Creamy Pasta Bake with Cherry Tomatoes and Basil image

One of my favorite midweek pasta bakes - my whole family loves it and there is not much prep. Once the pasta bake is in the oven, you can make a salad or set the table and then it's time to eat.

1 (16 ounce) package penne pasta
1 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
3 (6 ounce) cans tomato sauce
2 tablespoons tomato paste
¾ cup heavy whipping cream
½ cup grated Parmesan cheese
salt and freshly ground black pepper
1 pinch white sugar
1 pound cherry tomatoes, halved
1 ¼ cups shredded mozzarella cheese
1 small bunch fresh basil, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
  • Heat olive oil in a large skillet over medium heat and cook onion until soft and translucent while penne is cooking, about 5 minutes. Add garlic and cook an additional 30 seconds. Stir in tomato sauce and tomato paste and cook until slightly reduced, about 5 minutes. Add cream and Parmesan cheese and season with salt, pepper, and sugar.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
  • Stir some pasta cooking water into the sauce and add cooked penne. Remove from heat and stir in cherry tomatoes, 1/2 the mozzarella cheese, and basil. Pour penne mixture into the prepared baking dish and cover with remaining mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, about 20 minutes.

If you can't find creme fraiche (I find it in the deli section of the super market, near the specialty cheeses), you can use sour cream. Serve as a side dish or on top of grilled meat. Also good on crusty bread as an appetizer. When you have some cold and left over, put them on top of a salad.

2 tablespoons butter
4 large tomatoes
1/4 cup basil leaves, chopped
7 ounces creme fraiche (or sour cream)

Steps:

  • In a cast iron frying pan, or at least a heavy one, melt the butter. Cut the tomatoes in half and season them with salt and pepper.
  • Over a low heat, cook the tomatoes, cut side down, for about 10 minutes. (The butter should foam and turn light brown, if it starts getting too dark, your heat is up too high).
  • Turn the tomatoes over and add the creme fraiche.
  • Leave to heat for 2 more minutes. Stir in the basil. Adjust the salt and pep, and serve.

CREME FRAICHE RISOTTO WITH HEIRLOOM TOMATOES AND BASIL



Creme Fraiche Risotto with Heirloom Tomatoes and Basil image

1 shallot, minced weighing 2 ounces
1 Tablespoon olive oil
1 cup aborio rice
1 Teaspoon sea salt
2 1/2 - 3 cups water
1/2 cup creme fraiche
sea salt to taste at the end of cooking
1-2 Tablespoons of freshly squeezed lemon juice, to taste
12 ounces heirloom or cherry tomatoes, halved or quartered to make bite sized pieces
6 big leaves of basil thinly sliced (1/4 cup loose pack slivers of basil)
olive oil for drizzling
coarse sea salt to sprinkle over the top (sometimes called finishing salt - see notes)

Steps:

  • Place a large saucepan or small pot, (around 9″ in diameter) over medium heat.
  • Add the olive oil and minced shallot to the pan and sauté until the shallot is tender.
  • Add the aborio rice to the pan and sauté until the rice turns slightly translucent. Then, begin to add the water in 1/2 cup increments. Stir vigorously for 30-45 seconds every few minutes, adding an additional 1/2 cup water only when the rice has completely absorbed it's liquid.
  • While the risotto cooks, prepare the tomato topping by mixing together the tomatoes and slivered basil together in a bowl. Set the mixture aside until the risotto has finished.
  • Continue adding water in 1/2 cup increments and stirring the risotto until it's tender, about 20 minutes. You may need more or less water than is called for in this recipe due to varying circumstances like the rate of evaporation. You'll know the risotto is done when it's doubled in size and the rice is tender, but with a small speck of white remaining in the center of the grain when you bite into it, (al' dente just like pasta).
  • When the risotto is finished take it off the heat and stir in the creme fraiche. Add additional sea salt to taste. This step is important because it will be very bland if you don't add additional sea salt!
  • Plate the risotto by spooning some into a pasta bowl, top with a generous amount of the tomato mixture, drizzle with olive oil, and sprinkle with a finishing sea salt (see the notes about finishing salt).
  • Serve immediately.

