6 tablespoons reduced-sodium chicken broth, divided
2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped
2 tablespoons chopped onion
1 garlic clove, minced
1-1/2 cups fat-free Caesar croutons
2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic wrap; fill with stuffing mixture. Close roast; tie at 2-in. intervals with kitchen string and secure ends with toothpicks., Place on a rack in a shallow baking pan coated with cooking spray. Bake at 425° for 25-30 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

3 -4 lbs boneless pork loin
2 apples, peeled and diced
1/2 cup raisins or 1/2 cup craisins
prepared stuffing, homemade (4 servings)
1 cup apple juice
1/2 cup brown sugar

Steps:

  • With a knife sharpener, poke a hole through the roast to make a tunnel.
  • Then take a knife and cut through until the hole is wide enough to stuff.
  • In a large bowl, mix together apple juice and brown sugar.
  • Place roast in bowl and turn a few times.
  • Let sit in fridge fat side up for about an hour.
  • In the meantime, peel and dice apples.
  • Start making stuffing, adding apples and raisins before adding the stuffing mix so they get soft.
  • Let apple stuffing cool while the pork in in the fridge.
  • Preheat oven to 350°F .
  • Line a roasting pan with heavy duty foil.
  • Remove pork from fridge and Pour some of the marinade into the foil lined pan.
  • Just enough to coat the bottom.
  • Discard the rest.
  • Start stuffing the roast.
  • It's easiest to use your hands.
  • Make sure you stuff it way down so you don't forget the middle.
  • Bake about 20 minutes per pound - 170 degrees using a meat thermometer.
  • Remove from oven and let stand 10 minutes.
  • Carve 1 1/2 inches wide.

For the Apple Stuffing:
1/2 cup celery (diced)
1/2 cup sweet onion (diced)
2 tablespoons butter (1/4 stick)
1 large apple (Granny Smith, cut into 1/2-inch dice)
1 medium clove garlic (pressed)
1 cup chicken broth
4 cups stuffing mix
1/4 cup apple juice
2 teaspoons fresh sage (minced)
2 teaspoons fresh thyme leaves
For the Pork Roast:
1 large clove garlic (cut into slivers)
1 5 to 7-pound pork shoulder roast (deboned, see Note below)​
Kosher salt
Black pepper (freshly ground)
1 3/4 cups chicken broth
1/2 cup apple juice

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Line a large baking pan with heavy-duty foil or have a large, heavy with a lid ready to go.
  • In a large pot, gently saute celery and sweet onion in butter until onion is translucent. Add and pressed garlic ; cook about 1 minute longer, stirring often. Add chicken broth and apple juice. Bring to a boil. Remove from heat. Stir in sage and thyme . Then add stuffing mix, tossing gently to absorb the liquid. Let rest to cool.
  • Place the deboned pork shoulder roast fat-side up on a cutting board. Sprinkle liberally with kosher salt and freshly ground black pepper . Turn roast over and again sprinkle liberally with salt and pepper. You may need to add a few cuts so that it lies open and flat.
  • Poke holes in the meat with a sharp knife and insert garlic slivers into the pork .
  • Pack cooled stuffing on top of the open pork roast. Roll one side to the other, lengthwise, to enclose the stuffing and secure with kitchen twine. Place roast seam-side down in the baking pan or Dutch oven. Pour chicken broth and apple juice around the bottom. Cover with a layer of heavy-duty foil and seal edges to the rim of the pan or cover with a tight-fitting lid.
  • Bake about 2 hours. Remove foil and bake an additional 30 minutes until skin is browned. Center should read at least 170 F with a meat thermometer. Let rest 15 minutes before slicing to serve.​ Note: Some butchers will debone the pork shoulder roast at no extra cost, while others will charge a higher price. It's easy to debone the roast yourself in about 15 minutes.

1/2 cup chopped peeled tart apple
1/4 cup soft bread crumbs

  • Cut a lengthwise slit down center of tenderloin to within 1/2 in. of bottom; open so meat lies flat. Cover with plastic wrap; flatten to 1/2-in. thickness.   • Preheat oven to 350 degrees Fahrenheit.
  • For stuffing, stir together the chopped apple, bread crumbs, celery, raisins, walnuts, green onion, and nutmeg.
  • Stir in 1 tablespoon of the apple juice or 1 tablespoon apple cider.
  • To butterfly the pork tenderloin, make a single lengthwise cut down the center of one narrow edge of the meat, cutting to within 1/2-inch of the other side. Spread the meat open.

