1/2 cup dry white wine
1/4 cup extra-virgin olive oil
8 garlic cloves, peeled
4 tablespoons fresh oregano leaves, divided
3 tablespoons ancho chile powder*
2 tablespoons fresh lemon juice
2 green onions, divided
1 tablespoon (packed) dark brown sugar
2 1/2 teaspoons coarse kosher salt
2 1/2 teaspoons freshly ground black pepper
1 4 1/2-pound boneless leg of lamb, opened flat like a book, trimmed of all fat and sinew (3 1/2 pounds after trimming)

Steps:

  • Combine wine, oil, garlic, 3 tablespoons oregano, ancho chile powder, lemon juice, 1 green onion, sugar, salt, and pepper in blender. Blend mixture until smooth. Transfer marinade to 13 x 9 x 2-inch glass baking dish. Add lamb and turn to coat evenly. Cover dish tightly with plastic wrap and refrigerate overnight.
  • Prepare barbecue (medium heat). Grill lamb with some of marinade still clinging to surface until lamb is cooked to desired doneness, 15 to 16 minutes per side for medium-rare (130°F). Transfer lamb to carving board. Let lamb rest 15 minutes.
  • Meanwhile, finely chop remaining green onion and 1 tablespoon oregano leaves; combine in small bowl.
  • Thinly slice lamb across grain. Arrange lamb slices on platter. Pour over any accumulated juices. Sprinkle with onion-oregano mixture and serve.

2 Limes, zested and juiced
2 Oranges, zested and juiced
2 Tablespoons Olive Oil
1 Small Onion, peeled and cut into chunks
3 Garlic Cloves, smashed and peeled
1 Teaspoon Salt
1 Teaspoon Ancho Chili Powder
½ Teaspoon Black Pepper
1 (3-4 lb.) Whole Chicken, cut up into 8-10 pieces
Fresh Cilantro & Sliced of Lime, for garnish

Steps:

  • Combine the lime zest, lime juice, orange zest, orange juice, olive oil, onion, garlic, salt, chili powder, and black pepper in a large zip top bag. Add in the chicken pieces, seal the bag, and move the bag around to coat the chicken in the marinade. Place the bag in a bowl (just in case of leaks!) and refrigerate for at least 3 hours, or up to 24 hours. Preheat an outdoor grill to about 400º. Remove the chicken from the marinade and pat it dry. Grill the chicken pieces for about 10 minutes per side (keeping the heat roughly at 350º) or until a thermometer inserted in the thickest part of the thigh reads 165º. Let the chicken rest a few minutes before serving. Squeeze with fresh lime juice and top with cilantro leaves.

1 large mango, peeled and diced
1 tablespoon lime juice
1 tablespoon honey
2 teaspoons ancho chile powder
½ teaspoon salt
1 tablespoon rice wine vinegar

4 (4 ounce) bone-in chicken thighs with skin
salt and ground black pepper to taste

Steps:

  • Combine mango, lime juice, honey, ancho chile powder, and salt in the bowl of a small food processor; pulse until smooth. Remove 1/4 cup of the sauce to a small bowl and whisk in rice wine vinegar and olive oil to make a marinade. Place remaining sauce in the refrigerator.
  • Place chicken thighs in a resealable plastic bag and drizzle with mango-ancho marinade. Seal the bag and marinate in the refrigerator, 2 hours to overnight.
  • Twenty minutes before grilling, remove chicken from the marinade, letting the excess drip off. Season chicken on both sides with salt and pepper. Discard the remaining marinade.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place chicken on the hot grill, skin-side down, and grill for 3 to 4 minutes. Flip chicken over and grill on the other side for 3 to 4 minutes. Continue flipping every 3 to 4 minutes until an instant-read thermometer inserted near the bone read 165 degrees F (74 degrees C), 22 to 25 minutes total. Turn grill to low heat and brush both sides of the chicken with reserved mango-ancho sauce, grilling an additional 1 to 2 minutes.

A scant 1/2 teaspoon black pepper, preferably freshly ground
A pinch cumin seeds, preferably freshly ground
A pinch cloves, preferably freshly ground
1 cup fish (or chicken) broth, plus a little more if needed
Salt, about 3/4 teaspoon, plus a little more if needed
About 3 tablespoons olive oil
2 tablespoons cider vinegar
1 tablespoon sugar
Two 1- to 1 1/4-pound whole fish (such as snapper, bass or pompano), gutted and scaled
1 small white onion, sliced 3/8-inch thick and separated into rings
2 tablespoons chopped cilantro, plus a few sprigs for garnish
3 radishes, thinly sliced

Steps:

