Crispy, fluffy, Roasted Fingerling Potatoes are an irresistible side dish!

2 lbs fingerling potatoes, washed and patted dry
1 tablespoon olive oil
2 teaspoons kosher salt
½ cup sour cream
¼ cup mayonnaise
2 chipotle peppers in adobo sauce, finely minced
2 garlic cloves, minced
½ teaspoon cumin
½ teaspoon smoked paprika
¼ teaspoon kosher salt
1 teaspoon white wine vinegar

Steps:

  • Preheat the oven to 400 degrees. Place the potatoes on a large baking sheet and prick holes in each one with a fork.
  • Drizzle them with oil and then use your hands to coat them thoroughly. Sprinkle the potatoes with salt.
  • Roast the potatoes until they are fork tender, about 25 minutes. While the potatoes are cooking, whisk together the sauce. Transfer to an airtight container and chill until ready to serve. Enjoy!

2 pints fingerling potatoes
2 sprigs fresh rosemary
2 to 3 sprigs fresh sage
3 sprigs fresh thyme
6 cloves garlic, left unpeeled
3 tablespoons extra-virgin olive oil, plus for sheet pan
Salt and pepper

Steps:

  • Preheat oven to 500 degrees F and place a baking sheet inside to heat.
  • Add potatoes, rosemary, sage, thyme, and garlic to a medium bowl. Drizzle with olive oil, and season with salt and pepper. Remove sheet pan from oven, lightly coat with olive oil, and pour potatoes onto pan. Place potatoes in oven and reduce heat to 425 degrees F. Roast for 20 minutes, or until crispy on outside and tender on inside.

1 pound fingerling potatoes, halved lengthwise
2 cloves garlic, minced
2 tablespoons grated Parmesan cheese
1 teaspoon lemon zest
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss potatoes, garlic, Parmesan cheese, lemon zest, salt, and black pepper together in a bowl. Drizzle with olive oil and toss again until evenly combined.
  • Heat a cast-iron skillet over medium-high heat. Add butter and heat until melted. Add potatoes; cook and toss until evenly coated with butter, about 2 minutes. Move skillet to the preheated oven.
  • Roast in the preheated oven for 15 to 20 minutes or until soft, tossing potatoes halfway through. Remove from oven and top with parsley.