4 cups tomato juice
1/4 cup red wine vinegar
2 to 3 teaspoons red pepper sauce

1/2 teaspoon Worcestershire sauce
2 cloves garlic, finely chopped
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
1/2 cup herb-flavored croutons, if desired
2/3 cup crème fraîche or sour cream
1/4 cup chopped fresh basil leaves or 2 teaspoons dried basil leaves

Steps:

  • In large bowl, mix all gazpacho ingredients except croutons until well blended. Cover and refrigerate 4 to 6 hours to blend flavors, stirring occasionally.
  • In small bowl, mix crème fraîche and basil. Stir gazpacho; ladle into serving dishes. Top each serving with basil crème fraîche and croutons.

Keep it fresh with this pasta supper of chopped tomatoes and baby courgette in a crème frâiche sauce

2 tbsp olive oil
200g baby courgette , sliced on the diagonal
4 large tomatoes (about 400g in total)
200g penne
1 garlic clove , crushed
pinch of sugar (optional)
2 tbsp crème fraîche
small bunch basil , torn

Steps:

  • Heat the oil in a large frying pan and fry the courgettes for 4-5 mins until softened. You may need to do this in 2 batches, depending on the size of your pan. Remove and set aside.
  • While the courgettes cook, boil the tomatoes for 15 secs in the water you will cook the pasta in, then plunge them into a bowl of cold water. Remove the skins and seeds, and chop the flesh. Add the pasta to the boiling water and cook following pack instructions.
  • Add the tomatoes and garlic to the courgette pan. Cook on a high heat until the tomatoes start to break down. Taste and season, adding the sugar if it needs it.
  • Drain the pasta, reserving some of the water, and tip it back into the pan. Add the tomatoes and courgettes, crème fraîche and basil, adding a little of the pasta water if necessary to moisten.

Save those wider-than-tall, about-to-burst tomatoes for slicing and showering with flaky sea salt. For this recipe, you want smaller, sturdier varieties like kumato, Campari or petite heirlooms. Brushing the uncooked puff pastry with crème fraîche adds a subtle tanginess that you won't necessarily notice, but the tomatoes will taste better for it. You might be tempted to skip salting your tomatoes, but don't: It helps prevent a soggy crust while intensifying the flavor of your tomatoes. This tart is best enjoyed straight out of the oven, at its flaky prime, but it's also great at room temperature, or even cold, devoured directly from the fridge.

1 sheet packaged puff pastry, thawed (about 7 ounces)

1/4 small red onion, very thinly sliced

Steps:

  • Line a large baking sheet with paper towels. Set the sliced tomatoes on top in a single layer. In a small bowl, combine 1 teaspoon salt and 1 teaspoon pepper. Use it to season the tomatoes evenly on both sides, cover with another paper towel and let sit, 15 minutes, allowing the salt to draw moisture out of the tomatoes.
  • As the tomatoes sit, heat the oven to 400 degrees and set a rack in the middle of the oven. Working on a large sheet of parchment paper, roll out the puff pastry into a 9-by-11-inch rectangle, trimming any uneven edges. Prick the inside with a fork every few inches, leaving a 1/2-inch border. Using a pastry brush, coat the center of the puff pastry with the crème fraîche, leaving the border unbrushed.
  • Working within the border, layer the tomatoes and red onion on top of the tart, allowing them to overlap slightly. Transfer to a sheet pan and bake, rotating halfway through, until puff pastry is browned and puffed, 30 to 35 minutes.
  • Sprinkle tomatoes with Aleppo pepper, if using. Dollop with fresh ricotta. Thin pesto with olive oil until it reaches the proper consistency for drizzling; drizzle on top of tart to taste. Top with basil, if using, and serve warm or at room temperature.
