Whole Wheat Penne Pasta with Broccoli Rabe & Sausage image

Celebrity chef Anne Burrell is no stranger to delicious restaurant foods. Anne used her expertise to lighten up this Italian favorite, using Greek yogurt as a low-fat alternative to the heavy cream traditionally used in Italian dishes. With her substitution, the sauce stays deliciously smooth without all the extra calories.

extra virgin olive oil 1/2 lb nitrate/ nitrate free turkey sausage 1 lb whole wheat penne pasta Big fat finishing oil Freshly grated Parmigiano 2 kosher salt 2 bunches of broccoli rabe 1/2 cup chopped pistachios 3/4 cup freshly grated Parmigiano 1/4 cup Greek yogurt

Steps:

  • Bring a large pot of well-salted water to a boil. Drop the rabe into the water, give it a swish, and remove it immediately, saving the water to cook your pasta in later. Reserve a cup of the rabe. Toss the rest in a food processor and pulse until you have a coarse paste. Add the pistachios and Parmigiano and purée until smooth. If it seems dry, drizzle in a little olive oil while the machine is running. Add the yogurt and pulse until combined; taste for seasoning. It should be slightly bitter, nutty, and creamy at the same time. Reserve. Coat a large sauté pan with olive oil and bring to medium-high heat. Add the turkey sausage, using a spoon to break it up, and cook until brown and crumbly, 8 to 10 minutes. Bring your broccoli rabe water back to a boil and toss in the pasta, cooking for 1 minute less than the package recommends. Drain the pasta and add it, along with 1/2 cup reserved pasta cooking water, the reserved rabe, and two-thirds of the pesto, to the pan with the sausage. Stir to combine and cook until the water evaporates and the pesto is clinging to the pasta. Remove from the heat, drizzle with some big fat finishing oil, sprinkle with more Parm, and stir vigorously to combine. Divide among bowls and serve immediately.

1 bunch broccoli rabe (about 1 pound), washed and coarsely chopped
1/4 cup pine nuts
3/4 pound whole wheat penne
2 tablespoons olive oil
3/4 pound Italian-style poultry sausage
3 garlic cloves, minced
1 cup low-sodium chicken broth
1/4 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper to taste
1/4 cup grated Parmesan cheese

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Place the broccoli rabe in a large microwaveable dish with 1 tablespoon of water. Cover tightly and microwave on high for 5 minutes. Drain and set aside.
  • 3. Spread the pine nuts in a single layer on a baking sheet and toast in the oven for about 5 minutes, or until they are fragrant and golden brown.
  • 4. Set a large pot of water to boil for the pasta. When boiling, add the pasta and cook according to the directions on the box. Drain. Meanwhile, heat 1 tablespoon of the oil in a large skillet over a medium flame. Add the sausage and cook for 5 or 6 minutes, until brown. Remove the sausage from the skillet and slice into 1/4-inch rounds.
  • 5. Add the remaining oil to the skillet and sauté the garlic until fragrant, about 2 minutes. Stir in the broccoli rabe and sliced sausage, and sautéfor about 3 minutes. Add the chicken broth, crushed red pepper, and salt and pepper to taste. Simmer on a low heat until pasta is ready.
  • 6. Combine the drained pasta with the sausage-broccoli rabe mixture and the pine nuts in a large bowl or pot. Serve topped with Parmesan cheese.

1 pound hot Italian sausage links, cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon crushed red pepper flakes
1 pound broccoli rabe, cut into 1 1/2-inch lengths
2 tablespoons grated Parmesan cheese
½ cup pasta boiling water
¼ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, reserving 1/2 cup of the water.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir the sausage pieces, garlic, and red pepper flakes in the hot pan until the sausage is no longer pink on the outside, about 4 minutes. Stir in the broccoli rabe and 2 tablespoons Parmesan cheese. Pour in the reserved 1/2 cup of pasta boiling water. Cover, and cook until the sausage is no longer pink in the center and the broccoli rabe is tender, 5 to 7 minutes.
  • Stir the cooked pasta, broccoli rabe, and 1/4 cup Parmesan cheese together until evenly mixed. Season to taste with salt and pepper to serve.

1 bunch broccoli rabe, tough stems removed
1/3 cup toasted pine nuts
1/3 cup freshly grated Parmesan, plus more for serving
1/3 cup plus 1 tablespoon extra-virgin olive oil, plus more for drizzling
1/4 teaspoon red pepper flakes
1 pound spicy turkey sausage, sliced 3/4 inch thick
1 pound whole-wheat linguine

Steps:

  • Bring a large pot of well-salted water to a boil. Blanch broccoli rabe until just tender, about 1 minute. Reserving cooking water, transfer broccoli to an ice-water bath until cool, then drain.
  • Pulse broccoli, pine nuts, and Parmesan in a food processor until coarsely chopped. Drizzle in 1/3 cup oil and process until smooth. Season with salt and red-pepper flakes.
  • Heat remaining 1 tablespoon oil in a large pan over medium-high heat. Brown sausage, turning, until cooked through, 5 to 7 minutes.
  • Meanwhile, cook pasta in reserved water according to package instructions. Drain, reserving 1 1/2 cups cooking water.

It's the combination of bitter broccoli rabe and hot sausage that makes this one of the greatest Italian-American dishes. My mother began making this when my Uncle Joe became a butcher and could provide an unlimited supply of his own handmade pork-and-fennel sausages. It's still one of my favorites of Mama's dishes. Here I use whole-wheat penne and low-fat turkey sausage-but the rest I left just like Mama's.

Number Of Ingredients 8

6 ounces whole-wheat orecchiette or penne
9 cups loosely packed broccoli rabe, trimmed and cut into bite-size chunks
1 1/2 links hot Italian turkey sausage, casings removed
8 garlic cloves, sliced very thin
1/2 teaspoon crushed red pepper
2/3 cup low-fat, low-sodium chicken broth
1/2 cup grated Parmigiano-Reggiano cheese
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, about 9 minutes. During the last 2 minutes of cooking, add the broccoli rabe. Stir, and continue to cook until both pasta and broccoli rabe are tender. Drain.
  • While the pasta is cooking, heat a very large nonstick pan over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it is golden brown and just cooked through, about 5 minutes. Transfer the sausage to a colander and set it aside to drain.
  • Wipe the pan out lightly and return it to medium-low heat. Add the sliced garlic and cook until it is fragrant and just beginning to turn golden, about 1 minute. Add the crushed red pepper and the chicken broth, and bring to a simmer. Add the cooked pasta and broccoli rabe, and allow the mixture to simmer for about 1 minute to release some of the starch from the pasta and thicken the sauce. Pour the pasta mixture into a large bowl, and toss it with the cooked sausage and the cheese. Season the pasta with salt and pepper to taste, and serve.

2 (14 1/2 ounce) cans diced tomatoes
1 (1 g) packet artificial sweetener

Steps:

  • Boil the pasta according to package directions.
  • In the meantime, sautée the garlic, onion and bell pepper in olive oil.
  • If you need more moisture, use Pam cooking spray.
  • When tender add diced tomatoes, basil, sweetener, and sliced kielbasa to tomato mixture. Heat through.
  • Drain pasta, toss with tomato mixture.
