 tbsp sesame seeds ((I like using the Japanese assorted sesame seeds but any will work))
1 red onion (cut into one inch pieces )
1 green bell pepper (cut into one inch pieces )
1 yellow bell pepper (cut into one inch pieces )
1 red bell pepper (cut into one inch pieces )
skewers
Sliced green onions (for garnish)

Steps:

  • Cut steak into one inch cubes.
  • In a large bowl whisk together soy sauce, garlic, sesame oil, olive oil, sugar, ginger and sesame seeds. Add the steak and toss to coat in marinade. Marinate for 3 hours or overnight.
  • Preheat the grill to medium high heat. Thread the meat, red onion, and bell pepper onto the skewers. Grill for 8-10 minutes until the meat is done to desired liking.

Steps:

  • Place broccoli, sugar snap peas, bell pepper, carrots, and water to a large nonstick skillet. Bring to a boil, covered, over high heat. then reduce heat to medium-high. Cook until vegetables are crisp-tender, about 4 minutes. Transfer to a colander to drain.
  • Wipe skillet with a paper towel, then return to medium-high heat until hot. Add half each of beef, ginger, and garlic; stir-fry to desired doneness, 1 to 2 minutes. Transfer to a bowl and repeat with remaining beef, ginger, and garlic.
  • Return all beef and vegetables to skillet, stir in teriyaki and crushed red pepper, and cook until heated through, about 1 minute. Serve over hot cooked rice and sprinkle with peanuts.

2 pounds 90% lean ground beef
¾ teaspoon baking soda
6 tablespoons hoisin sauce, best quality such as Lee Kum Kee or Kikkoman (use gluten-free if needed)
3 tablespoons soy sauce (use gluten-free if needed)
1 tablespoon tomato paste
1 teaspoon Asian sesame oil
1 teaspoon sugar
½ teaspoon red pepper flakes
1 tablespoon vegetable oil
4 cloves garlic, chopped
2 tablespoons chopped fresh ginger
5 scallions, sliced, light and dark green parts separated
Rice
Chopped cashews
Sesame seeds
Shredded veggies, such as carrots, lettuce or bell peppers

Steps:

  • In a large bowl, using your hands, mash the beef with the baking soda. Let it sit on the counter for 20-25 minutes.
  • Meanwhile, in a small bowl, stir together the hoisin sauce, soy sauce, tomato paste, sesame oil, sugar, and red pepper flakes. Set aside.
  • Once the beef is "treated" and ready to cook, heat the vegetable oil in a large sauté pan over medium-high heat. Brown the beef, stirring frequently and breaking into pieces, until just slightly pink, about 5 minutes. (I don't drain the fat - there's not that much and it adds flavor.)
  • Add the garlic, ginger, and light scallions. Cook, stirring frequently, until softened, a few minutes.
  • Add the reserved hoisin sauce mixture and cook until the beef is well-coated and cooked through, about a minute. Taste and adjust seasoning if necessary.
  • Gently stir in the remaining scallions and spoon the beef into bowls over rice. Top with sesame seeds, chopped cashews, and shredded veggies, if you like.
  • Note: To get this dish done in 30 minutes, chop the garlic, ginger, and scallions while the meat is being treated with baking soda.
  • Freezer-Friendly Instructions: The meat mixture can be frozen for up to 3 months. Reheat in the microwave or on the stovetop.

2 lb flank steak

1/2 cup fresh lime juice
6 tablespoons water
6 tablespoons sugar
6 tablespoons Asian fish sauce
1 1/2 teaspoons dried hot red-pepper flakes
1/2 cup thinly sliced shallots (2 medium)
8 oz dried vermicelli rice-stick noodles*
2 medium Granny Smith apples
7 oz Asian salad mix (16 cups loosely packed; see cooks' note, below)

  • Marinate and grill steak:
  • Whisk together fish sauce, ginger, garlic, soy sauce, and sugar in a small bowl until sugar is dissolved. Pour marinade into a large sealable plastic bag. Pat steak dry and place in bag, then press out excess air and seal bag. Turn bag over 2 or 3 times to coat meat, then place in a shallow dish (in case of leaks) and chill at least 4 hours and up to 8. Bring steak to room temperature 30 minutes before grilling.
  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Remove steak from marinade (discard marinade) and pat dry with paper towels. Grill, uncovered unless using a gas grill, over direct heat, turning over once, until medium-rare, 12 to 14 minutes total.
  • Transfer steak to a cutting board and let stand, uncovered, about 15 minutes.
  • Assemble salad while steak rests:

