When my DH and I got married he requested Creamed Lima Beans. I had heard of Creamed Corn before but never limas. I soon found out it was a dish his great aunt prepared for him regularly so I dutifully learned to fix it too. She also used this sauce for creamed peas or carrots.

Steps:
- Cook lima beans according to package directions; I use the microwave.
- Melt butter in saucepan, stir in flour and blend well.
- Add milk, about 1/2 cup at a time, and blend with whisk.
- Cook over medium heat until thickened.
- Total amount of milk depends on how thick you prefer the sauce to be.
- Stir in sugar, salt and pepper.
- Add cooked, drained lima beans.

Steps:
- Cook lima beans per package directions
- Make a roux by melting butter in a saucepan over medium-high heat.
- Whisk in flour and let cook for about 1 minute. (Keep whisking.)
- Slowly pour in milk and bring to a light boil.
- Add cheese to the sauce and additional salt & pepper if necessary,
- Add lima beans to the sauce and stir to combine.

~ CREAMY LIMA BEANS ~
One of my very favorite meals my Gram would make when I was a kid. True comfort food. My beans are my own recipe. Not sure how she made hers, but these come real close. I serve them just like she did, with a side of yummy fried potatoes and favorite bread to soak up the yummy juices. Enjoy!

- 1. Place 8 cups water in a dutch oven and bring to a boil. Once boiling add the bean, and boil for 5 minutes. Turn off burner, cover pot and let sit for 1 hour.
- 2. Drain and rinse beans.
- 3. In a med skillet over medium heat add the oil, onion, garlic, celery and ham. Saute until vegetables become tender, about 5 minutes.
- 4. Place beans back into dutch oven and cover with 6 cups water, making sure all beans are covered. Add the vegetable mixture and thyme. Stir and bring to a boil. Boil for 30 minutes, then lower heat, add bay leaf and simmer until beans are to desired tenderness Add more water as they cook if need be. We like ours thick, not like soup, but want some juice to serve over the potatoes Salt and pepper to taste.
- 5. In total mine were cooked in 1 1/2 hours after the initial soaking. They are delicious served with fried potatoes and onion, fried in bacon fat. This is exactly how my Gram would serve them.
BABY LIMA BEANS (BUTTERBEANS)

- Shell the beans and wash thoroughly. Put 2 cups water and the salt in a medium saucepan and add the beans. Cook the beans until tender, about 30 minutes. Drain the liquid and add the butter. Sprinkle lightly with the black pepper before serving.

SIMPLY DELIGHTFUL AND EASY LIMA BEANS
I love lima beans and wanted to make a simple recipe that was tasteful but quick and easy to make. I had made something similar years back but changed it to suit my taste.

Steps:
- Place frozen lima beans in a saucepan. Cover with the water.
- Add garlic, thyme and bay leaf and stir. Bring to a boil. Cover, reduce heat, and simmer 15 - 20 minutes or until tender.
- Into a sieve that is place over a bowl, pour off broth. Pour approximately 1/2 - 1 cup of broth back into saucepan with lima beans. Shake any garlic or thyme that sticks to sieve back into the lima bean mixture. Discard bay leaf. Stir in salt and pepper to taste. Evenly pour olive oil over all and stir. Check for seasoning and adjust with salt, pepper, olive oil, if necessary. Serve hot.
- NOTE: to remove leaves from stem, turn stem upside down and run both index finger and thumb down main stem. This will remove outer stems and leaves. Add outer stems and leaves to dish. Do not chop.

LINDA'S PRESSURE COOKER LIMA BEANS
I hate lima beans. They are grainy and gross. My husband LOVES them so one day I accidentally made lima beans that I absolutely adored. It was a timing mistake, but a delightful mistake! The beans were supposed to cook for 20 minutes but I set the timer for 60!

Steps:
- Put the hocks and water into your pressure cooker and set for one hour on high pressure.
- When done, remove to a bowl while the rest of the ingredients cook.
- Add all the veggies and seasonings to the liquid in the pressure cooker and set to high pressure for one hour.
- Meanwhile, pick the meat out of the hocks and dice.
- When the time is up on the pressure cooker let it cool down naturally and then add the meat back to the cooker.
- Test a lima bean - they should be creamy with no grainy texture at all. If they are grainy turn the pressure cooker on for about 15 more minutes.
- Serve it up with Yankee corn bread!
- This recipe is for frozen lima beans, not dried or canned.

This is a great recipe for lima beans when you don't want just the normal ones. If at all possible, look for danish blue cheese, which has a slightly milder flavor and is heavily laced with the greenish-blue veins.

- Combine the lima beans, celery, and onion in amedium saucepan; add water to cover. Bring to a boil; reduce heat, and simmer uncovered for 10 minutes or until tender. Drain well.
- Return bean mixture to the stove and stir in sour cream and cheese. Cook over medium-low heat, stirring frequently until the cheese melts (do not boil). Stir in the pimento. Sprinkle with the bacon. Serve immediately.

AMISH BAKED LIMA BEANS

- Boil beans until soft. Drain off excess water. Combine cornstarch and water and add to beans. Cook until thickened. Fry bacon until crisp. Drain. Crumble and add to beans. Add remaining ingredients. Pour into baking dish. Bake at 350 degrees for 30 minutes.
