SLOW-COOKER APPLE BUTTER
Instead of standing for hours at the stovetop, utilize your slow cooker to do the all the work for making homemade apple butter.

Steps:
- Cut apples into 1-inch cubes; place apple cubes and 1 ½ cups of the sugar in a 6-quart slow cooker. Cover and cook on HIGH 6 hours.
- Stir in cinnamon, nutmeg, cloves, and remaining 1 ½ cups sugar. Cover; cook on LOW until apples are very soft, 4 hours.
- Place half of apple mixture in a blender. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Pulse until smooth or to desired texture; repeat with remaining apple mixture. Cool completely. Store in an airtight container in the refrigerator up to 1 month.
AMAZING 24-HOUR SLOW COOKER APPLE BUTTER

- Place the apples in a 7-quart slow cooker and add the remaining ingredients. Give it a gentle stir. Cook the apples on the "low" setting for 20 hours, giving the mixture an occasional stir after the first few hours of cooking.
- After 20 hours, use a [url:1]blender stick [/url]to puree the apple butter until smooth. Continue to cook, now with the lid open, for the remaining 4 hours to allow the apple butter to further thicken. Depending on how juicy your apples are, you may need to cook it a bit longer until the desired consistency is reached. At this point, taste and add more sugar if desired.
- If you'd like to store your apple butter long-term, it's super easy to can it! This water bath canning set has everything you need. While the apple butter is still hot, ladle it into hot sterilized jars, leaving 1/4 inch headspace, and process the jars in a water bath for 15 minutes. The apple butter will store in a dark, cool place for up to a year. Alternatively, freeze or store in the fridge in air-tight jars for at least a month. Makes about 5 pints.

LINDA'S 24 HOUR CROCK POT APPLE BUTTER
This is very close in flavor to the Apple Butter you can find and roadside stands in Amish Country, in Lancaster PA, very dark and very thick. I have been making apple butter since 1979 and when I adapted it to the crock pot it was lots easier and less messy. Store in the refrigerator in a jar for two weeks or can in half-pints according to your canner instructions.

- Stir everything together in your crock pot and turn to high for one hour to get it started.
- Turn to low and let cook for 24 to 36 hours, stirring down a few times a day. You may need to take the lid off for several hours to let the water evaporate. I usually have to let it go six hours without the lid but my crock pots were invented when dinosaurs roamed the earth.
- Jar it up and either process it or store in the refrigerator.

AMAZING APPLE BUTTER
I decided I wanted to attempt to make apple butter for the first time, so I searched everywhere for a recipe. There were so many to choose from, that I was confused on which one to pick, so I decided to take bits and pieces from a few of the best ones and come up with my own version. The result is 'Amazing Apple Butter.'

- Combine apples and apple juice in a stockpot; bring to a boil. Reduce heat and cook at a simmer until apples are soft and mushy, 20 to 30 minutes.
- Spoon apples into a food mill and process into puree while discarding the cores and peels remaining in the mill. Transfer process apples to a slow cooker.
- Cook on High with the lid off until the moisture evaporates and the volume reduces by about half, overnight to 24 hours.
- Stir sugar, apple cider vinegar, cinnamon, cloves, and allspice through the apple puree.
- Continue cooking on High until mixture mounds on a chilled plate without any water separating from the edges, another 2 to 6 hours.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process 5 to 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
