1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon thyme
1/2 teaspoon curry powder
1/2 teaspoon salt
6 chicken pieces, skin and fat removed
1/4 cup olive oil or 1/4 cup canola oil

Steps:

  • Mix together all the seasoning ingredients.
  • Wash chicken pieces and pat dry with paper towel.
  • Place flour in a paper bag and shake pieces, one at a time.
  • Fry in heated oil until meat is cooked, turning once.
  • Time should be 10-15 minutes.

This recipe works great for wings, chicken strips, chicken fried chicken or possibly chicken fried steak(I haven't tried the steak one yet). I'll be darned if I know where I got the recipe from but if and when I find out, I'll attribute it to the proper provider. I have made a few minor alterations to fit our taste and I believe it was for the better.

2 cups flour
1/2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1 tablespoon celery salt
1 tablespoon black pepper
1 tablespoon dry mustard
4 tablespoons paprika
2 teaspoons garlic salt
1 teaspoon ground ginger
1 teaspoon msg (optional) or 1 teaspoon Accent seasoning (optional)

Steps:

  • Combine all ingredients in a bowl.
  • Using sparingly as this batch will do number of dishes.
  • Dip chicken pieces in beaten eggs.
  • Next, toss chicken pieces in bread crumbs (seasoned or unseasoned).
  • Finally, toss chicken pieces in Seasoned Flour recipe.
  • Pre-heat oven to 350 deg.
  • Place chicken in a tray or cookie sheet lined with foil (shiny side down), spray with Pam or equivalent.
  • Place chicken pieces on the tray after completing above the process. Spray chicken with Pam, turn, spray other side.
  • Cover with foil and bake for 40 minutes for drums, chicken breasts (bone-in), thighs etc.
  • For wings and chicken fried chicken, follow the above procedure but reduce cooking time to about 15 minutes.
  • Remove foil cover and put chicken back in the oven for the same amount of time. (cut time back by 25% if using a convection oven).
  • Chicken should be nicely browned, crispy and moist.

"SHE READY" FRIED CHICKEN

6 pieces bone-in, skin-on chicken (I use a combination of legs, wings and thighs)
1/4 cup sunflower oil
1 tablespoon minced garlic
1 tablespoon seasoned salt (I like Lawry's)
1 tablespoon BBQ seasoning (I like Shaky Dust)
1 tablespoon garlic salt
1 teaspoon freshly ground black pepper
1 1/2 cups all-purpose flour
1 cup cornmeal
1/4 teaspoon cayenne pepper

Steps:

  • Preheat an air fryer to 375 degrees F.
  • To a large resealable plastic bag, add the chicken, sunflower oil, minced garlic, 1/2 tablespoon each of the seasoned salt, BBQ seasoning and garlic salt and 1/2 teaspoon of the black pepper and seal the bag. Gently massage to coat the chicken evenly. Marinate for 15 to 30 minutes.
  • Add the flour, cornmeal, cayenne and remaining 1/2 tablespoon each of the seasoned salt, BBQ seasoning and garlic salt and remaining 1/2 teaspoon black pepper to a separate resealable plastic bag. Seal and shake to combine.
  • When the chicken is done marinating, add a few pieces at a time to the seasoned flour and shake to coat. Remove the chicken from the bag and shake off the excess flour mixture. Place the chicken pieces on the air fryer rack in an even layer without the pieces touching.
  • Seal the fryer and cook until the chicken is golden brown and crispy and reaches an internal temperature of 165 degrees F, 30 to 40 minutes. Remove from the air fryer and serve.

2 cups white flour or 2 cups whole wheat flour
2 tablespoons salt
1 tablespoon celery salt
1 tablespoon pepper
2 tablespoons dry mustard
2 tablespoons paprika
3 tablespoons Accent seasoning
1/2 teaspoon thyme
1/2 teaspoon ginger
1/2 teaspoon sweet basil
1/2 teaspoon oregano or 1/2 teaspoon marjoram
1/2 cup water

Steps:

  • Mix all ingredients except water thoroughly in a bowl. Store in airtight container.
  • If using chicken cut, skin and wash chicken. Roll in seasoned flour. Fry until light brown. Place in heavy pan with lid, adding water. Bake in 300 oven 45 minutes - 1 hour.
