BOILED PEANUTS RECIPE - 3 WAYS!

Boiled Peanuts RecipE - 3 Ways! image

A southern classic, here are three different ways to make boiled peanuts.

Provided by Rachelle Lucas

Categories     Appetizers

Time 50m

Number Of Ingredients 4

2 lbs raw peanuts
8 cups water
1/4 cup salt
1 Tbsp Seasoning (Optional)

Steps:

  • Traditional Boiled Peanuts: For boiling peanuts on the stovetop, you'll need a big sturdy pot. I like to use my dutch oven, but any big pot will do. You'll need 8 cups of water per 2 pounds of peanuts. Add ¼ cup of salt to the water and bring to a boil. Once it's got a rolling boil, reduce heat to low to simmer, cover, and wait. The peanuts will need to boil for 6 to 8 hours to soften the shell and cook the legume inside. I recommend checking on them every hour or so and giving them a good stir. The peanuts are done when you can easily break open the shell and the peanut inside has a soft bean-like texture.
  • Slow Cooker: Boiling peanuts in a slow cooker is the same exact measurements and recipe as above, only, you'll use a slow cooker instead of a pot on your stovetop. Once you set it to cover and simmer, check on them and give them a stir every one to two hours.
  • Pressure Cooker: This method is a time saver! For two pounds of peanuts, add ¼ cup of salt and enough water to cover them in your pressure cooking pot. This can be 6-8 cups of water. Add the lid and pressure cook on HI for 45 minutes. Let them naturally steam release, and then remove the lid.

BOILED PEANUT SOUP

Boiled Peanut Soup image

Provided by Alton Brown

Time 1h15m

Yield 6, approximately 3 quarts

Number Of Ingredients 12

8 slices thick-cut bacon, chopped
14 ounces chopped onions, approximately 3 cups
6 cups chicken broth
22 ounces shelled boiled Virginia or Valencia peanuts, recipe follows
1 tablespoon chopped fresh thyme leaves
3 cups 2 percent milk
4 teaspoons rice wine vinegar
1 1/2 teaspoons kosher salt
1/4 teaspoon ground white pepper
2 pounds in-shell raw Virginia or Valencia peanuts
3 ounces kosher salt
3 gallons water

Steps:

  • Place a 6 quart pot over medium-high heat. Add the bacon and cook, stirring frequently, until the bacon is browned, 6 to 7 minutes. Remove the bacon to a paper-towel lined plate or rack. Pour off all but 3 tablespoons of the bacon fat.
  • Decrease the heat to medium and add the onions to the pot. Cook, stirring occasionally until the onion is softened and beginning to brown around the edges, approximately 6 minutes. Add the broth, peanuts and thyme. Increase the heat to high, and bring to a boil. Once the mixture reaches a boil, reduce the heat to medium-low to maintain a rapid simmer. Cook until the peanuts begin to loosen from their skins and the broth is reduced by 1/4, approximately 20 to 25 minutes.
  • Turn off the heat and puree the mixture with a hand-held stick blender until smooth. Add the milk, vinegar, salt and pepper and puree until combined. Turn the heat back to medium and cook until warmed through, 5 to 7 minutes. Garnish with the reserved bacon and serve immediately.
  • Wash the peanuts in cool water until the water runs clear. Soak in cool water for 30 minutes to loosen any remaining dirt.
  • Drain and rinse the peanuts. Add the peanuts to a 12-quart pot along with the salt and 3 gallons of water. Stir well. Cover and cook on high for 4 hours. Check the texture of the peanut at this point for doneness. When done, boiled peanuts should have a similar texture to a cooked dry bean. It should hold its shape, but not crunch when bitten. Add more water throughout the cooking process, if needed. If necessary, continue cooking for 3 to 4 hours longer.
  • Drain the peanuts and store in a covered container in the refrigerator for up to 1 week.
  • *Cook's note: The cooking time can vary greatly depending on how fresh the peanuts are. The fresher the peanut, the less time it will take to cook.
  • approximately 4 pounds in shell and 2 pounds out of shell

