Having a Luau party? Then this is a must but, you'll want to make this throughout the year. The smell alone will get your significant other to release their grip on the remote, the kids will drift out of their bedrooms and the neighbors might come knocking. I dare to say, this might even be an aphrodisiac! It's great alone but if you're adventurous, slice some strawberries on it or drizzle chocolate syrup over it and top it with some whipped cream.

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 cup vegetable oil
4 eggs, lightly beaten
2 teaspoons coconut extract
1 cup buttermilk
1 cup shredded coconut

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour two 9 1/2" x 5 1/2" loaf pans.
  • Do not use a mixer with this recipe.
  • Use a spoon or spatula and stir by hand.
  • In medium mixing bowl, combine flour, baking powder, baking soda, and salt; mix well.
  • In large mixing bowl, combine sugar, oil, beaten eggs, and coconut extract; mix well.
  • Alternately add flour mixture and buttermilk to sugar mixture and stir only until moist.
  • Stir in shredded coconut.
  • Pour batter into the two prepared loaf pans, place on middle rack and bake for 1 hour.

1/2 small firm banana, sliced
3 tablespoons crushed pineapple, drained
1 tablespoon sweetened shredded coconut
1/2 teaspoon lemon juice
1 egg
4-1/2 teaspoons brown sugar
1/3 cup half-and-half cream
1/4 teaspoon vanilla extract

Steps:

  • Place half of the bread cubes in a 2-cup baking dish coated with cooking spray. Combine the banana, pineapple, coconut and lemon juice; spoon over bread cubes. Top with remaining bread cubes., In a bowl, beat the egg and brown sugar. Add the cream and vanilla; mix well. Pour over bread and press down slightly. Bake, uncovered, at 400° for 20-25 minutes or until a thermometer reads 160°.

1 (7-ounce) bag dried tropical fruit trio (recommended: Sun Maid)
1 (12-ounce) can coconut milk (recommended: Thai Kitchen)
1/4 cup dark rum (recommended: Myers's)
1 cup pineapple-coconut nectar (recommended: Kern's)

Steps:

  • Spray the inside of a 4 or 5-quart slow cooker with butter-flavored cooking spray.
  • In a large bowl, combine bread cubes, pineapple, and dried tropical mix.
  • In a medium bowl, whisk together coconut milk, rum, nectar, sugar, eggs, cinnamon, and salt. Pour over bread mixture. Stir until well combined and bread is saturated.

My friends and co-workers love when I bring bread pudding for pot lucks and brunches and this time I wanted to change it up from a fall or winter dish to something more for summer with the bright flavors that you would find at beach resorts in the tropics.

2-1/2 c whole milk
1 c half & half or cream
4 Tbsp unsalted butter
2 tsp vanilla
2 tsp ground cinnamon
3/4 c packed brown sugar, dark or light
1/3 c rum or rum extract
1-1/2 c ripe bananas, mashed
1 c chopped macadamia nuts, divided
1/2 c shredded coconut, plus 1/4 cup
1 c pineapple chunks, fresh or canned, cut into smaller pieces
4 eggs, beaten
1 large challah (egg bread) or brioche

Steps:

  • 1. Do ahead of time: If the bread is not stale, cut into cubes, place on a large cookie sheet and put into a 200 deg. F oven for 45 to 60 minutes until it's dried.
  • 2. Pre-heat your over to 350 deg. F
  • 3. Combine the first seven (7) ingredients in a large saucepan over medium heat until the brown sugar is thoroughly dissolved, whisking occasionally. Don't let the milk boil.
  • 4. Put the cubed bread in a large mixing bowl. Slowly pour the milk mixture over the bread and gently fold together to coat all of the bread. Add the beaten eggs, the mashed banana, the ½ cup of coconut and ½ cup of the macadamia nuts. Fold everything together and let rest for 5 to 10 minutes.
  • 5. Pour everything into a lightly greased 9 x 13 baking dish and sprinkle the remaining nuts over the top. Bake for 45 minutes, remove from the oven and sprinkle on the pineapple chunks and remaining coconut. Return to the oven for 5 to 10 minutes. Remove from the oven and let rest 5 to 10 minutes. Serve warm with ice cream or whipped cream.