1/4 pound slab bacon, cut into large dice
4 granny smith apples, peeled, cored and sliced
1 tablespoon sugar
Salt and freshly ground black pepper
2 tablespoons butter
4 medium yellow onions, peeled and sliced
1/2 pound white mushrooms, sliced
1/2 cup cider vinegar
3 tablespoons coarsely chopped fresh sage
1 (6 pound) center cut pork loin (9 chops), trimmed, with bones cracked

Steps:

  • Cook bacon in a large skillet over medium heat until crisp and golden brown, about 8 minutes. Toss apples with sugar in a bowl. Increase heat in skillet to medium-high heat, add apples, and saute until they are golden, about 10 minutes. Season to taste with salt and pepper, then transfer apples to a bowl. In the same skillet, melt butter over medium heat. Add onions and cook, stirring occasionally, until golden, about 20 minutes. Add mushrooms and cook until they begin to brown about 20 minutes. Increase heat to high, add 1/4 cup vinegar, and stir with a wooden spoon until vinegar evaporates, about 1 minute. Add sage and season with salt and pepper. Add mushroom-onion mixture and bacon to apples and allow to cool. Preheat oven to 350 degrees. 1/2 pound mild Italian sausage (or 2 links, casings removed)
1 yellow onion, chopped
2 stalks celery, chopped
1 tart apple, peeled and diced
Salt and freshly ground pepper
2 cloves garlic, minced
2 pieces white bread
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons butter
One 3-pound boneless pork loin
1 tablespoon vegetable oil
1/2 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.
  • In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.
  • Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.
  • Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.
  • Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.
  • Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.

Pork and sauerkraut is a classic combo and I wanted to combine them in a roast. The added apples give the stuffing a fruity flavor which my whole family enjoyed.

2 cups sauerkraut
2 tablespoons butter, divided
2 small apples - peeled, cored, and chopped
1 tablespoon white sugar
½ cup dry white wine
1 bay leaf
salt and freshly ground black pepper to taste
2 pounds boneless rolled pork loin roast
kitchen twine
1 tablespoon vegetable oil
2 onions, chopped
½ cup water

Steps:

  • Drain sauerkraut in a sieve, rinse under cold running water, and drain again.
  • Melt 1 tablespoon butter in a small pot over medium heat and cook apples until lightly softened, about 3 minutes. Add sugar and continue to cook until apple pieces start to brown on the edges and caramelize, 3 to 5 minutes. Add sauerkraut, wine, and bay leaf. Cover and simmer until flavors are well combined, about 10 minutes. Remove from heat and cool for 15 minutes. Discard bay leaf. Season with salt and pepper.
  • Unroll pork roast, pat dry with paper towels, and season with salt and pepper on both sides. Spoon the cooled apple-sauerkraut mixture in the middle of the roast. Roll the roast up and tie with kitchen twine.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium-high heat and saute pork roast on all sides until browned, 2 to 3 minutes per side. Move pork roast into a lidded casserole dish.
  • Melt remaining 1 tablespoon butter in the same skillet and cook onions over medium heat until soft and translucent, about 8 minutes. Stir in water. Pour water and onions around the pork roast; cover with lid.
  • Bake pork roast in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), basting with its juices a couple of times, 1 1/2 to 2 hours.
  • Remove pork roast from casserole dish, untie kitchen twine, and cover with 2 layers of aluminum foil. Allow to rest in a warm area for 10 minutes.
  • Pour juices from casserole dish into a small pot and puree with an immersion blender until smooth. Season with salt and pepper and serve with the roast.

4 tablespoons butter
2 medium apples, peeled, cored and thinly sliced
1 large onion, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper
1 boneless pork loin roast, 2 to 3 pounds
1 cup apple juice for basting, or more if needed.

Steps:

  • Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
  • Meanwhile, wriggle a thin, sharp knife into each end of the meat, making a kind of pilot hole. Then use the handle of a long wooden spoon to force a hole all the way through the loin. Wriggle the spoon to make the hole as wide as you can. Stuff the apple and onion mixture into the roast from each end, all the way to the center. Sprinkle the roast with salt and pepper.
  • Roast on a rack in a large roasting pan for 15 minutes, then lower the heat to 325. Continue to roast, basting with apple juice about every 15 minutes or so. If the liquid accumulates on the bottom of the pan, use it to baste; if not, add more juice.
  • Start checking the roast after 45 minutes of total cooking time (large roasts can take up to 1.5 hours). When it's done, an instant-read thermometer will register 145. Remove the roast and set it on a platter.
  • Put the roasting pan on the stove over one or two burners on medium-high heat. If there is a lot of liquid, reduce it to about .75 cup, scraping up any brown bits from the bottom of the pan; if the pan is dry, add 1 cup of apple juice and follow the same process. When the sauce has reduced some, stir in the remaining 2 tablespoons butter if you like. Spoon the sauce over the roast, slice and serve.

