Apricot Party Dip Food

HONEY RICOTTA DIP WITH PISTACHIO AND APRICOT

Steps:

• In a large mixing bowl, beat together the cream cheese, ricotta, 2 tablespoons honey, and salt until smooth. Taste and add additional salt or honey as desired. Gently stir in the apricots.
• Transfer to a serving dish and smooth the top. Sprinkle with pistachios and drizzle with remaining 1 tablespoon honey. Serve immediately or refrigerate until ready to serve.

APRICOT DIPPING SAUCE

Steps:

• Purée all ingredients in a blender until smooth.

DIPPED APRICOTS

Steps:

• Microwave 2 ounces finely chopped dark chocolate at medium power until melted. Dip dried apricots halfway in the chocolate, then press an almond on each. Place on a parchment paper-lined plate, then freeze until set, about 2 minutes.

APRICOT PARTY DIP

Steps:

• Spread cream cheese in the bottom of a 2 quart casserole dish.
• Mix soy sauce (to taste) and apricot preserves. Spread over cream cheese.
• Evenly sprinkle toasted, chopped pecans over the apricot mixture.
• Top with crumbled bacon.
• Warm in oven or microwave before serving.
• (Note: I like halving the amounts and making 8 layers instead of 4. If you make it in a clear dish, it's very attractive.).

APRICOT DIP SAUCE

Steps:

• Put preserves in food processor; pulse till smooth. Transfer to small bowl. Add vinegar, worcestershire sauce, and orange zest; stir till well combined. Serve immediately or can cover and refrigerate up to 2 days.
