SALMON PASTA SALAD
This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

- In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

SMOKED SALMON PASTA SALAD RECIPE
This simple Smoked Salmon Pasta salad is a delicious make ahead recipe perfect for a summer picnic or pot luck. Everyone loves pasta salad, and it is easy to make for a crowd! A simple dressing of mayonnaise and sour cream, celery and gherkins for crunch, plus fresh dill and chives to create an easy salad bowl that will please the whole family. Packed with flavor this Smoked Salmon Pasta Salad is perfect for lunch or dinner!

- Cook the pasta in well salted water for 2 minutes longer than the packet suggests. Once cooked, drain and quickly cool the pasta under cold. running water.
- Mix the mayonnaise and sour cream together in a small bowl, season with salt and pepper.
- Pour the dressing over the pasta and stir gently to coat the pasta.
- Add the chopped celery, gherkins, dill and chives to the pasta and then fold together to combine all the ingredients.
- Add the smoked salmon pieces and stir well.
- Grate in 1 tbsp of lemon zest (save the lemon for a G&T later)
- Garnish with extra dill and chives and serve, or refrigerate for upto 24 hours.

MAMA'S SMOKED SALMON PASTA SALAD
We make pasta salad quite a bit in our house & this is definitely one of our very favourites. The kids wolf this down! It is great as a light lunch, a side dish, on a picnic etc. You can add ingredients or change them round to suit your tastes or what you have on hand.

- Add the rest of the ingredients & mix well.
- You can add more mayo or a simple vinigrette if you want a creamier salad.

- Bring a large pot of lightly salted water to a boil, and add farfalle pasta. Cook until al dente, 8 to 10 minutes. Drain, and rinse under cold water. Transfer to a serving bowl, and gently toss with the olive oil until all the pasta is coated. Cover, and chill at least 30 minutes.
- Arrange the cucumber slices around the edges of the pasta. Top pasta with smoked salmon, tomato, and red bell pepper. Season with salt and pepper. Top with Monterey Jack cheese and salad dressing to serve.

CREAMY SMOKED SALMON PASTA
I found this recipe on the internet - if I am not mistaken it was iGOURMET. Have tweaked it a bit but it is wonderful as is! Fantastic! :)

Steps:
- Bring a large pot of lightly salted water to boil.
- Add pasta and cook for 8-10 minutes or until al dente; drain.
- Melt butter in a large non-stick skillet over medium heat.
- Stir in crushed red pepper, allow it to season the butter.
- Saute onion in butter until tender, about 8 minutes.
- Add garlic in the last 2 minutes.
- Then, stir in flour; gradually stir in milk; whisking all the while.
- Check for seasoning.
- Heat to just below boiling and then gradually stir in cheese until the sauce is smooth.
- Stir in peas and mushrooms; cook over low heat for 4 minutes.
- Toss in smoked salmon and cook for 2 more minutes.
- Serve over pasta, a salad of greens, French bread and a bottle of wine.

- Boil a salted pot of water for the orzo and cook it al dente according to package instructions. When it's done, rinse it with cool water and drain it thoroughly, then add it to a large bowl.
- Meanwhile, combine the dressing ingredients in a small bowl. Prep your other salad ingredients and add them to the large bowl.
