3 tablespoons maple syrup
1 ½ teaspoons salt

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add the pumpkin seeds, walnuts, almonds, cinnamon, maple syrup, and salt, and stir to combine.
  • Transfer to a parchment paper-lined baking sheet and bake for 10 minutes.
  • Let cool completely, then toss with cranberries.
  • Store in an airtight container for up to 1 week.

½ cup peanut butter
⅓ cup honey
1 cup rolled oats
½ cup almonds, chopped
½ cup peanuts
½ cup raisin
½ cup chocolate candy

Steps:

  • Melt peanut butter and honey together in the microwave, stirring every 15 seconds.
  • Add oats, almonds, peanuts, and raisins into the bowl and mix until well coated. Let the mixture cool to room temperature.
  • Add chocolate candies and mix just until combined.
  • Line a baking dish with parchment paper and pour the cooled mixture into the pan. Press into the edges of the pan.
  • Cool in the refrigerator for at least 2 hours. Cut and serve.

4 tablespoons unsalted butter, melted
1 cup pure maple syrup, preferably Grade B
2 cups raw unsalted almonds (about 10 ounces)
1 cup wheat germ
3 cups rolled oats
1/2 teaspoon coarse salt
1 cup cup dried bananas (about 4 ounces), cut into 1/2-inch pieces
2/3 cup cup dried cranberries (about 3 ounces)

Steps:

  • Preheat oven to 375 degrees. Combine butter, maple syrup, almonds, wheat germ, oats, and salt in a large bowl. Spread mixture on a rimmed baking sheet lined with parchment paper.
  • Bake, stirring once and rotating sheet after 20 minutes, until just golden, 35 to 40 minutes total. Let cool on sheet on a wire rack. Transfer to a large bowl, and stir in bananas and cranberries.

¾ cup maple syrup
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
1 cup rolled oats
1 cup pecan halves
2 cups whole almonds
½ cup raisins
½ cup dried cranberries
½ cup sunflower seeds
1 cup chocolate covered peanuts (such as M&M's®)

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  • Stir the maple syrup, vanilla extract, and cinnamon together in a small saucepan over medium heat until it begins to simmer. Meanwhile, combine the rolled oats, pecans, almonds, raisins, cranberries, and sunflower seeds in a large mixing bowl. Pour the hot maple syrup over top, and stir until evenly mixed. Spread onto prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Remove from oven, scrape onto a cold baking sheet, and cool to room temperature. Break into clumps and stir in the chocolate covered peanuts once cool.

2 tablespoons butter (Earth Balance is an excellent brand) or 2 tablespoons margarine (Earth Balance is an excellent brand)
1/3 cup plain unsalted almonds
1/3 cup walnuts
1/3 cup pecans
1/4 teaspoon salt
1/4 cup maple syrup
1/3 cup unsweetened dried shredded coconut
1/4 cup pitted and chopped delgate dates
1/4 cup pitted and chopped medjool dates
1/4 cup dried sweetened cranberries
1/4 cup roasted salted sunflower seeds

Steps:

  • Melt butter in skillet.
  • Add almonds, walnuts and pecans to the butter and sprinkle salt on top. Sauté nuts until butter coats them and they begin to toast. (3 to 4 minutes).
  • Add maple syrup (will bubble up) and sauté nuts until it begins to caramelize. (about 2 to 3 minutes).
  • Sprinkle coconut on top of nuts and stir until well coated over all of the nuts.
  • Remove skillet from heat and place nuts in large bowl.
  • Stir in dates, cranberries, and sunflower seeds until well incorporated.

1 lb walnuts
1 lb cashews
1 lb pecan halves
8 ounces slivered almonds
11 ounces banana chips
13 ounces papayas, chunks
13 ounces pineapple, wedges
12 ounces raisins (as dry as possible)
12 -24 ounces granola bars (also as dry as possible; I use Nature Valley brand Oats 'n Honey)

Steps:

  • Toss all ingredients into a paper grocery bag, except for the granola bars.
  • Your goal is to crumble up the granola into bite-size pieces.
  • So get a baseball bat, a rubber mallet, or a jackhammer, and unleash all of the stress and frustration you have accumulated so far this week upon the poor, unsuspecting box o' granola.
  • (If he sees you doing this, your DH will be extra nice to you for the rest of the day.) Toss the granola bits into the bag with the nuts and fruit.
  • Shake.
