BANDERA CORNBREAD (CLONE)

Moist sweet and amazing cornbread from the Bandera chain of restaurants owned by Houstons. To accurately clone the restaurant's version, use small (6") cast iron skillets, however this can just be made in one large 12" cast iron skillet.

1 cup all-purpose flour
1 cup yellow cornmeal
1/4 teaspoon salt
4 teaspoons baking powder
1 (15 ounce) can creamed corn
2 ounces green chili peppers (1/2 small can, roasted syle)
1 cup butter
1 cup sugar
1/2 cup cheddar cheese (shredded)
1/2 cup monterey jack cheese (shredded)
4 eggs

Steps:

  • Prehead oven & skillet to 300 degrees.
  • Mix flour, cornmeal, salt & baking powder and set aside. Melt butter and combine with sugar, creamed corn and chili peppers. Mix to combine. Add eggs one-by one and mix until well blended. Add cheese. Fold-in flour mixture until mixed well, clumps are okay.
  • Carefully remove cast iron skillet from oven and evenly coat top and sides with canola/vegetable oil. Pour in cornbread batter (be careful, it may splatter).
  • Bake 30-45 minutes, or until top is golden brown and a toothpick inserted in the center comes out clean.

1 cup butter
3/4 cup sugar
4 eggs
1/2 cup green chili, diced (may use canned)
1 1/2 cups cream-style corn
1/2 cup cheddar cheese, shredded
1 cup flour
1 cup yellow cornmeal
2 tablespoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 325 degree f.
  • Cream butter and sugar.
  • Add eggs slowly, one at a time.
  • Add chiles, corn and cheese, mixing well to incorporate.
  • Sift together dry ingredients, then add and mix until smooth.
  • Pour into well-buttered, square 9 inch pan and bake about 1 hour.

2 cups yellow cornmeal
1 teaspoon kosher salt
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup buttermilk
2 eggs
1 cup creamed corn
2 tablespoons canola oil

Steps:

  • Preheat oven to 425 degrees.
  • Place a 10-inch cast iron skillet into the oven.
  • In a bowl, combine the cornmeal, salt, sugar, baking powder, and baking soda. Whisk together to combine well.
  • In a large bowl, combine the buttermilk, eggs, and creamed corn, whisking together to combine thoroughly. Add the dry ingredients to the buttermilk mixture and stir to combine. If the batter will not pour, add more buttermilk to the batter.
  • Swirl the canola oil in the hot cast iron skillet. Pour the batter into the skillet. Bake until the cornbread is golden brown and springs back upon the touch, about 20 minutes.

3/4 cup white sugar

1 (15 ounce) can cream-style corn
2 ounces cans chopped green chili peppers, drained
1/2 cup shredded monterey jack cheese
1/2 cup shredded cheddar cheese
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 teaspoon salt
4 teaspoons baking powder

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Lightly grease a 9x13 inch baking dish.
  • In a large bowl, beat together butter and sugar.
  • Beat in eggs one at a time.
  • Blend in cream corn, chiles, Monterey Jack and Cheddar cheese.
  • In a separate bowl, stir together flour, cornmeal, baking powder and salt.
  • Add flour mixture to corn mixture; stir until smooth.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.

All-Purpose Cornbread (Best of Both Regions) image

This recipe comes from my favorite cooking magazine -- Cook's Illustrated. It's the best of the Northern and Southern cornbread recipes. It will produce a tender, fluffy crumb and a thick, crunchy crust with a sweet corn taste. Before preparing the baking dish or any of the other ingredients, measure out the frozen kernels and let them stand at room temperature until needed. When corn is in season, fresh cooked kernels can be substituted for the frozen corn. This recipe was developed with Quaker yellow cornmeal; a stone-ground whole-grain cornmeal will work but will yield a drier and less tender cornbread. A Pyrex glass baking dish is preferred because it yields a nice golden-brown crust, but a metal baking dish (nonstick or traditional) will also work. The cornbread is best served warm; leftovers can be wrapped in foil and reheated in a 350-degree oven for 10 to 15 minutes

1 cup yellow cornmeal, see note
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon table salt
1/4 cup packed light brown sugar
3/4 cup frozen corn, thawed
1 cup buttermilk
2 large eggs
8 tablespoons unsalted butter, melted and cooled slightly (1 stick)

Steps:

  • Adjust oven rack to middle position; heat oven to 400 degrees.
  • Spray 8-inch-square baking dish with nonstick cooking spray.
  • Whisk flour, cornmeal, baking powder, baking soda, and salt in medium bowl until combined; set aside.
  • In food processor or blender, process brown sugar, thawed corn kernels, and buttermilk until combined, about 5 seconds.
  • Add eggs and process until well combined (corn lumps will remain), about 5 seconds longer.
  • Using rubber spatula, make well in center of dry ingredients; pour wet ingredients into well.
  • Begin folding dry ingredients into wet, giving mixture only a few turns to barely combine; add melted butter and continue folding until dry ingredients are just moistened.
  • Pour batter into prepared baking dish; smooth surface with rubber spatula.
  • Bake until deep golden brown and toothpick inserted in center comes out clean, 25 to 35 minutes.
  • Cool on wire rack 10 minutes; invert cornbread onto wire rack, then turn right side up and continue to cool for about 10 minutes longer.
  • Cut into pieces and serve.

1 cup coarsely chopped zucchini
1 cup milk
½ cup chopped onion
2 eggs
¼ cup vegetable oil
1 ¼ cups cornmeal
1 cup all-purpose flour
2 tablespoons white sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch cast-iron skillet, and place it into the oven while it preheats.
  • Place the zucchini, milk, onion, eggs, and vegetable oil into a blender, and pulse 5 to 8 times, until thoroughly mixed and the zucchini and onion have been chopped into very small pieces.
  • Mix together the cornmeal, flour, sugar, baking powder, and salt in a large bowl. Pour the zucchini mixture into the cornmeal mixture, stirring to combine, and gently mix in the Cheddar cheese.
  • Carefully pour the batter into the hot greased skillet, smooth it out with a spoon, and bake until the cornbread is golden brown and a toothpick inserted into the center comes out clean, about 30 minutes.

1/3 lb grated longhorn cheese, divided

Steps:

  • Mix all ingredients together, except for 2 handfuls of cheese. Pour into a greased casserole dish (the flatter, the better). Sprinkle remaining cheese on top. Bake at 350* for 40 minutes or so. Recipe can easily be doubled, tripled, etc., But, if using a deep dish, allow extra baking time.

Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. 1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1 large egg
1 1/4 cups white cornmeal or 1 1/4 cups blue cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
you might want to reduce the sugar to 1/3 cup and use 2 egg

Steps:

  • Heat oven to 400³F.
  • Grease bottom and side or round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg in large bowl with hand beater or wire whisk.
  • Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy).
  • Pour into pan.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm if desired.
