Tasty meal for a family on the go. This is one of my go-to meals when it's dinnertime and I haven't had the time to plan for our meal. Serve over pasta, rice, steamed veggies, or by itself.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly spray the bottom of a 3-quart casserole dish with cooking spray.
- Place chicken breasts in the prepared dish and top with mushrooms. Mix cream of mushroom soup, sour cream, and onion soup mix together in a bowl; pour over chicken and mushrooms. Cover dish with aluminum foil.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

FRENCH ONION CHICKEN
Saucy one pan French onion chicken with juicy pan-seared chicken smothered in caramelized onion gravy and three kinds of melty Italian cheese. This 30 minute meal will be a staple in your house!

Steps:
- Preheat oven to bake at 400 degrees OR broil on low. In a large oven-safe skillet (see note) over medium-high heat, melt butter. Add onions and 3 tablespoons beef broth and saute onions for 3-4 minutes until translucent. Continue to cook, stirring occasionally so the onions don't burn, for about 15 minutes longer until browned and very tender. Use tongs or a fork to transfer to a bowl and cover to keep warm.
- While onions are cooking, prepare the chicken by drizzling with oil, then seasoning with salt and pepper (to taste) and Italian herbs. Once onions have finished cooking and are removed from the pan, cook chicken for 4-5 minutes on each side (don't clean out the pan between the onions and chicken) until browned on both sides. (Chicken may not be fully cooked through yet, that is okay).
- Transfer chicken to a plate and cover to keep warm and return the onions to the pan. Sprinkle flour over the onions and stir for 1 minute over medium-high heat. Add beef broth and continue to cook, stirring throughout, until mixture comes to a boil. Season with salt and pepper to taste. Return chicken to pan and spoon some of the sauce over each piece of chicken.
- Top chicken with one slice of provolone each, then one slice of swiss, then 1/4 of the parmesan cheese. Transfer skillet to your preheated oven and cook for about 10 minutes until chicken is cooked through completely and cheeses are melted.
- Spoon some of the onions and gravy over the top of the chicken, garnish with thyme or parsley and cracked black pepper, and serve.

FRENCH-ONION CHICKEN
This is a tasty chicken dish that simple to fix. It can be done with chicken tenders making a grown up version of chicken fingers that kids enjoy too. Note: if using chicken tenders make sure to adjust your cooking time accordingly.

- In a shallow bowl stir together dressing and hot sauce.
- In another bowl combine onion and cornflakes.
- In a 3 quart rectangular baking dish with a rack arrange chicken pieces.
- Brush with salad dressing mixture.
- Sprinkle with onion mixture, pressing onto chicken.
- Bake uncovered at 425 degrees for 35-40 min until chicken is done.
- Covering loosely the last 10 minutes if necessary.

FRENCH ONION CHICKEN
A fantastic recipe given to me by my workmate. I was a bit wary of trying it out as it had sour cream and my hubby hates sour cream but I cooked it without telling him and he loved it. Its regular meal now and if we have no chicken I substitute with beef cubes or chicken sausages. Apparently the original recipe called for chicken Pieces.

Steps:
- Cube chicken fillets and place in plastic bag. Add flour and soup mix to the bag and shake until chicken is coated. Don't worry if there seems to be a lot of dry mix left in the bag.
- Place coated chicken and oil into frying pan leaving the left over dry mix in the bag to the side.
- Brown the chicken and remove from the pan.
- Dice the bacon and onion and place in the frying pan where the chicken was cooked and cook until onion is translucent.
- Add the chicken back into the frying pan with the bacon and onion.
- Take the left over dry mixture and add to the cup of water and mix. Pour this mixture over the ingredients in the frying pan.
- Simmer for around 20 minutes adding more water if needed.
- While this is simmering prepare the couscous as directed on the packet and heat the frozen vegetables (I use the microwave).
- After the 20 minutes, or when you are happy the chicken is cooked, add the sour cream mixing well. At this point I chuck in the prepared couscous and the vegetable but you can just add the vegetables and serve the chicken mixture over the couscous.

