I have tried a few different recipes for sweet and sour sauce from this site and from other cookbooks and none of them ever seemed to be quite right, so I experimented a few times and this is the one I liked the best. Now it's the only sauce I use for my sweet and sour pork or chicken.

2 cups pineapple juice, divided
3 tablespoons cornstarch
1 cup white sugar
¾ cup ketchup, or more to taste
⅔ cup apple cider vinegar
2 tablespoons soy sauce, or more to taste
2 tablespoons crushed pineapple, or more to taste
1 teaspoon garlic powder

Steps:

  • Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
  • Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. Cook, stirring frequently, until sauce comes to a gentle boil. Reduce heat and continue to simmer until sauce is clear and reaches desired consistency, 15 to 25 minutes.

This fresh pineapple salsa recipe will be a big hit at your next party! It's a little sweet, a little spicy, and 100% delicious. It's easy to make, too. Recipe yields 3 1/2 cups; double it if you're serving a crowd (1 extra-large pineapple should be just right).

3 cups diced fresh pineapple (about 1 medium)
1 red bell pepper, chopped
1/2 cup chopped red onion (about 1/2 small onion)
1/4 cup chopped fresh cilantro
1 medium jalapeño*, seeds and ribs removed, finely chopped
3 tablespoons lime juice (from about 1 1/2 limes), or more if needed
1/4 teaspoon fine sea salt

Steps:

  • In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeño. Add the lime juice and salt, and stir to combine.
  • Season to taste with additional lime juice (for zing) and/or salt (for more overall flavor) if it doesn't taste amazing just yet.
  • For best flavor, let the pico de gallo rest for 10 minutes or longer before serving. It's best served fresh but keeps well, chilled, for up to 4 days.

2 c crushed pineapple
1/4 c brown sugar
2 Tbsp butter or margarine

Steps:

  • 1. Combine all the ingredients in a saucepan.
  • 2. Bring to a boil then reduce heat and simmer for about 3 minutes.
  • 3. If sauce ends up too thick, you can thin it out by stirring in a bit of water or even pineapple juice.
  • 4. If the sauce is too thin, try draining the pineapple before adding it to the saucepan. You could always add the pineapple juice as needed throughout the cooking process.

2 cups peeled and chopped fresh pineapple
1 teaspoon chopped garlic
1/2 cup pineapple juice (fresh or canned)
1/4 cup rice vinegar
1/4 cup lemon juice
1 teaspoon lemon zest
1 cup brown sugar
2 teaspoon red chili flakes
1 teaspoon salt
3 tablespoon cornflour
1/4 cup water

Steps:

  • Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
  • Do not blend the pineapple too much. We are looking for a coarse texture here.
  • Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
  • Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
  • Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

I've had this recipe for a long time. I originally clipped it from a Canadian magazine. I love pineapple! Wonderful on vanilla ice cream. Try it with chocolate sauce drizzled over. The pineapple-chocolate combo is yummy! Also good over homemade waffles.

1/4 cup light brown sugar (I use "dark" if that's what's in the cupboard)
1/4 teaspoon salt
1 tablespoon cornstarch
1/4 cup light corn syrup
2 cups fresh pineapple, finely chopped
1 teaspoon lemon juice

Steps:

  • Combine sugar, salt and cornstarch in a saucepan. Stir in the corn syrup and pineapple. Bring to a boil, stirring constantly. Cook until it starts to thicken (this should take 2-3 minutes). Remove from heat and stir in the lemon juice.
  • Let cool before using. Store in the refrigerator up to 2 weeks (if it lasts that long) .

2 cups half-and-half
1/3 cup packed light brown sugar
6 large egg yolks, lightly beaten
1/4 cup light rum
2 pineapple (large and ripe)
fresh mint sprig (to garnish)

Steps:

  • Heat half-and-half and brown sugar in heavy medium saucepan over medium heat to simmering.
  • Whisk about 1 cup hot half-and-half into egg yolks, then whisk yolks into remaining half-and-half. Cook, whisking constantly, over low heat until slightly thickened, 7-10 minutes. Strain through sieve and let cool to room temperature. Stir in rum and refrigerate covered.
  • Cut tops and bottoms from pineapples and cut away peels and eyes. Quarter lengthwise. Remove cores and cut each quarter lengthwise in half. Spoon sauce over pineapple and garnish with mint sprigs.
