- In a large skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. , Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.

- Cook 4 chopped slices turkey bacon, 1 chopped onion, 3 chopped garlic cloves and 2 teaspoons thyme in vegetable oil in a large skillet, stirring, 5 minutes. Add two 15-ounce cans great Northern beans (drained and rinsed), 1 1/2 cups water, 1/2 cup ketchup, 1/3 cup maple syrup, 2 tablespoons yellow mustard, 1 tablespoon apple cider vinegar and 1/2 teaspoon pepper. Simmer over medium-low heat until thickened, about 20 minutes.

This homemade healthy baked beans recipe literally makes the best baked beans I've ever had-it's an old family recipe that I've lightened up a bit with ground turkey, turkey bacon, and a homemade pork and beans recipe instead of the canned stuff.

- Dice and cook the onions in a large pan. I've been buying frozen diced onions, and I have to tell you that they are a game changer!
- Add ground meat to the onions in the pan. You can use ground turkey, lean beef, or even chicken for this recipe. I really think it doesn't make a huge difference because of the amount of seasonings you're going to add.
- While that is cooking, add all of the other ingredients to a large baking dish. I drain the liquid out of one can of beans, then set the liquid aside in case beans look dry after cooking. If you choose to use more than 2 cans of beans, save half of the liquid for that.
- When meat and onions are cooked, add the mixture to your baking dish and mix well. The bacon you see in this is from the homemade pork and beans recipe that I use instead of canned pork and beans.
- Cook at 350 degrees for an hour. If using a smoker, you can easily cook them in there for an hour-the flavor is delicious!

SPICY TURKEY AND GREEN BEAN STIR-FRY

- Bring a large pot of water to a boil. Stir in the rice, cover and boil until tender, about 18 minutes; drain well and keep warm.
- Meanwhile, preheat the broiler. Toss the green beans, 1 1/2 tablespoons vegetable oil and the sugar on a rimmed baking sheet. Broil, stirring once, until the beans are tender and charred, about 8 minutes.
- Heat the remaining 1 1/2 tablespoons vegetable oil in a large skillet over high heat. Add the turkey and cook, breaking it up with a wooden spoon, until browned, 3 minutes. Add the garlic, pickle and chile paste and cook until the garlic is slightly golden, about 3 minutes.
- Whisk the chicken broth, soy sauce, sherry and cornstarch in a bowl. Add the green beans to the skillet with the turkey mixture and cook, stirring, 1 minute. Add the soy sauce mixture and cook, stirring occasionally, until the sauce thickens slightly, about 3 minutes. Serve with the rice.

- Drain one can of pork & beans, do not drain the other. Pour both into the crockpot.
- Chop the bacon into 1 inch pieces (removing any large areas of fat) & fry on the stove til almost crisp, but not quite. Drain grease. Add bacon to crockpot.
- In same frying pan, crumble & brown the ground turkey. Drain & add to crockpot.
- Add the last 8 ingredients & stir well.
- Set crockpot to low setting & cook for 6-8 hours.

LOW CALORIE AND FAT TOMATO MEAT SAUCE WITH MUSHROOMS AND ARUGULA
I used lean ground turkey adding the diced veggies to it so no added oil is used. This has lots of flavor and nutrients. Let me tell you that it's so good you'll go into the fridge and sneak a bite of it cold. It seems like a lot of arugula but it cooks down to just look like a bunch of herbs. I find this a great way to get greens into my family. Go ahead and use spinach if you can't get arugula. Use to top any pasta, rice, lasagna, pizza or eat it straight. Do freeze the leftovers for soups or whatever you enjoy!

- Preheat oven to 350 degrees F.
- Rinse eggplant and cut in half lengthwise.
- Remove pulp, leaving 1/2 inch of outer shell.
- Dice pulp and set in a bowl.
- Place butter or margarine, if used, in large, heavy skillet or nonstick skillet over medium-high heat.
- Add onion, mushrooms, seasonings, and meat.
- Saute, stirring constantly, 8 to 10 minutes or until meat begins to brown.
- Stir in tomato paste, wheat germ if used, and eggplant pulp.
- Cook 5 minutes, or just until warm.
- Lightly spray an ovenproof dish large enough to hold two eggplant shells with vegetable oil.
- Spoon meat mixture into each eggplant shell and place in prepared dish. Bake 20 to 30 minutes. Remove from oven.
- If desired, sprinkle some freshly grated Parmesan or Romano cheese on top of each eggplant half before serving. Then sprinkle chopped fresh parsley on top of each.
