store bought ready rolled shortcrust pastry - we used Carême ready rolled pastry
1 cup (225 g) (8 ounces) caster sugar
230 g (8 ounces) unsalted butter, room temperature
140 g ground almonds (almond flour) 1 1/3 cup
1 large granny smith apple, cored and cut into thin slices using a vegetable peeler
2 whole eggs, lightly beaten
2 large egg yolks
4 tablespoons plain (all purpose) flour
2 teaspoons caster sugar
2 extra tablespoons ground almonds (almond flour)

Steps:

  • preheat oven to 180 c (355 f) bake not fan forced
  • line a 24 cm (9 1/2 inch) flan tart tin with pastry
  • with a fork prick the base of the pastry about 12 times
  • refrigerate for an 1 hour - chilling the pastry after handling, helps pastry to relax and reduces shrinkage during baking
  • trim excess pastry from pie shell by running a sharp knife around the top edge of tart tin
  • cream butter and sugar till light and fluffy
  • scrape sides of bowl and add gradually eggs and yolks and mix to combine
  • add the almond meal (almond flour) and mix to combine
  • add flour and mix to combine
  • beat extra egg and using a pastry brush paint the pastry shell - this helps to seal moisture
  • sprinkle the 2 tablespoons of extra ground almonds (almond flour) evenly on the base of the pastry shell - see notes
  • spread frangipane evenly into the prepared tart crust
  • slice apple into thin slices using a vegetable peeler
  • arrange the apple slices starting with the outside edge and work your way to the centre - see notes
  • sprinkle extra sugar evenly over apple slices
  • bake until filling is set (about 45 minutes) - start checking around the 40 minute mark
  • cool to room temperature

1/3 cup all purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
5 tablespoons plus 8 teaspoons sugar
1/4 cup plus 1 teaspoon (packed) golden brown sugar
2 large eggs
1 17.3-ounce package frozen puff pastry (2 sheets), thawed
3 small bananas, cut on diagonal into 3x1/3-inch ovals
1/4 cup apricot jam, heated
Powdered sugar

Steps:

  • Blend first 4 ingredients in processor until nuts are finely ground. Using electric mixer, beat butter, 5 tablespoons sugar, and brown sugar in bowl until blended. Beat in eggs, then ground walnut mixture. (Can be made 1 day ahead. Cover and chill.)
  • Roll out each pastry sheet on lightly floured surface to 10-inch square. Using 5-inch-diameter plate as guide, cut out 4 rounds from each square. Using tip of small knife, score 4-inch-diameter circle in center of each 5-inch round (do not cut completely through pastry). Pierce 4-inch centers thoroughly with fork. Place pastry rounds on large baking sheet. Chill until very cold, at least 1 hour and up to 1 day.
  • Preheat oven to 375°F. Spread 2 1/2 tablespoons frangipane over 4-inch center of each pastry round (reserve remaining frangipane for another use). Arrange banana ovals decoratively on frangipane. Sprinkle bananas on each tart with 1 teaspoon sugar. Bake until pastry is deep golden and bananas begin to brown, about 25 minutes.
  • Brush bananas with warm apricot jam. Sift powdered sugar over tartlets. Serve warm or at room temperature.

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.

1 ¼ cups white sugar
¼ teaspoon salt
1.063 cups unsalted butter

Steps:

2 tablespoons granulated sugar
3/4 teaspoon ground cinnamon
1/3 cup apple jelly
6 tablespoons ground walnuts

Steps:

  • To make the dough, put the flour, sugar and salt in a food processor and pulse to combine. Add the butter and pulse until the mixture resembles coarse meal. Add the egg and pulse until the dough begins to pull away from the sides of the bowl. (Add water a teaspoon at a time if the dough seems too dry.) Wrap the dough in plastic wrap and refrigerate for 1 hour.
  • On a lightly floured surface, roll the dough into a circle about 12 inches in diameter and ease it into a 10-inch tart pan. Trim the edges. Refrigerate for at least 30 minutes.
  • Preheat the oven to 325 degrees. Spread the chilled crust with the frangipani. Peel, halve, core and thinly slice the apples. Fan the apples over the frangipani. Combine the sugar and the cinnamon in a small cup, mix well and sprinkle over the apples. Bake until the crust is browned and the apples are soft, about 40 to 50 minutes. Remove from the oven and cool.
  • Remove the tart from the pan. Warm the apple jelly in a small saucepan over low heat until it is just melted. Brush the hot jelly over the surface of the tart. Brush the crust with jelly and dust the crust with ground walnuts. Dust the crust again with powdered sugar. Slice and serve.