  • Cook noodles in a 5-quart pot of boiling salted water until just tender, 4 to 5 minutes. Drain in a colander, then rinse under cold water and drain well. 1/2 cup orange juice
1/4 cup hoisin
1/4 cup mirin (Japanese sweet wine)

1 tablespoon sesame oil
3 cloves garlic, smashed
1 onion, coarsely chopped
2 flank steaks (about 4 pounds total)
Toasted sesame seeds, for garnish

Steps:

  • Whisk together the beer, orange juice, hoisin, mirin, soy, Worcestershire, Sriracha and sesame oil. Stir in the garlic and onions.
  • Place the steaks in a large baking dish and pour the marinade over top. Marinate at least 30 minutes, or up to overnight in the fridge.
  • Preheat a grill pan or grill over high heat.
  • Remove the steaks from the marinade, shaking off any excess. Discard the marinade. Grill the steaks for about 6 minutes per side for medium-rare. Let the steaks rest for 5 minutes before slicing. I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.

My Asian Style Grilled and Marinated Flank Steak is full of flavor, texture and that mmmmmm savory umami balance on your palate that makes you beg for more and more.

3 pounds flank steak
1/4 cup vegetable oil or peanut oil
1/2 cup LOW sodium soy sauce (I always use Kikkoman)
1/2 cup balsamic vinegar
1/4 cup teriyaki sauce
1/4 cup honey
juice of 1 lime
a few squirts of siracha (depending on how spicy you like it)
Thumb sized piece of ginger (minced on a microplaner)
5 garlic cloves minced on a micro planer.
4 scallions sliced thinly

Steps:

  • Combine soy sauce, balsamic vinegar (this is what gives that tangy, savory flavor) honey, teriyaki sauce, ginger, lime, garlic, a few squirts of siracha, vegetable oil and scallions into a bowl and mix to combine all the flavors.
  • Then throw all the ingredients in a zip lock bag along with the steak. Shake, shake, shake. Make sure it's all covered.
  • Place in the fridge for at least an hour and up to 24 hours.
  • If you live in the not so warm parts...like me... you can cheat a bit. Take a large oven proof frying pan and place it into a 500-degree oven for about 10 minutes. Or you can place it in there as the oven preheats.
  • Remove your steak out of the bag and place it on a paper towel, dabbing the moisture off of the steak.
  • Once the pan is heated, place the steak directly onto the pan. You will see it shrink up immediately from the high heat. Close the oven and allow to cook for 5 minutes then flip it and cook it for 2 minutes.
  • For me, this is the ultimate way to sear a steak nicely without clouding my house up with smoke.
  • Place the steak on a sheet pan and cover with foil. Let the meat rest for 10 minutes.
  • Slice into it on a bias, against the grain, as we previously discussed.
  • Sprinkle with scallions and grab some chop sticks! Dinner is served.

1½ lb flank steak (can substitute skirt steak or flat iron)
2 Tablespoons clarified butter
spicy Asian chimichurri sauce (to serve on the side)
⅓ cup low sodium soy sauce
⅓ cup mirin
¼ cup brown sugar
2 Tablespoons avocado oil
1½ Tablespoons ginger (grated)
5 cloves garlic (minced)

Steps:

  • Place the flank steak into a large ziplock bag. Mix together the ingredients for the Asian steak marinade and add it to the flank steak. Using the plastic bag, massage the steak and make sure the marinade evenly covers the steak. Let the flank steak marinate in the fridge for at least 6 hours. Overnight is recommended.
  • Take the flank steak out of the fridge and let it come to room temperature as this ensures even cooking. Add clarified butter to a pan and heat over medium high heat until it just barely starts to smoke. Remove the steak from the bag, drip off the excess, and lay it flat on your hot pan.
  • For medium rare steak: Leave the steak to sear on one side for about 6 - 7 minutes for a 1 inch thick steak. Then flip it over and leave it to sear on the other side for another 6 - 7 minutes. If using a meat thermometer, check that the internal temperature of your steak is 130° which will get you a medium rare done steak. Adjust the cooking time according to how you like your steak.
  • Place the steak on a plate, loosely cover with foil, and let it rest for 5 - 6 minutes to let the juices redistribute into the meat. Serve the flank steak with spicy Asian chimichurri sauce.
