1 large portobello mushroom cap
1 tablespoon coarsely chopped shallot
3 tablespoons lightly packed fresh parsley
1 1/4 pounds 85% to 93% lean ground turkey
2 tablespoons extra-virgin olive oil, plus more for brushing
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
8 thin slices manchego or white cheddar cheese
4 English muffins, split
Dijon mustard, mayonnaise and sliced avocado, for topping

Steps:

  • Use a spoon to scrape out the gills from the underside of the mushroom cap. Cut the cap into 1-inch pieces and transfer to a food processor. Add the shallot and parsley and pulse until chopped.
  • Transfer the mushroom mixture to a large bowl. Add the turkey, olive oil, Worcestershire sauce, 1 teaspoon salt, and pepper to taste; gently mix with your hands until just combined. Divide into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Put on a large plate, cover and refrigerate until firm, about 30 minutes.
  • Preheat a grill to medium. Brush the grates with olive oil. Grill the patties, undisturbed, until marked on the bottom, 4 to 5 minutes. Give the patties a quarter turn and cook until marked again, 4 to 5 more minutes. Flip the patties and grill until cooked through, 6 to 7 more minutes; top each with 2 slices cheese during the last 3 minutes of cooking and cover with a disposable aluminum pan to melt.
  • Toast the English muffins on the grill, then spread with mustard and mayonnaise. Serve the patties on the English muffins; top with avocado.

Steps:

  • Preheat a grill to medium high. Make the dressing: Puree the yogurt, mayonnaise, lemon juice, Worcestershire sauce, chives, basil, and salt and pepper to taste in a blender. Transfer to a small bowl, cover and refrigerate until ready to use.
  • Make the burgers: Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the buns, cut side down, until lightly toasted, about 1 minute.
  • Top the bun bottoms with the lettuce, tomatoes, burger patties, alfalfa sprouts and avocado. Drizzle with the dressing, then cover with the bun tops.

1/2 cup shredded zucchini

  • In a large bowl, combine the first seven ingredients. Crumble turkey over mixture and mix well. 1 large egg
1 tablespoon teriyaki sauce, reduced sodium
1/2 cup bread crumbs, plain
1/2 teaspoon onion powder
1/4 teaspoon salt
1 pound turkey, ground
1 medium tomato, red
4 leaf outer lettuce, green leaf
4 oz rolls, hard

Steps:

  • Finely dice the water chestnuts. Toss into a mixing bowl with egg, teriyaki sauce, breadcrumbs, onion powder, salt and ground turkey. Mix together and then shape into 4 burger patties.
  • Preheat and indoor grill or if the weather permits, use the outdoor grill. Cook each burger for 6-8 minutes per side, or until no longer pink in the center.
  • While burgers cook pull off 4 large leaves for the burgers and set aside. Chop the remaining lettuce and put into a bowl with the dressing and croutons. Toss together to fully coat.
  • Serve burgers on buns topped with sliced tomatoes, lettuce leaves and condiments of choice.

My family has been trying to eat better. I am a diabetic and I also had open heart surgery to repair my Mitral Valve a few years ago, so we are trying to use more chicken and turkey in our diet. We really loved turkey burgers that we got in a fast food resturant, be we felt that we could do better at home. The problem was that the turkey burgers were really dry when we tried to make them ourselves. This recipe is the result of a lot of experimenting, until we found a way to make the burgers moister and not so heavy. Bread crumbs and an egg weren't enough so we added the vegetables and that did the trick.
