- Preheat oven to 350 degrees (F). Line a 9x13-inch pan with parchment paper, allowing paper to overhang on two of the ends. Spray with non-stick baking spray and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld electric mixer, beat together the butter and both sugars until light and fluffy, about 2-3 minutes. On low speed, add flour and mix until combined. The dough will be crumbly.
- Press dough evenly into the bottom of the prepared pan. Bake for 16 minutes. Remove from oven and set on a cooling rack to cool as you prepare the filling. Keep oven temperature at 350.
- In a large bowl, combine apples and lemon juice and toss to coat. Add in the cinnamon, flour, sugar, and salt. Toss until apples are evenly coated. Arrange apples in an even layer on top of the partially baked crust.
- Cut the butter into small cubes.
- In a large bowl, combine the oats, both sugars, cinnamon, and flour. Add in the cubed butter and, using two forks or a pastry blender, cut the butter into the dry ingredients until mixture resembles a coarse meal.
- Sprinkle the topping evenly over the apples.
- Place the pan in the oven and bake for 45 to 50 minutes, or until the top is golden brown and the apples are bubbling.
- Remove from the oven and place the pan on a cooling rack. Cool for at least 1 hour before serving.

- Heat oven to 400ºF.
- Beat cream cheese and butter in large bowl with mixer until blended. Gradually add 3 cups flour, mixing on low speed after each addition just until blended. Shape into 2 balls. Place 1 ball on large lightly floured sheet of waxed paper; flatten slightly. Cover with second floured sheet of waxed paper. Roll out dough to 15-1/2x10-1/2-inch rectangle. Discard top sheet of waxed paper.
- Spray 15x10x1-inch pan with cooking spray; invert over rolled-out dough. Flip dough and pan together. (Pan will be on bottom.) Remove second waxed paper sheet; gently press dough onto bottom and up side of pan. Toss apples with combined granulated sugar, cinnamon and remaining flour; spread onto bottom of crust.
- Repeat rolling out of remaining dough ball to make second rectangle. Remove top sheet of waxed paper; carefully flip dough over apples. Discard waxed paper. Tuck edges of dough down sides of pan to enclose apples. Cut several slits in top crust to vent steam.
- Bake 35 to 40 min. or until golden brown. Cool 15 min.
- Mix powdered sugar and water; drizzle over dessert. Cool 30 min. before cutting into bars.

- For the crust: Preheat oven to 350 F. Line an 8-by-8-inch square pan with enough parchment paper to have 1-inch wings on 2 sides.

- Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
- In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
- Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.

- In a large bowl, combine the flour, quick cooking oats, brown sugar, and baking soda. Stir in the melted butter. Mix until crumbly. This is the crust. Press 1/2 of this mixture into the prepared baking pan. Bake for 8 minutes in preheated oven.

Steps:
- Combine first 3 ingredients in a bowl, beating well at medium speed of an electric mixer.
- Reserve 2 cups flour mixture, and set aside.
- Add baking soda and next 3 ingredients to remaining flour mixture; beat well.
- Add vanilla and next 2 ingredients; beat well.
- Stir in apple.
- Press reserved 2 cups flour mixture into the bottom of a 9 x 13 x 2-inch baking pan coated with cooking spray.
- Sprinkle walnuts over flour mixture.
- Spread apple mixture over prepared crust.
- Bake at 350 degrees for 40 minutes or until browned.
- Cool completely in pan on a wire rack.
- Yield: 24 servings (serving size: 1[2-1/4 x 2-1/8-inch] bar).

If you're looking for the perfect fall dessert, these apple pie bars are made with a shortbread dough that's used to form the crust and streusel topping.

