Arroz Imperial Con Pollo - Imperial Rice With Chicken image

A favorite recipe among Miami-based Cubans. It is ideal for a luncheon or even for a brunch(so they tell me) because it is light, yet flavorful. Slightly labor-intensive but it is well worth the work. Great comfort food! Serve with an Argentinian Merlot Trumpeter or Beringer Alluvium white. Also, a nice salad of mixed greens and a deliciously cool fresh fruit dish. Found on cooksrecipes.com where I was able to put the exact quantities along with the ingredients.

3 lbs chicken breasts (or chicken thighs)
6 slices bacon, cut into slivers
olive oil
2 medium onions, finely chopped fine
1 green bell pepper, cored, seeded and chopped fine
4 green onions, trimmed and chopped (white and green parts)
1/2 teaspoon oregano
1 whole bay leaf
6 large garlic cloves, minced
3 ounces tomato sauce
2 tablespoons sherry wine (optional)
1/2 cup frozen green pea
4 ounces chopped pimiento (Not roasted)
1 medium lime, juice of
salt and pepper, to taste
4 cups long grain rice
8 cups chicken broth (from the cooked chicken)
2 teaspoons bijol seasoning or 2 teaspoons mild paprika
7 tablespoons Hellmann's mayonnaise (NO salad dressing stuff!)
1/2 cup freshly grated parmesan cheese
2 cups shredded monterey jack cheese or 2 cups other mild white cheese
1/4 cup sliced pimento stuffed olive (drained)

Steps:

  • Wash chicken and place in a stock pot.
  • Approximately 1-1/2 quarts to 2 quarts of water to fully cover meat.
  • Bring to a boil and simmer with 1 onion, 2 garlic cloves, 2 sticks celery, 2 carrots, all chopped into large chunks, and salt & pepper to taste.
  • Cook uncovered until the meat falls apart - keep checking, the broth and chicken.
  • Remove chicken and reserve the broth.(You will use some of the broth to make the rice).
  • Skim excess fat, if any, from the top and strain the broth.
  • When cool enough, shred chicken into small pieces by hand.
  • In a large frying pan, saute the bacon briefly.
  • Drain most, but not all of the excess fat.
  • Add a tiny bit of olive oil and heat.
  • Add onion, green pepper, green onions, oregano, and bay leaf.
  • Saute onions until translucent.
  • Add the garlic and saute for one additional minute, stirring occasionally.
  • Add tomato sauce, chicken and sherry.
  • Bring to a boil reduce heat and simmer(uncovered) approximately 15 minutes to thicken sauce.
  • Add peas, pimentos, lime juice and pimento stuffed olives, during the last five minutes of cooking.
  • Salt and pepper to taste. Set aside.
  • In a large covered pan, mix the rice with the chicken broth and/or paprika.
  • Bring to a boil, cover and cook over low heat until the rice is thoroughly cooked and most of the broth absorbed, about 20 minutes.
  • Add the mayonnaise to the cooked rice, a little at a time, and mix thoroughly.
  • Preheat oven to 325°F.
  • Spread 1/3 of the rice mixture onto the bottom of a 13x9x2" (we use a foil baking pan - ease of clean-up).
  • Layer chicken mixture on top of the rice.
  • Then add another layer of rice mixture.
  • Generously sprinkle with 1/4 cup Parmesan cheese on top of this layer.
  • Add the remaining rice.
  • Sprinkle with remaining 1/4 cup Parmesan cheese on the top layer, then spread the shredded Monterey Jack completely over the top.
  • Bake for 15-20 minutes or until lightly browned and the cheese melts completely and bubbles.
  • Enjoy, you've earned it!

8 whole bone-in skin on chicken thighs Rub with salt pepper and cumin before cooking
1/2 cup Olive oil for frying
1 whole onion chopped
5 whole cachucha pepper chopped
4 whole garlic cloves minced
1 12-oz bottle of beer
3 1/2 cups chicken broth
8 oz canned tomato sauce
1/2 tsp bijol powder (annoto)
1 Bay leaf
2 tsp oregano dried
2 tsp cumin ground
1 1/2 tsp salt
1/2 tsp black pepper ground
3 1/2 cups parboiled rice
1/2 cup green peas frozen

Steps:

  • 4 strips bacon 8 chicken thighs, bone in, skin on To taste salt, pepper, and cumin for chicken 1/2 cup olive oil for frying 1 large onion, chopped 5 cachucha peppers, chopped 4 cloves garlic, mashed 1 12-ounce bottle beer 3 and 1/2 cups chicken broth 1 (8-ounce) can tomato sauce 1/2 teaspoon Bijol Powder 1 bay leaf 2 teaspoons oregano 2 teaspoons cumin, ground 1 1/2 teaspoons salt 1/2 teaspoon black pepper 3 1/2 cups parboiled rice 1/2 cup frozen green baby peas Sauté the bacon in a large frying pan. Reduce heat to low and let the fat render out of the bacon -- about 10 minutes. Meanwhile, season the chicken lightly with salt, pepper and a little cumin. Once the fat is released, remove the bacon, increase temperature to medium-high and add the chicken to the hot bacon fat. Remove the chicken when it is browned on both sides. Add a little olive oil to the same pan you fried the chicken in, and sauté the onion and green pepper until the onion is translucent. Add the mashed garlic and cook an additional minute or two, stirring frequently. Take the chicken broth and beer and pour into a large covered pot. Add the browned chicken pieces, cooked onions and green pepper, tomato sauce, Bijol, bay leaf, oregano, cumin, salt, and pepper. And hey, why let all that delicious bacon go to waste? Chop it up and toss it in! Bring everything to a rolling boil, reduce heat, cover and cook on low for 15 minutes. Add the rice. Bring to a boil and reduce heat. When the rice has absorbed some of the liquid, cover and simmer on low for about 30-45 minutes, or until the rice is fully cooked and not soupy. Add the frozen peas during the last five minutes of cooking only. For a dinner, serve the whole chicken pieces with the rice. For a party, you may remove the chicken, skin, de-bone and break it into bite-size chunks. However, DO NOT try to substitute any boneless, skinless chicken in this recipe -- unless you enjoy serving a disaster!