  • Making 3/4 cup Essential Sweet-and-Spicy Ancho Seasoning Paste: Roast the unpeeled garlic directly on an ungreased griddle or heavy skillet over medium heat, turning occasionally, until soft (they will blacken in spots), about 15 minutes; cool and peel. While the garlic is roasting, toast the chiles on another side of the griddle or skillet: 1 or 2 at a time, open them flat and press down firmly on the hot surface with a spatula; in a few seconds, when they crackle, even send up a wisp of smoke, flip them and press down to toast the other side. In a small bowl, cover the chiles with hot water and let rehydrate 30 minutes, stirring frequently to ensure even soaking. Drain and discard the water.
  • Combine the oregano, black pepper, cumin and cloves in a food processor or blender, along with the chiles, garlic and 1/2-cup of the broth. Blend to a smooth puree, scraping and stirring every few seconds. (If the mixture won't go through the blender blades, add a little more liquid.) Press through a medium-mesh strainer into a bowl. Taste and season with salt, usually about a generous 3/4 teaspoon (it should taste a little salty).
  • Marinating the fish: Heat 1 tablespoon of the oil in a small (1- to 1 1/2-quart) saucepan over medium-high. When hot enough to make a drop of the puree really sizzle, add it all at once, and cook, stirring constantly, until very thick, about 5 minutes. Stir in the vinegar and sugar and cool to tepid. With sharp scissors, trim off all fins and cut out gills from both fish, then make 3 diagonal slashes on each side of the fish, penetrating to the bone. Place the fish in an oiled 13 x 9-inch baking dish, then smear all but 2 tablespoons of the chile paste (reserve the remainder) over both sides of each fish. Cover and refrigerate an hour or two (but not more than 6).
  • Baking the fish: Turn on the oven to 400 degrees. With a brush, daub 1 tablespoon of the remaining oil over the fish. Bake uncovered until the flesh comes away from the bone near the top of the head, 12 to 14 minutes.
  • Finishing and serving the dish: While the fish is baking, heat the remaining 1 tablespoon oil in a medium-size (8- to 9-inch) skillet over medium-high. Add the onion rings and stir-fry until browned but still crunchy, about 5 minutes. Add the reserved 2 tablespoons chile mixture and the remaining 1/2 cup of the broth to the onions. Boil quickly until reduced to a light saucy consistency. Taste and season with salt if necessary; keep warm.
  • Use 2 metal spatulas to transfer the fish to a large, warm, serving platter. Add any baking dish juices to the sauce, return to a boil, then spoon over the fish. Sprinkle on the chopped cilantro and radishes. Garnish with sprigs of cilantro, and carry confidently to the table.

1/2 lime, zest of
2 tablespoons oil
2 garlic cloves
2 tablespoons soy sauce

Steps:

  • Cut tofu into slices 2"long by 1/2" wide.
  • Combine remaining ingredients in a small pot and bring to to a boil.
  • Simmer for 5 min, remove from heat and pour over tofu. Marinade in glass bowl for several hours or preferably overnight.
  • Pour off marinade and bake tofu slices for 15 minutes in 350 degree oven, basting with remaining marinade each five minutes.
  • Serve over rice, or mix with noodles and remaining marinade.

2 garlic cloves, coarsely chopped
1 cup extra virgin olive oil
1/2 cup cilantro leaves, rinsed and patted dry
1/2 cup ancho chile paste
1/2 cup unsweetened cocoa powder
Juice of 2 limes
Salt and freshly ground black pepper
One 2-pound flank steak
Lime wedges for serving

Steps:

  • With a mortar and pestle, or the back of a chef's knife, pound or mash the garlic to a paste.
  • Pour the olive oil into a blender, add the cilantro, and blend on high speed to purée. Add the garlic, ancho paste, cocoa powder, and lime juice and blend to combine. The marinade will be thick. Season to taste with salt and pepper.
  • Trim any fat from the flank steak and pat dry with paper towels. Place in a baking dish and season lightly on both sides with salt and pepper. Cover one side of the meat with half of the marinade. Flip over and cover the other side with the remaining marinade. Cover with plastic wrap and refrigerate for 24 hours.
  • Thirty minutes before grilling, remove the steak from the refrigerator. Wipe off the excess marinade.
  • Prepare a fire in a charcoal grill or preheat a gas grill to medium-high.
  • Sear the meat on both sides, turning once, over medium-high heat. Then move the meat to indirect heat to avoid burning the marinade, and grill, turning once until rare to medium-rare. Transfer to a platter and let rest for 15 minutes.
  • Thinly slice the meat against the grain. Serve with lime wedges.

1/2 cup light olive oil
1/2 cup lime juice

  • Cut the chickens into legs, thighs, breasts, and wings and place in a large pan. Whisk together the remaining ingredients in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
  • Preheat the grill. Place the chicken pieces on the grill at a 45 degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking.
