2 chicken breasts
1 red onion, quartered
1 lemon, juiced and sliced
2 sprigs fresh rosemary
2 cloves garlic, minced
1 cup olive oil

Steps:

  • Combine the ingredients in a resealable bag and refrigerate.
  • When ready to cook or grill, remove from refrigerator.
  • Grill over medium heat or bake in an oven for approximately 20 minutes or until the chicken is no longer pink in the middle.

I made this up, loosely based on a chicken dish I had at a friend's house. You can always experiment with different cream soups and veggies. I buy a frozen bag of seasoning vegetables-onions, bell peppers and celery. I keep a bag of this on hand and use it for a lot of recipes. This cuts down on a lot of prep time. I also buy fresh mushrooms when they are on sale and freeze them, too.

4 boneless skinless chicken breasts
2 tablespoons olive oil
1 garlic clove, minced
1 celery rib, chopped
2 green onions, chopped
1/2 bell pepper, chopped
1/2 cup sliced mushrooms
1/4 cup prosciutto or 1/4 cup bacon, diced
1 (10 1/2 ounce) can cream of onion soup
1/4 cup white wine or 1/4 cup chicken broth

Steps:

  • Pound the chicken breast to even thickness.
  • Heat olive oil in a large deep skillet. Season breasts as preferred and then brown.
  • Remove breasts, set aside. Add more oil if needed, then saute all veggies for about 5 minutes If using bacon, add that too, it takes longer to cook than the prosciutto.
  • After 5 minutes add the diced prosciutto and garlic. Saute for another minute or 2.
  • Add cream soup and wine, stir until well combined.
  • Return chicken to pan, cover and simmer for 20 minutes. I usually turn the chicken once. You can season sauce further if needed. I think that it only needs a little fresh ground pepper to top it off.
  • This goes great with long grain and wild rice.

3 lbs chicken thighs
1 tablespoon fish sauce
1 lemongrass, chopped
1 1/2 inches ginger
1 shallot, chopped
2 -3 garlic cloves, diced
1 tablespoon soy sauce
1/2 teaspoon coriander powder
2 tablespoons curry powder
2 ounces Thai red curry paste
1 sweet potato, cut into 1-inch cubes
1 potato, cut into 1-inch cubes
2 carrots, cut into bite size pieces
4 tablespoons olive oil
24 ounces coconut milk
18 ounces water

Steps:

  • Place all ingredients except potatoes and carrots in a bowl or ziplock bag. Marrinate overnight for best results.
  • peal and cut potatoes into 1" cubes, rub with 1 - 2 tbsp olive oil (light coat) and place on a cookie sheet in a 400F oven until they brown all sides.
  • put 2-3 tbsp olive oil in dutch oven and cook chicken for 5 minutes.
  • Put lid on pot and cook on low heat for 15 minutes.
  • add coconut milk, water and potatoes into pot with no lid and cook for 20 - 25 minutes.
  • add salt, pepper, and fish sauce to taste.
  • Add carrots and shallots cook for 10 min.
  • Service with bread.

AMY'S GRILLED CHICKEN BREASTS

This recipe is delicious. I have not barbecued these but I have baked these in the oven. The flavors in this recipe are just wonderful and this is also a nice healthy and low fat recipe. The recipe is exported from Mastercook. This is a recipe that you definitely want to be sure and not overcook so the chicken stays moist and juicy. Preparation does not include marinating times.

4 skinless chicken breast halves
2 teaspoons Dijon mustard
3 1/2 tablespoons white wine vinegar
2 teaspoons garlic, minced
2 teaspoons honey
1 1/3 tablespoons fresh thyme or 2 teaspoons dried thyme, minced
1/3 teaspoon coarse salt
1 1/3 dashes red pepper flakes
1 tablespoon olive oil
4 sprigs fresh thyme

Steps:

  • Place the chicken breasts within a folded piece of plastic wrap; slightly flatten upper portion of each breast with the broad side of a chef's knife to promote even grilling.
  • Place breasts in a shallow glass or ceramic dish.
  • Place mustard, vinegar, garlic, honey, thyme, salt and pepper flakes in a small bowl; stir with fork to combine.
  • Add oil a little at a time and whisk to combine marinade.
  • Pour marinade over breasts.
  • Cover with plastic wrap and marinate in refrigerator, turning once or twice in marinade, for at least 2 hours, or up to 4 hours.
  • Remove breasts from marinade, scraping any bits clinging to chicken back into the shallow dish.
  • Transfer all marinade to small saucepan and bring to a boil; reserve.
  • Lightly grease grill rack with cooking spray.
  • Preheat grill.
  • Place breasts on grill.
  • Cook covered with lid, basting frequently with marinade, until tender, approximately 5 to 6 minutes on each side.

2 cups flour
6 tablespoons bay
4 tablespoons garlic salt
4 tablespoons salt
1 units salt and pepper
4 cups cooking oil
2 units eggs
4 units chicken

Steps:

  • Preheat oven to 375 degrees, and mix all of your spices with the flour until well mixed. Heat the oil.
  • Dip chicken into the eggs then dip into flour and spice mixture. Fry until golden brown.
  • Bake in an ungreased pan for about 30 minutes at 375 degrees. Cook time may change due to size of chicken.