1 boneless pork loin (3 1/4 pounds), trimmed of fat
Coarse salt and freshly ground pepper
1 teaspoon ground coriander
2 tablespoons safflower oil
1/4 cup dry white wine, such as Sauvignon Blanc
2 tablespoons unsalted butter
2 apples, such as Gala, cored and cut into 1/2-inch pieces (3 cups)
1/2 cup Dijon mustard
1 tablespoon prepared horseradish
1 tablespoon packed fresh sage leaves, finely chopped, plus sprigs for serving
Basic Pie Dough
All-purpose flour, for dusting
1 large egg, lightly beaten
Crabapples, small apples, and fresh bay leaves, for serving

Steps:

  • Pat pork dry with paper towels; season all over with salt and pepper. Sprinkle with coriander; rub onto pork.
  • Heat a large skillet over medium-high. Swirl in oil, add pork, and cook until browned on all sides, 3 to 4 minutes a side. Transfer to a plate; let cool completely. Pour wine into skillet, bring to a simmer, and cook, scraping up browned bits from bottom, until reduced to about 1 tablespoon, 2 minutes. Let cool completely.
  • Melt butter in a large skillet over medium. Add cut apples and cook, tossing occasionally, until softened and liquid has evaporated, about 7 minutes. Let cool completely.
  • In a small bowl, combine mustard, horseradish, chopped sage, and wine sauce. Reserve 1/4 cup of mixture, then brush remainder over surface of pork. Make a 2-inch-deep slit lengthwise all the way across top of loin; stuff with cooked apples.
  • Roll out one disk of dough on a lightly floured surface to a rectangle about 1 inch wider all around than pork. Place on a parchment-lined baking sheet. Center pork on dough; brush edges of dough with water. Roll out remaining disk of dough to a rectangle large enough to drape over pork with enough dough remaining for a border. Drape over pork; trim top and bottom doughs to a 3/4-inch border. Press and crimp edges with the floured tines of a fork to seal.
  • Preheat oven to 400 degrees. From dough scraps, cut two 12-inch-long, 3/4-inch-wide pieces. Arrange crisscrossed on top dough layer. Refrigerate 30 minutes. Brush egg wash over entire surface, then cut a few small vents in top of dough.

2-1/2 cups white bread cubes
2/3 cup chopped apples
1/2 tsp. poultry seasoning
1 boneless pork loin roast (3 lb.), butterflied
1 Tbsp. flour
1 cup apple juice
2 Tbsp. chopped fresh parsley

Steps:

  • Heat oven to 325°F.
  • Cook vegetables in margarine in large skillet on medium-high heat 3 to 5 min. or until crisp-tender. Remove from heat. Stir in 2 Tbsp. mustard, then bread, apples and seasoning.
  • Open roast, cut-side up, on work surface. Spread with 2 Tbsp. of the remaining mustard; top with bread mixture. Re-roll roast; tie closed with kitchen string. Place on rack in roasting pan.
  • Bake 2 hours or until done (145°F). Transfer roast to carving board; let stand 10 min.
  • Meanwhile, spoon 1 Tbsp. meat drippings into small saucepan; whisk in flour. Cook on medium heat 1 min., stirring constantly. Add apple juice and remaining mustard; cook and stir 5 min. or until sauce thickens and starts to boil. Remove from heat; stir in parsley.

11/2 lb tart apples such as Granny Smith, peeled and cut into 1/4-inch-thick wedges
1/3 cup sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon chopped fresh sage or 1/4 teaspoon dried sage
1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon freshly grated nutmeg
Pinch of cinnamon
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
For roast:
1 (9- to 11-lb) crown roast of pork, rib ends frenched
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/3 lb sliced bacon
For pan sauce:
1 1/2 cups water
1/4 cup red-currant or apple jelly

Steps:

  • Make stuffing:
  • Preheat oven to 350°F.
  • Spread bread squares in 1 layer in a shallow baking pan and bake in middle of oven until dry and lightly toasted, about 15 minutes. Leave oven on (for roast) and cool bread.
  • Cook onion and celery in butter in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened, 4 to 5 minutes. Stir in apples, sugar, salt, pepper, sage, thyme, nutmeg, and cinnamon. Reduce heat to low, then cook, covered, stirring, until apples are tender, about 15 minutes. Stir in bread squares, parsley, and chives.
  • Make roast:
  • Set oven rack in lower third of oven. Sprinkle roast inside and out with salt and pepper and put in a large flameproof roasting pan. Mound stuffing in cavity. Wrap tips of rib bones with foil to prevent burning, then wrap meat below bones with overlapping bacon strips, securing them with wooden toothpicks.
  • Roast pork in middle of oven, covering stuffing loosely with foil after 30 minutes, until an instant-read thermometer registers 155°F when inserted 2 inches into center of meat (do not touch bones), 2 1/4 to 2 3/4 hours total.
  • Transfer roast to a carving board and let stand, loosely covered with foil, 15 to 20 minutes. (Temperature of meat will rise to 160°F; meat will be slightly pink.)
  • Make pan sauce:
  • Skim fat from pan drippings. Straddle pan across 2 burners and add water, then deglaze pan by boiling over high heat, stirring and scraping up brown bits. Pour through a fine sieve into a saucepan, discarding solids.
  • Add jelly and any juices accumulated on carving board, then simmer sauce, whisking occasionally and skimming any fat that rises, until jelly is melted, about 4 minutes. Season with salt and pepper.
  • Remove all foil from roast and carve into chops by cutting between ribs.
