4 tbsp olive oil
700g stewing steak, cut into chunks
30g plain flour
1 large onion, thinly sliced
2 garlic cloves, finely chopped
1 green pepper, deseeded and thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp tomato purée
2 tbsp paprika
2 large tomatoes, diced
75ml dry white wine
300ml beef stock, homemade or shop-bought
2 tbsp flat-leaf parsley leaves
150ml soured cream

Steps:

  • Heat oven to 160C/140C fan/gas 3.
  • Heat 1 tbsp olive oil in a flameproof casserole dish or heavy-based saucepan. Sprinkle 700g stewing steak chunks with 30g plain flour and brown well in three batches, adding an extra 1 tbsp oil for each batch. Set the browned meat aside.
  • Add in the remaining 1 tbsp oil to the casserole dish, followed by 1 large thinly sliced onion, 2 finely chopped garlic cloves, 1 green pepper and 1 red pepper, both finely sliced. Fry until softened, around 5-10 mins.
  • Return the beef to the pan with 2 tbsp tomato purée and 2 tbsp paprika. Cook, stirring, for 2 mins.
  • Add in 2 large diced tomatoes, 75ml dry white wine and 300ml beef stock. Cover and bake in the oven for 1 hr 30 mins - 2 hrs. Alternatively, cover and cook it on the hob on a gentle heat for about an hour, removing the lid after 45 mins.
  • Sprinkle over 2 tbsp flat-leaf parsley leaves and season well with salt and freshly ground pepper. Stir in 150ml soured cream and serve.

2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15 ounce) cans tomato sauce

3 bay leaves
1 tablespoon seasoned salt, or to taste

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.

1 kg beef (flat cut brisket or bavette steaks)
1 white onion (sliced)
1 large red pepper (sliced)
1 large green pepper (sliced)
3 garlic cloves (crushed)
400 g chopped tomatoes
4 tbsp tomato paste
1½ beef stock cube
300 ml hot water
150 ml red wine
1½ tsp caraway seeds
1 tbsp paprika
2 tbsp smoked paprika
2 bay leaves
1½ tsp salt
1 tsp ground black pepper
2 tbsp oil
4 tbsp flour (corn flour)
1 tsp sugar
natural yogurt (to serve)

Steps:

  • Cut the beef into large chunks and place in a bowl. Pour over 1 tbsp of oil and season with ½ tsp of salt and pepper then mix to ensure all of the meat is coated. Place into a hot pan and cook until the outer edges of the meat are sealed (approximately 1- 2 minutes). Transfer to the slow cooker.
  • Now pour the caraway seeds into the same pan on the stove along with 1 tbsp of oil. Toast the seeds over a high heat stirring continuously for 1 minute to release their flavour. Then add the red wine and cook for 2 minutes to 'cook off' the alcohol. Transfer the red wine and caraway to the slow cooker along with the beef.
  • Add the sliced onion, peppers and garlic to the slow cooker and sprinkle over the paprika, smoked paprika, flour and remaining salt and pepper. Stir through well to ensure the beef and vegetables are entirely coated.
  • Add the chopped tomatoes, tomato paste, stock cubes dissolved in the hot water, sugar and bay leaves and stir through. Turn the cooker onto low and cook for 8 hours.
  • Serve with a swirl of natural yogurt and rice.

¼ cup (30g) all-purpose flour
1 tablespoon (14g) butter (salted or unsalted is fine)
2 large yellow or white onions (halved and thinly sliced)
1 teaspoon salt (divided, plus more to taste)
2 tablespoons sweet Hungarian paprika
½ teaspoon caraway seeds (crushed or chopped, optional*)
1 cup beef broth
1 14.5-ounce can crushed or diced tomatoes
1 tablespoon lemon juice (fresh or bottled is fine)
¼ teaspoon pepper
1 cup (240g) sour cream
Egg noodles, potatoes (boiled, mashed, or baked all work), or spaetzle

Steps:

  • In a large bowl, toss beef with flour until well-coated. Set aside.
  • Heat a large pot over medium heat. Add butter. Once butter is melted, add onions and ¼ teaspoon of the salt. Cook, stirring occasionally, until softened, about 10 minutes. If the onions begin to brown, turn the heat down.

1 lb elbow macaroni
6 slices cooked bacon
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 (14 1/2 ounce) can diced tomatoes
salt and pepper

Steps:

  • Cook pasta in a large saucepan as you are preparing remaining ingredients.
  • Fry bacon to a crispness in a large frying pan and remove to a paper towel leaving drippings in the pan.
  • They will be absorbed.
  • Break apart the ground beef into small chunks and brown in the bacon drippings adding the onion and the garlic.
  • Stir frequently as the meat browns and the onion becomes translucent.
  • Add the tomatoes and stir to mix thoroughly.
  • Allow to cook a few minutes for the meat to absorb the flavors.
  • Drain the cooked macaroni and add to the pan, again mixing well.
  • Cook on a low flame until almost all juices are absorbed. Crumble bacon over the Goulash before serving.
  • Leftovers taste better the next day, so don't be afraid you are making too much.
  • Goes well with a salad and french or italian bread.
