3 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt, optional
2 large eggs, separated, room temperature
3 tablespoons 2% milk
1 tablespoon lemon juice
3 tablespoons sugar
TOPPING:
1 large apple, peeled if desired, and thinly sliced
1 teaspoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. Mix flour, baking powder and, if desired, salt. In a small bowl, whisk together egg yolks, milk and lemon juice; stir into flour mixture. , In another bowl, beat egg whites on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until stiff peaks form. Fold into flour mixture., Pour into a 9-in. deep-dish pie plate coated with cooking spray. Arrange apple slices over top. Mix sugar and cinnamon; sprinkle over apple., Bake, uncovered, until a knife inserted in the center comes out clean, 18-20 minutes. Serve immediately.

2 egg whites
3 tablespoons white sugar
3 tablespoons all-purpose flour
¼ teaspoon baking powder
1 pinch salt
3 tablespoons milk
2 egg yolks, beaten
1 tablespoon lemon juice
1 teaspoon butter
1 large apple - peeled, cored and thinly sliced
¼ teaspoon ground cinnamon
1 tablespoon white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, whip egg whites with an electric mixer until foamy. Sprinkle in 3 tablespoons of sugar while continuing to whip until stiff peaks form. In a separate bowl, stir together the flour, baking powder, and salt. Mix in the milk, egg yolks, and lemon juice until well blended, then fold in the egg whites using a rubber spatula or wooden spoon.
  • Melt the butter in a large cast-iron (or other oven proof) skillet over medium heat. Spread the batter evenly in the pan. Layer the thinly sliced apple over the batter, and sprinkle with cinnamon and remaining sugar.
  • Place the skillet in the oven, and bake for 10 minutes, or until the apples are golden brown and glazed looking. Cut into wedges to serve.

This is a wonderful breakfast for the day after Thanksgiving or any day when you want to use up leftover cranberry sauce (try it with Cranberry Sauce with Apple Cider recipe#78078 or any whole berry cranberry sauce). *The original recipe recommended lingonberries but suggested cranberries as a good alternative. 6 eggs
1 cup milk
2 tablespoons flour
1/2 teaspoon salt
2 tablespoons butter
1/2 cup cranberry sauce (whole berry, I used Cranberry Sauce with Apple Cider Cranberry Sauce With Apple Cider)
1 apple, peeled, cored and diced
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons lemon juice
1/2 teaspoon ground cardamom
powdered sugar (optional)
whipped cream (optional)

Steps:

  • Preheat oven to 400-degrees F.
  • Whisk eggs, milk, flour and salt together in a large measuring cup or bowl.
  • Melt butter (2 tablespoons) in a 12-inch skillet (that is oven safe- I used a cast iron skillet) over medium heat.
  • Add egg mixture and cook for 2-5 minutes, lifting edges to allow uncooked part to run underneath.
  • Put omlet in oven and bake until softly set (5 minutes). DO NOT OVERCOOK OR OMLET WILL BREAK WHEN FOLDED.
  • While omlet is cooking prepare filling by combining all of the filling ingredients (cranberry sauce- cardamom) in a small saucepan over medium-low heat and cook for 3-5 minutes, stirring constantly.
  • Spoon 1/3 of the filling onto half of the omlet.
  • Slide omlet onto platter or serving dish, folding empty half over filled half.
  • Spoon additional filling around omlet (or serve on the side) and sprinkle with powder sugar.
  • Serve with whipped cream and additional filling if desired.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

2 apples, peeled, cored and sliced
1/3 cup dried cranberries
2 tablespoons fresh lemon juice
1 tablespoon sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Roll the pie crust out into a 12-inch circle. Place the crust on a large baking sheet. Top the crust with apple slices and cranberries. Drizzle lemon juice over top. Sprinkle sugar over top. Pull up the sides of the crust slightly and roll over, covering the filling by about 1 inch.
  • Bake 20 minutes, or until the crust is golden brown and the apples are tender.

1 Granny Smith apple, peeled, cored, and diced
1/2 cup light brown sugar, lightly packed
1 tablespoon grated orange zest (2 oranges)
1/4 cup freshly squeezed orange juice
1 1/8 teaspoons ground cinnamon, divided
2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar
1/4 pound (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
  • Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

1/2 cup brown sugar, packed
1 cup water
12 ounces cranberries (fresh or frozen)
1 -3 tablespoon horseradish
1 tablespoon Dijon mustard
8 ounces cream cheese, softened
assorted cracker

Steps:

  • In a large saucepan, bring sugars and water to a boil over medium heat.
  • Stir in cranberries and return to a boil.
  • Cook for 10 minutes or until thickened, stirring occasionally. Cool.
  • Stir in horseradish and mustard.
  • Transfer to a large bowl and refrigerate until chilled.
  • Just before serving, spread cream cheese over crackers and top with cranberry mixture.

Steps:

  • In a large skillet or frying pan, melt butter over medium heat. Add apples and saute until tender but not completely cooked.
  • Heat a lightly oiled omelet pan or medium sized skillet. Whisk together eggs, cream, salt, pepper and sugar. Pour egg mixture into omelet pan. When bottom of omelet has begun to set, place half of the apple mixture on top of the eggs.
  • When bottom of omelet is completely cooked, fold over omelet, cover and cook through. Serve warm with remaining apples on top or on the side.
