CREAMY MACARONI AND CHEESE
This is my absolute very favorite macaroni and cheese recipe and I have a large collection of m/c recipes. Adapted from Southern Living. I don't make this very often because I could literally eat the whole thing and lick the dish clean.

Steps:
- In a big skillet, melt the butter over medium-high heat.
- Whisk the flour in gradually until the mixture is smooth.
- Cook and whisk continually for 2 minutes.
- Add in salt, pepper, cayenne, and garlic; stir to combine.
- Gradually whisk in half-and-half and milk.
- Cook and whisk continually for 8-10 minutes or until mixture is thickened.
- Add in half of the sharp cheddar cheese; stir.
- Add in all of the extra-sharp cheddar cheese; stir until smooth.
- Take skillet off stove burner.
- Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.
- Sprinkle with the remaining sharp cheddar cheese.
- Bake in a 350° oven for 20 minutes (may need to bake longer for a crispy top).

- *Make sure you use the firmest tofu available for this recipe. You may also want to be generous with the spices and use some extra sharp cheese to liven up the normally bland flavor of tofu.
- Drain tofu well, making sure to squeeze out all extra moisture, and slice into small pieces (use a French fry cutter or equivalent for consistent sizes).
- In a separate bowl, mix together eggs, cream and cheese.
- Stir tofu pieces into mixture and add seasonings as desired.
- Transfer mixture to a casserole dish or greased pie plate and bake at 375 for 30 - 45 minutes or until golden brown.

Great for fulfilling a mac and cheese craving, modified version of what I found on the back of the Dreamfields box. We loved this! Digestible carbs per serving is 12.

Steps:
- Heat oil in 12-inch skillet over medium heat; sauté onion, garlic and mushrooms for 3 to 5 minutes, stirring occasionally. Add half & half and milk, season with salt, pepper and nutmeg. Cook for 10 minutes, stirring occasionally.
- Meanwhile, cook pasta according to package directions. Pre-heat oven to 425 degrees F. Spray a 9x9 baking dish with nonstick cooking spray.
- Toss pasta and sauce together. Add cheeses and optional hot dog slices; stir until well blended and pour into casserole dish. Top with Parmesan.
- Bake uncovered for 20 minutes or until golden brown. Let cool for 5 minutes before serving.
CAJUN MACARONI AND CHEESE
A co-worker made this today and it knocked me off my low carb diet. It has a certain zip to it not found in most macaroni and cheese recipes. Must be the Zatarain's. Anyway, I thought it was the best macaroni and cheese recipe I have ever had.

- Cook noodles according to pkg directions w/ a capful of oil.
- Drain and rinse noodles.
- Season noodles with Zatarains and pepper to taste.
- In bowl, mix eggs, milk, soup, melted butter, Zatarians and pepper.
- Add cheeses to noodles.
- Add egg mixture to noodles.
- Bake in a 9x13 pan for 45-60 min, until top is browned.

- Pre-heat oven to 375 degrees F.
- Butter a 3-quart casserole dish; set aside. Place the bread in a medium bowl.
- In a small saucepan over medium heat, melt 2 Tbsp butter.
- Pour butter into bowl with bread, and toss; set the bread crumbs aside.
- In a medium saucepan set over medium heat, heat the milk.
- Melt remaining 6 Tbsp. butter in a high-sided skillet over medium heat. When butter bubbles, add flour.
- Cook, stirring, 1 minute. While whisking, slowly our in hot milk.
- Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
- Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cup cheddar cheese, and 1 1/2 cup Gruyere or 1 cup Pecorino Romano; set cheese sauce aside. Fill a large saucepan with water; bring to a boil.
- Add macaroni; cook 2 to 3 min. less than manufacturer's directions, until the outside of the pasta is cooked and the inside is underdone. (Different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer the macaroni to a colander, rinse under cold running water, and drain well.
- Stir macaroni into the reserved cheese sauce. Pour mixture into prepared dish.
- Sprinkle remaining 1 1/2 cup cheddar cheese, 1/2 cup Gruyere or 1/4 cup Pecorino Romano, and bread crumbs over top.Bake until browned on top, 30-60 minutes.
- Transfer dish to a wire rack to cool 5 min.; serve.

- Use one tablespoon butter to thickly grease a 9-by-13-inch baking dish.

- Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
- Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.
- Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.
- Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
- Scatter over the bread and the remaining parmesan, then bake for 20 mins until crisp and golden. Can be frozen before baking - defrost thoroughly before cooking.
