2 tablespoons red onions, chopped

salt and pepper

Steps:

  • In a medium bowl, mix together the artichoke hearts, tomatoes, onion, olives, garlic, salt, and pepper. Serve chilled, or at room temperature, with tortilla chips.

3/4 cup salsa (hot or mild)
1 cup artichoke hearts, chopped
1/4 cup grated parmesan cheese
1 cup (4 oz.) shredded Monterey jack cheese
1 cup (4 oz.) shredded sharp cheddar cheese
6 large eggs
1 carton (8 oz.) sour cream
Seasonings
Tomato wedges
Parsley sprigs

Steps:

  • Preheat oven to 350°F. Butter a 10-inch quiche dish. Spread the salsa on the bottom. Distribute the chopped artichokes evenly over the salsa. Sprinkle with the cheeses.
  • Blend the eggs, add sour cream and seasonings. Pour the egg mixture over the cheese.
  • Bake uncovered for 30-40 minutes. Cut in wedges and serve with tomato wedges and parsley sprigs.

Grilled Swordfish With Tomato Artichoke Salsa image

This is probably the best swordfish I've ever tried. The presentation is great as well, because the salsa is so colourful. This great recipe was printed from the Internet sometime ago (sorry, it's been recopied and I don't know the original site) and I have made a few little changes from the original. Enjoy! (Prep time includes marinating time)

2 (6 ounce) swordfish steaks
2 cloves garlic
1/4 cup olive oil
1/4 cup freshly sqeezed lemon juice
1 pinch salt and pepper
1 tomatoes, diced
1 (6 ounce) jar marinated artichoke hearts, coarsely chopped
1 green onion, sliced (include tops)
1/3 cup frozen corn kernels, cooked
2 tablespoons freshly chopped cilantro
1 pinch salt and pepper

Steps:

  • Combine garlic, olive oil, lemon juice and seasonings and place along with swordfish into ziplock bag.
  • Marinate fish for 30 minutes turning frequently.
  • In small bowl, combine tomatoes, artichoke hearts, onion, corn and cilantro.
  • Add seasonings if desired.
  • Set aside while swordfish is marinating.
  • Remove swordfish from bag and discard remaining marinade.
  • Grill for approximately 5 minutes per side.
  • Top with salsa and serve.

2/3 cup finely chopped seeded tomato
2 tablespoons finely chopped red onion
1 pickled or fresh jalapeño chili, or to taste, seeded and minced (wear rubber gloves)
2 tablespoons minced fresh coriander
1 tablespoon fresh lime or lemon juice
4 large eggs
2 tablespoons water
1 tablespoon unsalted butter
3 slices of lean bacon, cooked and crumbled
1 small avocado (preferably California)
1/2 cup coarsely grated Monterey Jack (about 2 ounces)

Steps:

  • In a small bowl stir together the tomato, the onion, the jalapeño, the coriander, the lime juice, and salt and pepper to taste until the salsa is combined well. In a bowl whisk together the eggs, the water, and salt and pepper to taste.
  • In a 8-inch skillet, preferably non-stick, heat 1/2 tablespoon of the butter over moderately high heat until the foam subsides, pour in half the egg mixture evenly over the bottom, and cook it for 1 minute, or until it is almost set. Sprinkle half the omelet with half the bacon, half the avocado, peeled and cut into 1/2-inch pieces, and half the Monterey Jack and cook the omelet for 1 minute, or until it is set. Fold the omelet over the filing, transfer it to a plate, and keep it warm. Make another omelet in the same manner with the remaining butter, egg mixture, bacon, avocado, and Monterey Jack and serve the omelets with the salsa.

1/2 onion, finely chopped

8 sliced green olives
1/8 cup milk
4 slices cheese

Steps:

  • Saute onions in butter in 12 inch fry pan.
  • Beat eggs in bowl with artichoke hearts, olives, milk, salt and pepper.
  • Pour mixture over onions in pan and cover.
  • Cook over medium heat until the bottom of the omelette is golden brown, carefully lift edge with spatula to check.
  • Lay cheese over half of omelette.
  • Flip other half of omelette over cheese half.
  • Wait about 1 minute.
  • Slide out of pan and serve hot.

5 eggs , separated
2 whole eggs
½ can artichoke hearts , drained, quartered if whole
1 whole roasted pepper from a jar or can drained, patted dry and roughly chopped
50g vegetarian Parmesan-style cheese
10 large basil leaves , shredded
1 tbsp butter
1 tbsp extra virgin rapeseed or olive oil

Steps:

  • In a large bowl, lightly beat together the 5 egg yolks and 2 whole eggs. In a separate bowl, use an electric whisk to beat the egg whites until stiff. Add whites to the yolks and fold together carefully, keeping it light and fluffy. Fold in the artichokes, pepper, half the cheese, the basil, salt and pepper.
  • Heat grill to high. Heat a medium non-stick frying pan over a medium heat. Add the butter and oil. When the butter has melted, add the omelette mixture and spread evenly. Cook until golden underneath, about 5 mins. Scatter over remaining cheese, then place the pan under the grill and cook for a further 2 mins. Slide the omelette onto a board or serving plate. Cut into wedges and serve.

1 can artichoke hearts
2 cups sliced fresh mushrooms
2/3 cup grated Parmesan cheese
2 cups shredded Monterey Jack-Colby cheese
2 cups shredded Cheddar cheese

16 ounces sour cream

Steps:

  • Instructions:Preheat the oven to 350 degrees. Coat 8 individual 4" ramekins with a nonstick cooking oil spray. Layer the bottom of each ramekin with salsa. Cut the artichoke hearts into quarters, and distribute evenly over the salsa, followed with the mushrooms and three cheeses (½ tablespoon Parmesan & 2 tablespoons each of Jack and Cheddar in each Ramekin). In a separate bowl, whisk together the eggs and sour cream untilsmooth. Pour the egg mixture evenly over the cheese. Bake uncovered for 30 minutes or until set and lightly browned.
