ICED APPLESAUCE COOKIES
No one will be able to stop eating these applesauce cookies! Made with applesauce and oatmeal, they're laced with an easy icing drizzle.

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Line 2 baking sheets with parchment paper.
- In a medium bowl, mix the dry ingredients. In a separate medium bowl, mix the wet ingredients. Add the dry ingredients to the wet ingredients and stir until a sticky dough forms (it will be wetter than you expect).
- Place the bowl in the refrigerator and chill for 10 minutes.
- Make 1 1/2 tablespoon-sized balls (using a size 40 cookie scoop, if you have it) and place them onto the baking sheet. Scoop or use 2 spoons to make evenly spaced drops onto the paper - don't try to adjust or move them once they're on the sheet.
- Bake the cookies for 10 to 12 minutes until lightly browned. Allow to cool to room temperature before enjoying. If desired, make a criss-cross icing drizzle with a fork using our 1 Minute Powdered Sugar Icing. Store at room temperature in a cookie tin for up to 5 days, or freeze (un-iced) for up to 3 months.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
FAVORITE APPLESAUCE COOKIES (WITH OATS AND CINNAMON)
These cookies are a little crispy around the edges right out of the oven, but soften as they are stored.

- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Stir the ingredients together in a medium bowl. The batter will be fairly thick and sticky.
- Use a 1 tablespoon spoon to portion out batter onto the prepared baking sheet, placing batter about 1 inch apart. Press down slightly so the cookies are about 1/2 inch thick.
- Bake for 12-14 minutes or until firm to the touch and lightly golden brown around the edges.
- Remove from oven and let cool on the pan. Serve warm or at room temperature.

APPLESAUCE SPICE COOKIES

- Preheat oven to 375 degrees F.
- In a bowl, combine the dry ingredients and set aside.
- In the bowl of a standing mixer, fitted with a paddle attachment, cream the butter. Add the brown sugar and continue creaming. Then add the eggs and applesauce mixing well. Gradually add the dry ingredients and raisins to make dough.
- Drop by rounded tablespoons onto a greased cookie sheet (save those butter papers!) and bake until light golden brown, about 9 to13 minutes. The cookies do not brown very much. Sprinkle with powdered sugar.
- Peel and core apples and cut into quarters. Place them in an enamel sauce pan with the water and lemon juice then bring to a boil then turn the heat down slightly and simmer 30 minutes to break them down and get them to thicken. Take off the heat and stir in the sugar and cinnamon, if using.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.