BOILED PEANUTS

Categories     Peanut     Boil

Yield Makes: 4 pounds, enough for 8 for snacking

Number Of Ingredients 2

1 1/2 cups salt, plus more to taste
2 pounds raw peanuts in the shell, or 3 pounds green peanuts

Steps:

  • 1 In a 10- to 12-quart stockpot, stir 1/2 cup salt into 2 gallons of water until the salt dissolves, and add the raw peanuts. Use a large dinner plate or two to help submerge the floating peanuts. Allow to soak for 8 hours or overnight. (This step saves a little time boiling, and thus fuel, but if you don't have the luxury of time, skip this step. Skip it also if you're using green peanuts.)
  • 2 Drain the soaking water and fill the pot of peanuts with 2 gallons of fresh water and the remaining cup of salt. Note the level of the water on the side of the pot. Bring to a boil, reduce the heat to low, and simmer, covered, for 6 to 8 hours (or 2 to 3 hours for green peanuts), keeping the water in the pot within an inch or so of its original level with regular additions of water, until the peanuts are soft as a roasted chestnut or softer.
  • 3 When the peanuts have boiled for 3 hours (or 1 hour for green peanuts), sample them to check their texture and salinity. Remove a peanut, and when it is cool enough to handle, crack open the shell and give the kernel a chew, slurping some brine with it. If the peanut crunches, it should be cooked further. If the brine lacks enough salt, add by 1/4-cup amounts; if it is too salty, remove a portion of the water and replace with the same volume of fresh water. Allow an hour for the salinity to equalize before testing again. Sample every hour until the peanuts are pleasantly yielding and as salty and appetizing as a good pickle.
  • 4 When the peanuts are cooked to your satisfaction, turn off the heat and allow them to cool in the pot for an hour (or 30 minutes for green peanuts). When cool enough to handle, drain and eat immediately or store in the shell, in a sealed container, in the refrigerator or freezer. (Boiled peanuts will keep for 7 to 10 days in the refrigerator and for several months in the freezer.)

SALTED BOILED PEANUTS

Salted Boiled Peanuts image

This is a southern delicacy. Try them hot or cold. After they are done break off the shell they are soooo juicy and better than dry roasted. IMHO They also freeze well and can be heated up in the microwave.

Categories     High Protein

Time 3h10m

Yield 10-12 serving(s)

Number Of Ingredients 3

4 lbs raw peanuts, still inside the shell
10 ounces salt
water

Steps:

  • Rinse all dirt off of peanuts inside of sink and drain.
  • Place peanuts inside a large pot that leaves about 4 to 6 inches of room at the top of the pot.
  • Cover peanuts with water leaving until the peanuts float to within 2 inches from the top of the pot.
  • Add salt. A good hint is that all the salt you add will not be directly absorbed by the peanuts. So you can be generous.
  • Bring to a rigorous boil and continue until soft. The time to boil depends on the peanuts and I think it is best done outside.
  • Allow peanuts to absorb brine untill desired salty taste. About 1 hour +or -.

Categories     Lunch/Snacks

Time 42m

Yield 8 serving(s)

Number Of Ingredients 8

2 lbs raw peanuts, in the shell
3 japanese dried chilies
2 star anise
4 inches gingerroot, roughly sliced
10 szechuan peppercorns (optional)
3 teaspoons salt (to taste)
1/3 cup soy sauce
1 tablespoon sesame oil

Steps:

  • Put peanuts, spices, salt, and roughly 1/4 cup soy sauce in a pot and cover with water. Cover pot and bring to boil. Let simmer for 30-40 minutes, stirring every 7-10 minutes (if you don't, the peanuts floating on top won't cook through). When done (peanuts should be a little crunchy yet smushy in your mouth, and taste done), leave peanuts to soak in the brine while they cool. When cool, drain pot and discard spices; toss peanuts with a little more soy sauce and sesame oil (2 teaspoons each max) and serve cold.
