Yield 3 "8 inch cakes"

Number Of Ingredients 7

Ingredients

4 cups flour
3 cups sugar
2 teaspoons baking powder
1 cup butter or 1 cup margarine
2 eggs
1 cup milk
1 teaspoon vanilla

Steps:

Mix flour, sugar, baking powder and butter until fine crumbs.
Take out 1 cup of crumbs for top of cakes, and set aside.
Then add to remaining crumbs, 2 eggs, milk and vanilla.
Mix until smooth.
Pour into 3 (8-inch) greased cake pans.
Sprinkle crumbs over batter.
Bake at 350ºF.
for 40 minutes or until done.

In a large mixing bowl, place the flour, salt, and shortening or butter/shortening. Using fingers or a pastry blender, work into fine crumbs. Add the brown sugar, baking soda, and cream of tartar and blend well again; crumbs will "clump" if you squeeze some together in the palm of your hand.
Make a well in the middle and add the beaten egg, the soured milk, and the vanilla, if using. Stir with a wooden spoon until blended but not smooth, folding in the dry mix.