1/4 cup olive oil
12 bone-in, skin-on chicken pieces (6 drumsticks and 6 thighs)
Kosher salt and freshly ground black pepper
1 large onion, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon saffron threads
3 bay leaves
1/2 cup diced tomato
4 cups chicken stock
One 12-ounce bottle lager beer
2 cups arborio rice
1 cup frozen peas, thawed
1 pimiento, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large Dutch oven over medium-high heat. Sprinkle the chicken with salt and pepper. Add 3 drumsticks and 3 thighs to the Dutch oven and cook until browned on both sides, 7 to 8 minutes. Remove the chicken pieces with a slotted spoon and set aside. Repeat with the remaining drumsticks and thighs.
  • Add the onions and peppers to the pot and cook until the onions are translucent, 2 to 3 minutes. Add the garlic and saute for about 1 minute. Add the paprika, cumin, saffron and bay leaves, stirring until incorporated. Next, add the diced tomatoes, chicken broth, beer, rice and 1 teaspoon salt; mix well. Bring to a boil, then lower to a simmer.
  • Return the chicken pieces to the pot, cover, and transfer to the oven for 20 minutes. Remove the pot from the oven, add the peas and pimientos, then cover and return to the oven until the rice is completely tender, another 5 to 10 minutes.

3 lbs skinless chicken pieces, skin and fat discarded
1 tablespoon corn oil
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped onion
1 garlic clove, chopped fine
1/2 cup chopped ripe tomatoes
1 1/2 cups raw rice
1 cup sliced carrot
1/3 cup stuffed green olive
1 tablespoon capers
2 1/2 cups chicken broth
1 cup green peas
1/2 cup pimento pepper, slices (or substitute jalapeno peppers to heat it up)
1 hard-boiled egg, sliced
2 tablespoons grated parmesan cheese

Steps:

  • In a large skillet brown the chicken in the oil over medium heat for 20 minutes. Sprinkle with 1/2 tsp salt and the black pepper. Remove the chicken and set aside. In the same skillet with the chicken fat, fry the onion, garlic and tomato for 2 minutes.
  • Add the rice and fry for 2 minutes more. Add the carrots, olives and capers and mix everything together.
  • Pour in the broth and chicken pieces.
  • Bring to a boil, reduce heat to low, cover skillet and simmer until broth has been absorbed, about 10 minutes. Add the green peas.
  • Cover skillet with aluminum foil and punch 8 holes in the top to allow steam to escape. Bake in a 300F oven for 30 minutes. Fluff up the mixture once or twice during the baking time.
  • Serve warm. Decorate the surface with the pimiento strips and egg slices and sprinkle with the cheese. The rice should be dry, loose and not sticky. Serve with fried ripe plantain slices, a salsa picante and pickled vegetables.

1 1/2 lbs chicken parts, patted dry and liberally seasoned with
coarse salt, and
fresh ground black pepper
1/2-1 lb Italian sausage, cut in 2-inch pieces (sweet or hot)
1 small onion, chopped
1 medium bell pepper, cut in 1/2-inch dice (green or red)
4 garlic cloves, minced
1 teaspoon ground cumin

1/2 cup peeled crushed tomatoes (I use canned)
1/2 cup dry white wine or 1/2 cup beer

Steps:

  • In a deep, heavy-based pot (such as a Dutch oven), heat the oil on medium high. Sauté the chicken, in batches if necessary, until golden on all sides, 7 to 10 minutes.
  • Transfer the chicken to a platter.
  • Sauté the sausage until browned, about 3 minutes.
  • Transfer the sausage to the platter.
  • Pour off and discard the excess oil, leaving about 1 Tbs. in the pan.
  • Reduce the heat to medium and sauté the onion, pepper, and garlic until softened, about 5 minutes.
  • Return the chicken and sausage to the pot and add the cumin, paprika, chili powder, and turmeric, if using, stirring to distribute the spices. Cook for 1 minute and then add the tomatoes, wine (or beer), and bay leaf.
  • Increase the heat to medium high, stir, and cook for 2 minutes.
  • Add the rice and water. Bring to a boil, cover, and reduce the heat to a simmer. Cook until the rice is done and the liquid is absorbed, about 25 minutes. (If the rice is done but still very soupy, remove the cover and cook very gently until the liquid evaporates, taking care not to burn the rice.).
  • Give a toss and then let sit for 5 minutes before serving.

  • Add chicken to a large bowl. Add in 1 tablespoon olive oil and your adobo seasoning: cumin, paprika, chili powder, cayenne pepper, onion powder, garlic powder, coriander, salt and pepper. Use clean hands to toss the chicken in the mixture. Cover and allow chicken to marinate for 30 minutes, or you can skip this completely and begin the cooking process!
  • Next add remaining 1 tablespoon olive oil to a large deep 10 inch skillet and place over medium high heat. (If you do not have a skillet a large pot will also work very well!)   • In the same skillet (it should be greased enough already for sauteing) you will make your sofrito by adding in garlic, jalapeno, diced green pepper, diced onion and cilantro.
  • Saute for 2-3 minutes, then add in your spices (also known as homemade sazon spices): cumin, turmeric, coriander, garlic powder, oregano, salt and pepper and cook for 30 seconds. Then add in tomato sauce and water and stir well to combine.