- For the crust and topping: Preheat the oven to 350˚. Spray a 9 x 13 inch baking pan with cooking spray. Line the pan with parchment paper. (This will make it easier to lift the pie bars out of the pan after baking.)
- Beat the butter, sugars, and vanilla in a large bowl with an electric mixer for 4-5 minutes, until combined and airy. Scrape down the sides and bottom of the bowl. Add the flour and salt to the bowl and mix at low speed until combined.
- With lightly moistened hands, press about 3/4 of the crust mixture along the bottom and slightly up the sides of your prepared pan. Refrigerate for 15 minutes. Place the remaining 1/4 of the crust mixture (about 1 1/2 cups) in the fridge until needed.
- Transfer the pan to the preheated oven and bake until the crust is golden brown, 20 to 25 minutes. Place on a wire rack to cool.
- For the filling: Toss the apple slices and vinegar together in a large bowl. Add the brown sugar, cornstarch, apple pie spice, and salt and toss well to coat. Spread the apples evenly over the crust, leaving a small border around the edges.
- Tear the reserved crust mixture into small pieces. Using your hands, combine the pecans with the dough and scatter the mixture evenly over top of the apples. Bake for 1 hour, rotating pan halfway through, until the apples are fork-tender and the topping is golden brown. Cool completely in the pan, about 1 to 2 hours
- For the glaze: Combine the maple syrup, butter, cream cheese, powdered sugar, and milk or cream in a medium bowl. Whisk until combined and smooth. Once the bars are cool, lift from the pan using the parchment paper overhang and place on a cutting board. Drizzle evenly with the glaze. Cut into squares and serve.

SALTED CARAMEL APPLE PIE BARS

- Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
- Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
- Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
- Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
- Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
- Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

- Preheat your oven to 300 degrees F and line an 8x8 baking pan with parchment paper. Be sure to bring the parchment up the sides as it makes it easier to lift out later.
- Shortbread Base:
- Place butter into your mixer and turn on high for 5 minutes or until the butter turns white rather than yellow, that's how you'll know it's creamed. Next mix in the sugar, vanilla, and salt. Once combined, add in the flour and stir well. Press the mixture into the parchment lined pan and bake in the pre-heated oven for 15 minutes.
- Apple Filling:
- In a bowl, combine the apples, flour, sugar, cinnamon and nutmeg until the apples are well coated.
- Topping:
- Mix flour, ¾ up brown sugar. Cut in the butter and knead together.
- Remove the crust from the oven and turn the heat up to 350 degrees F. Sprinkle one half of the Topping over the short bread, then layer the apples on top. You will have multiple layers so try to keep it level. Once this is finished, sprinkle the remainder of the Topping evenly on top and place in the oven to bake for 30 minutes.
- Remove from the oven and allow to cool fully before placing in the fridge to set for at least 2 hours. Once it's set, remove from the baking dish by lifting out the parchment paper and cut into 16 squares.

- Preheat oven to 375*F. Grease a 9x9-inch baking pan with cooking spray.
- In a large bowl, whisk together ingredients flour through baking powder, plus 1/2 cup sugar.
- In small bowl, whisk melted butter, egg, zest and extract until smooth. Pour over flour mixture; work with hands to make soft dough.
- Pat 2/3 of dough in pan, prick all over with fork, and bake until browned, 15-20 minutes.
- In large bowl, toss fruit with spices and 1/2 c sugar. Scatter over bottom crust, crumble remaining dough on top.
- Sprinkle with remaining 1 tablespoon sugar. Bake until top is golden brown, 30 minutes.
- Cool completely; cut into 16 bars. Store leftovers in an airtight container.

- Mix flour, salt and baking soda. Add brown sugar and oatmeal, mix well. Cut in 1 cup butter.
- Spread half of the crumb mixture in a buttered 9 x 13 pan.
- Put apples on top of bottom layer. Cover with remaining crumb mixture and dot with 4 tablespoons butter.
- Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes. It is great served with ice cream!

- Preheat oven to 350*F.
- In a food processor or bowl, mix flour, 1/4 cup sugar, baking powder and salt.
- Cut 3/4 cup butter into small pieces and add to flour mixture (whirl in food processor or cut in with a pasty cutter) until textured as fine crumbs.
- Beat milk and eggs to blend and pour into flour mixture. Whirl or stir until moistened. Knead on floured surface until dough holds together.
- With floured hands, press dough into bottom of 9"X13" baking dish. Press edges up sides to form a slight ridge.
- Arrange apple slices, slightly overlapped, in 3 rows down the length of the pan.
- In processor or bowl, whirl or cut together 1 cup sugar, 2 Tbsp butter, and cinnamon until it has the texture of fine crumbs. Sprinkle over apples.
- Bake in the middle of the oven for 40 minutes or until the cake is browned. Cut into squares. Serve warm or cool.
