This is a casserole that is easy to prepare and quite different. The twist? Using hard boiled eggs and sweet potatoes! The flavors are amazing! Number Of Ingredients 9

Ingredients

2 c cooked and crumbled sage sausage
1 c cooked and crumbled bacon
2 - 3 c mexican blend shredded cheese
1 1/2 large freshly graded white yukon gold potatoes (should have 4 cups)
3/4 medium freshly graded sweet potato (should have 2 cups)
8 jumbo eggs, boiled, peeled and mashed (should have 3 cups)
1 bunch scallions, diced
2 large anaheim chili peppers (you can use hot peppers if you like)
vegetable cooking oil and 2 tablespoons unsalted butter

Steps:

1. Preheat oven at 350 degrees Spray your sheet pan, 9 x 13, with olive oil. You can use any brand or kind of spray, this is what I use. peel and grade your potatoes, set aside.
2. Cook your sausage and bacon, crumble and set aside. Boil your eggs, peel and smash. (Should be 2 cups) Diced your onions and peppers, set aside.
3. Pan fry your white and sweet potatoes together in vegetable oil and 2 tablespoons unsalted butter. After they have browned and tender, place in your pan.
4. In the same frying pan cook your onions and peppers until tender.
5. Start layering up your ingredients: Potatoes cheese sausage eggs scallions & pepper mix Bacon top with more cheese
6. Place in your preheated oven (350 degrees) for about 30 minutes or until all ingredients are hot and the cheese is melted.
7. Optional: 1: When serving, using the same pan, fry up a few soft cooked eggs and place on top each serving. 2: Pour white gravy on top!

While looking for something a little different, I concocted this from a number of different sources and it was well received at potlucks. You can substitute egg substitute and reduce milk a little and it works well. Baking time may vary

8 slices of fresh bread, cubed
1 -1 1/2 lb pork sausage (or sausage/bacon combination)
2 cups cheddar cheese, grated
1 (4 ounce) can sliced mushrooms
3/4 teaspoon dry mustard
1 (10 ounce) can cream of mushroom soup
1/2 medium green pepper (chopped)
1/2 medium red pepper (chopped)
1/4 cup black olives (chopped)
2 1/2 cups milk
8 extra large eggs

Steps:

Trim crust from bread and cut in 2 inch cubes Spray 9 X 13 Casserole dish with nonstick spray and put cubed bread in the dish Brown and drain sausage Add chopped peppers and olives and stir into mixture (heat through only) Combine beaten eggs, dry mustard, and 2 cups of milk in a bowl.
Layer sausage mixture on top of bread Layer Cheese on top of sausage mixture Layer Sliced Mushrooms on top of Cheese Pour egg mixture into dish, cover and refrigerate overnight When ready to bake, combine soup and 1/2 cup milk and pour over top of dish Bake in preheated 350 degree oven for 1 1/2 to 2 hours.
(Check to make sure egg mixture is cooked in the middle of the dish).
I forgot to add the eggs. Use 8 large eggs. Mix and pour over the layered mixture. Egg substitute works well by reducing the milk by 1/2 cup ..

This recipe came from a slow cooker recipe book and I tweaked it a bit.I make it for the whole family as a meal and there is always leftovers.Its really great.The original recipe is only 5 WW points for 2/3 cup.I omitted the Topping and added sausage and/or bacon into the recipe and topped with cheese instead.I also baked it till the cheese was bubbly or going brown.

Ingredients

284 ml condensed cream of mushroom soup
1/2 cup of finely chopped onion
1 cup fat free sour cream
1 teaspoon salt
1/4 teaspoon pepper
1 kg frozen hash browns
1 cup grated cheddar cheese
6 cooked sliced breakfast sausage or 6 slices cooked cut up bacon
1 tablespoon hard margarine or 1 tablespoon butter
1/4 cup corn flake crumbs
1/2 cup grated cheddar cheese

Steps:

Stir first 5 ingredients in large bowl.If you are adding the sausages and/or bacon (ham would probably be great too),mix them in as well.
Add hashbrowns and the 1 cup grated cheese.Put into slow cooker.Cover Cook on high for 3-4 hours.
Topping:(their version).
Melt margarine in small saucepan.Stir in cornflake crumbs.Saute until crisp.Scatter over top before serving.
If you would like my topping,you would put the mixture into a large casserole dish after cooking,Pack down and sprinkle the 1/2 cup grated cheddar cheese.I then put it in the oven on broil until the cheese gets bubbly and possibly starts to go brown.
