APRICOT HONEY BUTTER

Steps:
- Grate rind and squeeze juice from lemons; you'll need 2 tablespoons grated rind and 1/2 cup lemon juice.
- Combine apricots, lemon rind, water, lemon juice in a medium saucepan. Don't use aluminum; stainless steel is good.
- Bring to a boil over high heat, cover, reduce heat to low and STIRRING FREQUENTLY, keep at a low boil for 35 - 40 minutes or until apricots are tender.
- CAREFULLY pour into blender or food processor and process until smooth. Return to saucepan.
- Add honey; stir and return to boil. Again reduce heat and cook, UNCOVERED, at a low boil until very thick. STIR FREQUENTLY.
- Ladle into hot sterilized jars. Remove air bubbles, wipe rims, add hot lids and rings.
- Process in boiling water bath for 5 minutes OR refrigerate and use within 1 month.

Steps:
- Heat gas grill on medium or charcoal grill until coals are ash white.
- Meanwhile, melt butter in 1-quart saucepan until sizzling; add onion.
- Cook over medium heat until onion is softened (1 minute).
- Stir in all remaining glaze ingredients.
- Set aside.
- Combine oregano, salt, pepper, and crushed red pepper flakes in small bowl.
- Rub on both sides of chicken breasts.
- Place chicken onto grill.
- Grill, turning once, until chicken is no longer pink and juices run clear when pierced with a fork (15 to 20 minutes).
- Brush chicken with glaze during last 5 minutes of grilling.
- Cook remaining glaze in 1-quart saucepan over medium heat until it comes to a boil, stirring constantly.
- Serve warm glaze over chicken.

- For the honey butter, beat the butter with the honey and spoon onto a large piece of cling film. Squeeze into a sausage shape, then wrap tightly and chill until ready to use. Will keep in the fridge for up to a month.
- Sift the flour, bicarbonate of soda and a small pinch of salt into a bowl, then stir through the sugar and make a well in the centre. Beat together the egg and milk, then gradually pour into the well, stirring slowly, to avoid creating lumps. Stir in the apricots.
- Heat a non-stick frying pan over a low heat and add a little oil. Drop in 4 tablespoonfuls of batter and cook for 1 min or until the surface of each pancake is covered in bubbles. Flip with a palette knife or fish slice, then cook for a further min. Repeat with the remaining batter. Serve warm or leave to cool, then toast and spread with the honey butter to serve

Steps:
- Combine apricots, orange juice, water and ginger in a medium saucepan. Cover tightly and simmer over medium-low heat until the liquid is reduced by half and the apricots are very tneder, about 20 minutes. Stir frequently so the apricots don't stick.
- Transfer to a food processor fitted with the metal blade and puree until smooth, scraping down the sides of the bowl as needed. Add the honey and process to blend.
- Pack the butter into a jar, cover with plastic wrap, and cool to room temperature. The butter is ready to be served, or cover with a tight-fitting lid and refrigerate. Will keep in the fridge for 3 weeks.

- In a large stainless steel saucepan, combine apricots and water. Bring to a boil over medium-high heat. Reduce heat and boil gently, stirring occasionally, until apricots are soft, about 20 minutes.
- Working in batches, transfer apricot mixture to a food mill or food processor fitted with a metal blade and puree just until a uniform texture is achieved. Do not liquify. Measure 6 cups of apricot puree.
- In a clean large stainless steel saucepan, combine apricot puree and sugar. Stir until sugar dissolves. Bring to a boil over medium-high heat, stirring frequently. Reduce heat and boil gently, stirring frequently, until mixture thickens and holds its shape on a spoon.
- Prepare canner, jars and lids.
- Ladle hot butter into hot jars, leaving 1/4 inch headspace. Remove air bubbles, wipe rim and place lids.
- Place jars in canner, ensuring they are completely covered with water. Bring to boil and process for 10 minutes. Remove canner lid. Wait 5 minutes then remove jars, cool and store.

- Prepare 3 half pint jars, lids, and rings. Sterilize the jars and keep them in the hot water till its time for processing.
- On a dishtowel place your hot jars in a semi circle leaving room for your pot that has your butter recipe.

- Start with your butter at room temperature and add to a mixing bowl with the sugar. With a wooden spoon, mix the butter and sugar together until well blended and creamed. The butter is “creamed” when it is light and fluffy i.e. has almost doubled in mass and lightened to a yellowish-white colour. Next add the maple syrup, honey and the egg.

- Preheat your oven to 180ºC. Whist you’re waiting for it to come to temperature, flour your work surface or a large chopping board and then roll out the dough to a thickness of about 1cm. Using a pastry cutter or small glass (5-6 cm diameter) cut out about 20 circles from your dough. You can always collect up any remaining scraps of dough and re-roll them.
