Delicious drop cookies with many variations... I, for example, omit the raisins and nuts, so that I can give some to my horses. I believe this is from Betty Crocker's Cooky Book.

Number Of Ingredients 10

1 cup shortening
2 cups brown sugar (packed)
2 eggs
2 cups well-drained thick applesauce
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon or 1 teaspoon nutmeg
1 cup raisins (optional)
1/2 cup coarsely chopped nuts (optional)

Steps:

  • Mix shortening, brown sugar, and eggs thoroughly.
  • Gradually stir in applesauce. Add flour.
  • Mix remaining ingredients. Stir into applesauce mixture.
  • Chill for at least 2 hours.
  • Heat oven to 400ºF (204ºC).
  • Drop rounded tablespoonfuls of dough about 2 inches apart on lightly greased baking sheet.
  • Bake 9 to 12 minutes, or until lightly crisped.

Big fluffy cake-like cookies. This is a recipe passed on from my mom. Her recipe card is so covered with cookie ingredients you can't read it anymore. My sister and I call her regularly to get the recipe, so I am adding it here so I will always have it.

1/2 cup shortening (Crisco)
1 cup sugar
1 cup applesauce
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cinnamon
12 ounces chocolate chips

Steps:

  • 400 degrees 8-10 min.
  • Mix sugar and shortening together. Add applesauce.
  • Beat eggs and add to applesauce.
  • Add dry ingredients.
  • Stir in choc chips.

This is a healthier cookie but is still delicious! From one of my favourite cookbooks, "One Smart Cookie", by Julie Van Rosendaal. Dough needs an hour to chill before rolling out.

1/4 cup stick butter or 1/4 cup margarine, softened
1 1/4 cups packed brown sugar
1/4 cup applesauce
1 large egg
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • In a large bowl, beat margarine, brown sugar, applesauce and egg until smooth.
  • In a medium bowl, combine flour, baking powder, cinnamon and salt. Add to the applesauce mixture, stirring by hand just until you have a soft dough. Divide the dough in half, wrap each half in plastic and refrigerate for at least an hour or until well chilled.
  • When ready to bake, preheat oven to 375 degrees. Roll dough 1/8 inch thick between two sheets of waxed paper. Cut with a 2 1/2 inch cookie cutter or glass rim, and place 1 inch apart on a cookie sheet that has been lightly sprayed with nonstick spray.
  • Bake for 10 - 12 minutes, until edges are golden. Bake 5 minutes longer for darker golden, crispier cookies. Transfer to a wire rack to cool.

1 cup whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1 cup butter, softened
1 1/2 cups brown sugar, packed
2 eggs
1 cup applesauce
1 1/2 cups raisins
powdered sugar (to garnish)

Steps:

  • Preheat the oven to 375ºF.
  • In a bowl, combine the dry ingredients and set aside.
  • In a mixing bowl, cream the butter, then add the brown sugar and cream the butter and sugar.
  • Add the eggs and applesauce and mix well.
  • Gradually add the dry ingredients and raisins.
  • Drop by rounded tablespoons onto a greased cookie sheet and bake for 9-13 minutes until light golden brown.
  • These cookies do not brown a lot.
  • Sprinkle with powdered sugar.

½ cup applesauce
2 ¼ cups all-purpose flour
½ teaspoon baking soda

½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F ( 195 degrees C ). Grease cookie sheets.
  • In a large bowl, cream the shortening, sugar, and egg. Stir in the applesauce. Sift together the flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Then mix in the raisins and nuts.
  • Drop by teaspoonfuls onto the prepared cookie sheets. Bake 10 to 12 minutes in the preheated oven. Remove to cool on wire racks.

1 egg
¾ cup shortening
1 cup applesauce

¼ teaspoon ground cloves
1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
