GLUTEN FREE APPLE CAKE
Delicious moist gluten free cake. It's great with cream cheese icing, powdered sugar, or just plain.Plus it stays moist and tasty for days!!I found the cake to be a little bit crumbly, but it was so delicious it didn't matter.I got this recipe from one of Bette Hagman's recipe books.

Steps:
- Preheat oven to 350°F; grease either 9 inch round springform pan, or 8 inch square cake pan, and dust with rice flour.
- In a medium bowl, whisk together the flour mix, xanthan gum, baking soda, baking powder, and cinnamon; set aside.
- In the bowl of your mixer, cream the butter for about 1 minute or until softened.
- Add both sugars,and beat for about 2 minutes.
- Add the eggs, one at a time, and beat until well incorporated.
- Blend in the milk.
- Then turn mixer to low and add the dry ingredients half at a time, beating after each addition, until they are well absorbed.
- Remove the bowl from the stand and gently fold in the shredded apples.
- Spoon the batter into the prepared pan and bake for 40-45 minutes, or until toothpick inserted tests clean and the cake pulls away from the edge of the pan.
- If serving from the pan, cool at least 10 minutes before removing.
- Dust lightly with icing sugar, if desired.

- Heat oven to 350°F. Grease bottom of 9-inch square pan with shortening or cooking spray.
- Make cake batter as directed on box, beating all ingredients except apples in large bowl with electric mixer on medium speed 2 minutes. Stir in apples. Spread in pan.
- Bake 40 to 45 minutes or until toothpick inserted in the center comes out clean. Cut into 16 squares.

- Preheat oven to 350ºF. Grease bottom and sides of a 9 x 2 inch springform pan or 9 x 1 1/2 inch round pan with shortening.
- In a medium bowl, add sugar, butter and egg. With an electric mixer on low speed, beat mixture about 30 seconds or until smooth. Blend in Bisquick and spread over bottom and up one inch of the side of pan.
- In a small bowl, whip together yogurt and egg until smooth. Stir in apple and spoon over batter in pan. Mix together the 1/4 cup of sugar and the 1/4 teaspoon of cinnamon; sprinkle over apple mixture.
- Bake approximately 45 to 50 minutes or until center is set and crust is deep golden brown. Cool 10 minutes. Remove sides from pan if using springform and serve warm.

- Preheat oven to 375.
- Lightly grease and flour a cake pan: 7"x11" (you can substitute an 8" or 9" square cake pan if needed).
- Pare and core the apples and slice them thinly (about 1/4" to 1/2" thick). Mix the cinnamon and sugar and set aside.
- For the cake batter:.
- Cream the 3/4 cup of sugar, the shortening, and egg together until fluffy. Gradually add the milk.
- Sift the flour, baking powder, and baking soda together and stir into the first mixture.
- Spread the batter in the prepared cake pan.
- Arrange the apples on top of the batter in rows, overlapping slightly. Sprinkle the cinnamon sugar over the apples.
- Bake @ 375 for 35 to 40 minutes.