SUNNY'S EASY SMOTHERED FRENCH ONION CHICKEN THIGHS

- For the chicken: Add the flour, garlic powder, onion powder, paprika, a nice pinch of salt and a few grinds of pepper to a medium bowl. Stir to distribute. Add the chicken thighs and toss to coat. Let sit in the bowl.
- For the gravy: Add the butter and flour to a saucepan over medium-low heat. Stir together with a wooden spoon and cook, stirring, until a deep brown color but not burning, about 6 minutes. Add the onions, Dijon, thyme, paprika and garlic and stir to coat. Slowly add the stock and stir. Raise the heat to a simmer and cook until thickened like gravy. Season with salt and pepper. Keep warm.
- Add the oil to a large pan over medium-high heat. When it begins to swirl, shake the excess flour off the chicken and add to the pan. Sear on both sides, 6 to 8 minutes per side, then place in the gravy and simmer, covered, to complete cooking, 15 to 20 minutes. Serve over rice or mashed potatoes.
- Cover potatoes and garlic with water by 1 inch in a large pot. Bring to a boil, add salt and simmer until tender, about 15 minutes. Drain well.
- Put the potatoes and garlic back in the pot and cook over low heat to evaporate the rest of the water. Mash in the butter with a potato masher. Add the heavy cream in stages until the desired consistency is reached. Season with salt and pepper.
CHICKEN STROGANOFF

- In a large skillet, melt the butter over medium heat. Add the mushrooms and cook, stirring occasionally, until golden brown, 5 to 7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
- Season the chicken with salt and pepper. Return the skillet to the stove, add the olive oil and increase the heat to medium high. Add the chicken, working in batches if necessary, and cook until it begins to brown on each side, about 5 minutes. Add the onions and cook until tender, 3 to 4 minutes. Stir in the flour and cook for an additional 2 minutes. Stir in the broth, scraping up any browned bits with a wooden spoon. Stir in the Worcestershire sauce, soup mix and cooked mushrooms. Reduce the heat to low and simmer until the broth is thickened to a gravy, about 7 minutes. Stir in the sour cream.
- Serve over egg noodles with a dollop of sour cream and garnish with fresh chives.

- Season chicken breasts with salt and pepper.
- In a large cast iron skillet, melt butter. Add mushrooms, onion, and bell pepper and sauté until starting to soften.
- Add garlic and sauté for another minute until fragrant.
- Add in red pepper flakes, cayenne, Italian seasoning, and Worcestershire. Then, remove veggies and set aside.
- Add chicken to skillet and cook until brown on each side (about 3-5 mins per side).
- Add in a can of French onion soup and let simmer for 10 mins, or until soup starts to coat chicken.
- Add veggies back to the pan and stir.
- Top chicken breasts with shredded mozzarella
- Cook in the oven at 350°F for 8-10 mins or until the cheese is melted.

- Combine flour and dry soup mix in a plastic bag. Add 1/2 of the chicken and shake to coat. Reserve remaining flour mixture.
- Heat 1/2 of the canola oil in a large, deep frying pan over medium-high heat. Add 1/2 of the coated chicken and cook until brown all over and no longer pink in the center, 5 to 7 minutes. - In a bowl, add the chicken thighs, salt, pepper, garlic, dried parsley, and olive oil, and toss until evenly coated.
- Add the chicken to a skillet on medium-high heat. Sear until golden brown, about 4 minutes. Flip and cook the other side of the chicken, 2 minutes. Remove the chicken from the pan and set aside.
- Preheat oven to broil.
- Add the butter, sliced onions, salt, and pepper to the same pan, stirring occasionally until softened. Reduce heat to low and cook until they are deeply caramelized, about 1 hour.
- Add thyme and beef broth and bring the mixture to a simmer.
- Add the chicken on top of the onions, and sprinkle with Gruyère cheese.
