Provided by Susan Benton

Categories     Main

Time 25m

Yield 4

Number Of Ingredients 11

1 tablespoon Italian seasoning
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
1½ tablespoons cayenne pepper
2 tablespoons butter
1 tablespoon vegetable oil, for frying
4 (6-ounce) portions skinless and boneless salmon fillets
¼ cup dry white wine
½ cup heavy whipping cream
¾ cup blue cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish by massaging the rub on both sides.
  • Heat a large heavy bottomed skillet over medium-high heat until it begins to smoke. Add the butter and oil. Once the butter has melted, quickly add the fish and cook about 2 minutes per side, only flipping once.
  • Transfer the whole pan to the oven and cook for another 4-5 minutes. Do not overcook.
  • Place the white wine into a medium saucepan and reduce it by half. Add the heavy whipping cream and allow it to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon. Use the leftovers in mashed potatoes.

BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE

Blackened Steak Bites with Blue Cheese Sauce image

This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

Provided by amym

Categories     Beef Appetizers

Time 20m

Yield 8

Number Of Ingredients 9

1 ½ pounds beef top sirloin, trimmed and cut into bite-size pieces
2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
2 tablespoons vegetable oil
1 (3 ounce) package cream cheese
3 tablespoons evaporated milk
8 ounces blue cheese crumbles
½ teaspoon garlic powder
¼ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

BLUE CHEESE BAKED SALMON

Blue Cheese Baked Salmon image

A friend mentioned baking salmon with blue cheese at dinner one night. Salmon? Blue Cheese? Sounded YUM to me! I couldn't find an actual recipe here so I came up with my own.

Provided by Raevin

Categories     Very Low Carbs

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 4

4 -6 salmon fillets
1/4-1/2 cup blue cheese dressing (the higher quality the better)
salt and pepper
1/4 cup blue cheese, crumbles (optional)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Place salmon fillets in pan.
  • 3. Lightly season both sides with salt and pepper.
  • 4. Spoon 1 -2 tablespoons of blue cheese dressing over the top of the salmon. Put enough to cover the top of the fillet.
  • 5. Bake for 25 minutes (or until the fish flakes easily) in oven.
  • 6. Option using blue cheese crumbles: Bake for 20 minutes, spread the blue cheese crumbles on top and bake another 5 minutes.