2 small loaves or 1 large loaf pina colada pound cake or vanilla-flavored pound cake
2 sticks unsalted butter, softened, divided
Ground cinnamon
Ground nutmeg
1/2 pint vanilla ice cream, softened
4 bananas
1/2 orange, juiced
1 cup brown sugar
3 tablespoons good-quality rum
1 cup whipped cream
Toasted flaked coconut, for serving

Steps:

  • Cut cake into toast-size slices; spread 1 side with softened butter and sprinkle with cinnamon and nutmeg. Lightly brown the buttered sides in a large skillet while preparing other sides the same way. After cooking both sides, remove toasted cake from skillet and place on a plate with about 1/3 cup melted vanilla ice cream, allowing cake to soak up the melted ice cream from the bottom.
  • Peel bananas and set aside.
  • In skillet over medium heat, melt 1 stick butter. Add orange juice and stir in brown sugar. Stir constantly over medium-low heat until mixture completely liquefies. Add bananas to coat, cooking for about 2 minutes. Remove bananas to grill and continue to cook until tender. Remove sauce from heat, add 2 tablespoons rum, and baste bananas with sauce while grilling. When bananas are cooked to your liking, return them to the skillet with the sauce. Slice as desired; diagonally works best.
  • Stir the remainder of the ice cream into a bowl of whipped cream and add 1 tablespoon rum.
  • Place a piece of cake on a dessert plate, cover with sliced grilled bananas, top with brown sugar sauce, and ladle vanilla rum sauce around the cake. Sprinkle with toasted coconut and serve.

Even my husband who doesn't care for traditional bread pudding asks for a double batch so we can have leftovers. I have a hard time finding the pineapple-coconut nectar sometimes, but I find any tropical nectar will work.

1 tablespoon unsalted butter
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon pure vanilla extract
1/2 cup heavy whipping cream
2 medium bananas, sliced
1 cup chopped pineapple chunks
15 vanilla wafers
Toasted coconut flakes, for garnish

Steps:

  • Put the coconut milk and butter in a medium saucepan over medium-low heat, stirring gently to melt the butter and heat the milk.
  • Whisk together the sugar, cornstarch and 2 tablespoons water in a separate bowl to create a thick paste. Gently whisk into the milk and increase the heat to medium. Cook, stirring often, until thick and bubbly, 10 to 12 minutes.
  • Remove from the heat and stir in the vanilla extract. Let cool to room temperature, then transfer to a bowl and cover with plastic wrap, pressing the wrap directly against the surface. Refrigerate until set, 3 to 4 hours.
  • Beat the whipping cream with an electric mixer until stiff peaks form.
  • Arrange a layer of half of the banana slices on the bottom of a 9-inch pie dish. Add a layer of half the pineapple followed by half of the coconut pudding and a layer of half of the wafers. Top with some whipped cream and repeat to make a second layer.
  • Top with the remaining whipped cream and the toasted coconut flakes. Cover and refrigerate for at least 8 hours or up to overnight before serving.

1/2 cup sweetened flaked coconut
1/3 cup dried apricot, julienne cut
30 ounces Coco Lopez
2 cups whole milk
1 tablespoon vanilla extract
6 large eggs
1 1/2 cups sugar
vanilla ice cream
chocolate shavings
whipped cream
toasted coconut
powdered sugar

Steps:

  • Preheat oven to 350°F
  • Line bottom of a 10 x 13 x 3 inch pan with half of the white bread. Evenly sprinkly half of the julienne apricots and half of the shredded coconut over the white bread. Top that with the remaining bread cubes and then the remaining apricots and coconut. Distribute evenly. In a sauce pan, heat milk, coconut cream, vanilla and granulated sugar until the sugar completely dissolves and the milk is tepid but not hot. Stir occasionally. Remove from heat. In a separate mixing bowl, beat the eggs, then temper them by slowly adding 1 cup of warm milk mixture while stirring. Slowly pour the egg/milk mixture back in the warm milk and stir until well incorporated. Ladle the mixture over the bread, making sure all the bread gets moist. Cover the foiland bake in a water bath for 1 hour. Remove foil and bake for another 5-10 minutes until golden.
  • Serve warm with a scoop of vanilla ice cream on one side and whipped cream on the other. Sprinkle whipped cream with chocolate shavings and dust bread pudding with powdered sugar. Finish with toasted coconut on the ice cream.

Steps:

  • In blender or food processor, fitted with a metal blade, combine all the custard ingredients. Set aside.
  • Combine raisins and crushed pineapple (and the juice); set aside.
  • Place about 1/3 of bread cubes in slow cooker, place 1/3 of raisin/pineapple mixtures. Repeat 2 more times. Then pour the custard mixture over all. pressing so all the bread soaks in the custard mixture.