1 cup shelled hazelnuts
1/4 cup plus 2 tablespoons sugar, divided
1 large egg
3 tablespoons unsalted butter, divided
Dash vanilla
4 large russet apples (about 2 pounds)
1 cup apricot preserves
1 tablespoon calvados or water
Plain cream, sour cream, creme fraiche, or ice cream, to serve

Steps:

  • Preheat the oven to 375 degrees F.;
  • For the dough:
  • Mix the flour, butter, sugar, and salt quickly with your fingertips until the butter is in pieces about the size of dried beans. Quickly stir the water into the mixture and then gather up the dough onto a sheet of plastic wrap and press it into a flat dish shape. Refrigerate dough for 1 hour.
  • Line a cookie sheet or jelly roll pan with parchment or a silicon pad. Roll the dough out onto a lightly floured surface into a rectangle about 15-inches long by 10-inches wide, with rough edges. Roll the dough up onto your rolling pin and then unroll it directly onto the lined pan.
  • Roast the hazelnuts on a cookie sheet for 7 or 8 minutes. Transfer the nuts to a food processor, add the 1/4 cup sugar, egg, 1 tablespoon butter, and vanilla, and process until a creamy paste forms. Spread the frangipane on the dough, stopping about 1 1/2-inches from the outer edge on all sides.
  • Peel the apples, remove the cores, and cut them into 1/2-inch thick slices. Arrange them attractively in a slightly overlapping pattern, like the tiles of a roof, on the pastry dough so that the apples cover the frangipane. Fold the edge of the dough back over the apples to make a 1 to 1 1/2-inch border of dough. Increase the oven temperature to 400 degrees F. Sprinkle 2 tablespoons sugar over the apples, letting a little of the sugar fall onto the border to help crystallize the dough. Break the remaining 2 tablespoons butter into pieces and scatter them over the tart. Bake for 1 hour. The dough should be nicely crystallized all over.
  • Remove the finished tart from the oven and cool on a rack until lukewarm. Dilute the apricot preserves with the calvados or water and glaze the surface of the tart, spreading it carefully on the apples with the underside of a spoon. Serve at room temperature cut into little wedges, with plain cream, sour cream, creme fraiche, or ice cream, if desired.

3 granny smith apples, cored and sliced
1 lemon, juice of
2 cups water
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon ground cloves
2 tablespoons honey
1/2 cup apple juice
1/4 cup raisins
2 1/2 cups walnuts
1 1/2 cups dates, pitted

Steps:

  • First make the date/nut crust -- best to do in 2 batches in your blender or food processor.
  • Add 1 1/4 cups walnuts with 1 1/4 cups dates in blender or processor and pulse for 40 secons until coarse. Remove and add the remainder of nuts and dates and repeat process.
  • Press in 9-inch tart pan. Put aside.
  • Tart Directions:.
  • Squeeze the juice of 1 lemon and add to the 2 Celsius water.
  • Slice cored apples into fourths. Slice crosswide into 1/4 " slices.
  • Put in lemon water and drain in a colander when all apples are sliced.
  • Place apples in a large skillet and add the apple juice, honey, raisons, cinnamon, allspice, and cloves. Cook about 10 minutes over medium heat, stirring frequently.
  • Remove apples with a slotted spoon to a bowl and cool completely.
  • Reduce liquid to about half. Remove from heat and cool.
  • Spread apples over crust. Brush syrup over the apples. Chill at least 2 hours.
  • Enjoy!

4 ounces almond paste,* crumbled
1 large egg

Steps:

  • Make crust:
  • Mix 1 cup flour, 1 tablespoon sugar and 1/4 teaspoon salt in processor. Add butter; cut in using on/off turns until coarse crumbs form. Add 3 tablespoons water. Process until small moist clumps form, adding more water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap dough in plastic. Chill until cold, about 1 hour.
  • Roll out dough between 2 sheets of plastic wrap to 11-inch round. Remove top sheet of plastic. Spread filling evenly over bottom of crust. Toss apples with sugar in large bowl. Arrange apples in concentric circles atop filling. Brush apples with melted butter.
  • Place tart on baking sheet. Bake until apples are tender and light golden, about 40 minutes. Transfer to rack; cool 15 minutes. Brush apples with honey. Serve warm or at room temperature.

  • Prepare the sweet shortcrust pastry up until baking. This is the tart pan I use it is 9.5 inch X 1 inch. Cover with foil and fill with pie weights to blind bake it halfway. Bake at 375F/191C for 15 minutes.
  • While the crust is baking in a large bowl with a handheld mixer or a bowl of a stand mixer add the softened butter and granulated sugar. Beat on high until very light and fluffy, 3 to 5 minutes.
  • Add the eggs one at a time, mixing well in between add the vanilla extract and almond extract. Gently fold in the almond flour and all-purpose flour, mixing until just combined.
  • When the shortbread crust has baked for 15 minutes take it out of the oven and gently remove foil and pie weights. Add the frangipane filling and use an offset spatula to gently spread into an even layer. Place the thinly sliced apples on top, I do one row three rows of apples, with the middle row facing the opposite way of the two outside rows. Sprinkle turbinado sugar on top
