500 g cranberries, fresh cranberries or frozen ones (defrosted)
2 bramley apples, peeled, cored and cut into chunks
150 g golden caster sugar
1 stick of cinnamon

Steps:

  • Place all the ingredients in a wide saucepan and add a splash of water.
  • Put the pan on the heat and bring to the boil. Simmer gently until the cranberries have burst and the apple has softened.
  • Boil down until the mixture thickens slightly, then take off the heat and leave to cool.
  • If giving as a gift, divide between air-tight sterilised jars (see the how to video below) and give out to all your friends. Once opened, store in the fridge.

3 pounds apples, peeled, cored, and cut into 1/2-inch-thick slices (try a combination of Gala, Golden Delicious, and McIntosh)
1 cup fresh or frozen cranberries
1 cinnamon stick
1/2 cup sugar
3/4 cup water
2 teaspoons freshly squeezed lemon juice

Steps:

  • In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
  • Remove from heat; discard cinnamon stick. Stir in lemon juice.

1 cinnamon stick, broken in half

2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

2 cups water
1 tart apple (such as Granny Smith, pippin or McIntosh)
3 cups fresh cranberries
1 1/4 cups sugar
1/2 teaspoon ground cinnamon

Steps:

  • Squeeze the juice from the orange and set the juice aside. Remove and discard the membrane from inside the orange rind and cut the rind into small dice.
  • In a small saucepan over high heat, combine the rind and the water and bring to a boil.
  • Cook for 10 minutes, then drain and set aside.
  • Peel, core and quarter the apple. Cut into 1/2-inch dice and place in a saucepan. Sort the cranberries, discarding any soft ones.
  • Add to the apples along with the orange juice, orange rind, sugar, cinnamon and cloves.
  • Bring to a boil over high heat, reduce the heat to low and cover the pan partially. Simmer gently, stirring occasionally, until the sauce thickens, the apple is tender and the cranberries have burst, 10 to 15 minutes.
  • Transfer the cranberry sauce to a heatproof bowl and let cool for 1 hour before serving. Or cover and refrigerate; bring to room temperature before serving. Transfer the cranberry sauce to a sauce boat and pass at the table.

2 lbs sweet apples (Red Delicious, Honey Crisp, 4 large)
1/4 cup sugar
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups fresh cranberries
1 1/2 teaspoons lemon juice

Steps:

  • Peel and core apples; cut into 1-inch chunks. Place in large pot with 4 cup water, sugar, maple syrup, cinnamon, salt and cranberries. Bring to boiling.
  • Reduce heat to medium-low; cover and cook 20 minutes or until apples are tender and sauce is thickened. Check halfway through cooking. If mixture is dry, add 2 tablespoons water.
  • Uncover pot and mash apples with fork until pulpy. Stir in lemon juice.
  • Refrigerate until ready to serve.

1 large loaf sourdough bread, cut into 3/4-inch cubes (about 10 cups)
12 ounces sweet Italian sausage, removed from casing
2 stalks celery, chopped (about 1 cup)
1 large sweet onion, such as Vidalia, chopped (about 2 cups)
2 Gala apples, cored, peeled, and chopped (about 2 1/2 cups)
2 sprigs sage, finely chopped (about 2 teaspoons)
2 cups low-sodium chicken or turkey broth, preferably homemade
1/2 cup dried cranberries
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13-inch baking dish. Divide bread cubes between 2 rimmed baking sheets, spread in a single layer, and toast until crisp and golden, about 20 minutes. Let cool to room temperature; transfer to a large heatproof bowl.
  • Meanwhile, cook sausage in a large skillet over medium heat, stirring occasionally and breaking into bite-size pieces, until just cooked through, about 5 minutes.
  • Transfer sausage to bowl with bread. Melt butter in skillet. Add celery and onion and saute, stirring occasionally, until softened, about 5 minutes. 1 cup dry white wine
1 1/2 cups sugar

Steps:

  • In a large saucepan combine the cranberries, the apples, chopped coarse (not peeled or cored), the wine, and the sugar, bring the mixture to a boil, stirring, and simmer it, covered, stirring occasionally, for 15 minutes. Simmer the mixture, uncovered, stirring occasionally, for 20 to 25 minutes more, or until it is very thick and is reduced to about 3 cups. Force the mixture through a food mill fitted with the fine disk into a bowl, spoon it into an oiled 3-to-4 cup decorative mold, and chill it, covered, overnight. Run a thin knife around the edge of the mold and dip the mold into warm water for 10 seconds. Invert the mold onto a serving plate and garnish the cranberry sauce with the mint sprigs.
