1 cup (225 g) butter (at room temperature)
1 cup (210 g) brown sugar
½ cup (100 g) granulated sugar
2 eggs (at room temperature)
1 teaspoon vanilla extract
2 ½ cups (350 g) all-purpose flour*
½ teaspoon baking soda
1 teaspoon salt
2 cups (12 oz. or 340 g) chocolate chips or chunks
1 cup (110 g) chopped walnuts or pecans (optional)

Steps:

  • In a large mixing bowl, cream butter and both types of sugar using the paddle attachment of your stand mixer if you have one. Cream but do not beat until fluffy, we don't want to beat in air. Add eggs and vanilla and mix to combine. Combine flour, baking soda and salt in a bowl. Add it to the butter-sugar mixture and beat on low speed until flour is incorporated. Scrape mixing bowl to ensure flour is evenly distributed in the dough. Stir in chocolate and, if using, nuts. You may need to do this with a wooden spoon.
  • Tightly cover the bowl and chill dough for at least 3 hours or overnight.* Before baking, allow dough to stand at room temperature for about 45 minutes until it is soft enough to shape into balls.
  • Preheat oven to 350°F (175°C) and line baking tray with parchment paper. Roll dough into balls of about 1 ¼ inches (3 cm) in diameter (slightly smaller than golf balls). Place dough balls on baking tray, leaving plenty of room for the cookies to spread.
  • Bake cookies for 10-12 minutes. They should be golden brown and crispy on the edges, no longer shiny but still quite soft in the middles. Do not overbake! Take cookies out of the oven and allow them to cool on the baking tray for 2 minutes before transferring them with a spatula to cooling racks. The cookies firm and set as they cool.
  • Store cooled cookies tightly covered at room temperature for up to one week or for up to three months in the freezer.

Steps:

  • Sift the flour, salt, baking powder and baking soda into a large bowl.

2 teaspoons pure vanilla extract

One 3.9-ounce packet instant chocolate pudding
2 large eggs
2 cups all-purpose flour
2 cups semi-sweet chocolate chips
2 cups crushed salted pretzel rods
Cooking spray, for greasing

Frozen whipped topping, such as Cool Whip, for serving

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Whisk together the butter, both sugars, vanilla and salt in a large bowl. Whisk in the baking powder, baking soda and chocolate pudding. Add the eggs, one at a time, using a wooden spoon to mix well after each addition. Stir in the flour, chocolate chips and pretzels.

  • For a Rocky Road Bar:
  • Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.

200 g brown sugar
2 tablespoons white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons instant coffee
220 g flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/2 teaspoon salt (or a bit less if your butter is salted)
200 g chocolate chips
50 g chopped nuts (eg pecans, walnuts, hazlenuts)

Steps:

  • Preheat oven to 140 degrees Celsius.
  • Cream butter with sugars.
  • Add egg, vanilla and coffee and beat well until combined and creamy.
  • Mix slowly flour, soda, bicarb and salt until totally combined.
  • Add choc chips and nuts, mix.
  • Form into balls (whatever size you like your cookies, I used about a tablespoon, you can use more if you like a bigger cookie). Place on a sheet of baking paper on a cookie tray, spaced well apart as the cookies will spread.

  • Mix the butter and sugar together using an electric whisk or hand whisk until very light and fluffy, then beat in the egg and vanilla. Fold in the flour, baking powder, chocolate and ¼ tsp salt as quickly as you can. Don't overwork the dough as this will toughen the cookies.
