SLOW-COOKER SMOTHERED PORK CHOPS



Slow-Cooker Smothered Pork Chops image

Pork chops, bathed in smoky, bacon-flecked gravy and cooked in the slow cooker until the pork is just done, but still moist and tender are destined to become a family favorite.

4 bone-in pork chops, about 3/4 inch thick (1 1/2 to 2 lb)
1/2 teaspoon pepper
1/4 teaspoon salt
4 slices bacon, cut into 1/2-inch pieces
1 large yellow onion, cut into 1/2-inch thick slices
2 cloves garlic, finely chopped
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 teaspoons Worcestershire sauce
2 bay leaves
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon cider vinegar

Steps:

  • Spray 4-quart slow cooker with cooking spray. Pat pork chops dry with paper towels; season both sides with pepper and salt.
  • Heat 12-inch nonstick skillet over medium heat. Add bacon; cook and stir 6 to 8 minutes or until browned. Using slotted spoon, transfer bacon to slow cooker. Pour off all but 1 tablespoon of bacon fat; reserving remaining fat for another use, or discard. Increase heat to medium-high; add pork chops to bacon drippings in skillet. Cook 3 to 5 minutes on each side or until browned. Transfer to slow cooker and stand pork chops up against sides of slow cooker, bone side down.
  • Add onions to skillet. Cook and stir 3 to 5 minutes, or until softened. Add garlic; cook and stir 30 seconds. Transfer to slow cooker. Add broth, Worcestershire sauce and bay leaves. Cover; cook on Low heat setting 1 1/2 to 2 hours or until pork chops are just cook through (at least 145°F in center, but still moist.)
  • Remove pork chops; cover with foil to keep warm. Remove bay leaves and discard. Increase slow cooker to High heat setting.
  • In small bowl, beat cornstarch, vinegar and water with whisk. Stir into liquid in slow cooker. Cover; cook 15 to 20 minutes, or until slightly thickened.
  • Ladle sauce over pork chops; serve immediately.

1 cup diced onions
1 cup sliced fresh mushrooms
1 tablespoon garlic powder

Steps:

  • Pat pork chops dry and place into a slow cooker. Add mushroom soup, onions, sliced mushrooms, and garlic powder.
  • Cook on Low for 8 hours or High for 4 hours, until pork chops are cooked through. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 -3 lbs pork loin chops, 1-inch thick (4-6)
2 tablespoons vegetable oil
2 onions, finely chopped
2 garlic cloves, minced
1/2 cup chili sauce
2 tablespoons cider vinegar
2 tablespoons brown sugar, packed
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard

Steps:

  • On a plate, combine flour, salt and pepper and dredge pork in mixture, coating both sides.
  • In a nonstick skillet, heat oil over medium heat and add pork in batches and brown both sides; transfer to slow cooker when done.
  • Add onions to pan, adding more oil if necessary, and cook, stirring until softened.
  • Add garlic and cook, stirring for 1 minute.
  • Stir in chili sauce, vinegar, brown sugar, Worcestershire sauce and mustard; bring to a boil.
  • Pour sauce over chops.
  • Cover and cook on low for 4-5 hours or cook on high for 2-2 1/2 hours, until meat is tender.

6 boneless pork chops, 1/2 inch thick, trimmed
2 tablespoons canola oil
2 cups onions, sliced 1/8-1/4 inch thick rings (about 3 medium)
1 cup white wine
1 teaspoon dried savory
1 teaspoon dried thyme
1 garlic clove, minced
8 ounces mushrooms, sliced
1 bay leaf
1 (1 1/4 ounce) package brown gravy mix (I used Knorr)
1 1/2 cups water (to prepare the gravy mix)
salt
pepper
paprika

Steps:

  • Sprinkle chops with salt, pepper, and paprika. Heat oil in a heavy skillet over medium heat. Lightly brown chops (about 5 minutes per side) and set aside.
  • Add wine to the skillet and deglaze, scraping the skillet to remove any bits. Turn off heat.
  • Prepare the gravy mix according the the package directions and set aside.
  • Place one layer of onions in the bottom of the crock pot.
  • Place 3 pork chops over the onions.
  • Place 1/2 of the mushrooms over the pork chops.
  • Sprinkle with 1/2 of the thyme and savory.
  • Add another layer of onions.
  • Layer the remaining pork chops and sprinkle them with the remaining thyme, savory, and garlic.
  • Place bay leaf on top.
  • Place the remaining mushrooms on top of that.
  • Cover with a layer of remaining onion slices.
  • Pour the wine that was used to deglaze the pan over the top.
  • Pour the brown gravy over that.
  • Cook for 3 1/2 hours on high or 6-7 hours on low.
  • Delicious served with mashed potatoes.

6 bone in center cut chops , or boneless...i think the bone in chops tend to be more tender, unless done in the crock pot
2 - 3 Tbsp oil for browning chops
salt and pepper to season pork
onion powder for seasoning pork
1 large onion, sliced
1 can(s) (14 ounce) cream of mushroom soup
1 can(s) (14 ounce) cream of chicken soup
1 can(s) ( 10 ounce) cream of onion soup
1/2 c milk
1/4 c worcestershire sauce
1/2 small can, french fried onions
prepared parsley buttered noodles, mashed potatoes or rice to serve with

Steps:

  • 1. Season chops.
  • 2. Brown chops over medium heat in oil for approximately 5 minutes each side.
  • 3. In the same skillet, caramelize onions.
  • 4. Place browned chops in the casserole dish. ( or crock pot )
  • 5. Mix soups, onion, milk and Worcestershire sauce in medium bowl.
  • 6. Pour mixture over chops; sprinkle with french fried onions and bake for at least 60 minutes or until chops are tender in a 350 degree oven. ( In crock Pot - 3 hrs high or 6 -7 hrs on low ).
  • 7. It should be bubbly and golden...
  • 8. Serve over buttered, parsley egg noodles, mashed potatoes or rice. Note: Sour cream can also be mixed in at the end of crock pot method. It gives it some added flavor. ( Optional ) I like it either way. If adding to oven method, add it to the soups before pouring over meat.
