PARMESAN CHICKEN TENDERS RECIPE WITH ONION DIP
Steps:
- Combine the flour, salt, and pepper in a shallow bowl.
- Beat the eggs with 1 tablespoon of water in a second shallow bowl.
- Combine the breadcrumbs and Parmesan in a third shallow bowl.
- Dredge the chicken tenders on both sides in the flour mixture. Then dip both sides into the egg mixture. Then roll chicken in the breadcrumb mixture, pressing lightly to help the breadcrumbs stick.
- Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium-low heat until butter is melted. Cook the chicken tenders for about 3 minutes on each side, until cooked through. (Don't crowd the pan.)
- Add more butter and oil and cook the rest of the chicken tenders.
- Keep the chicken tenders warm in a preheated oven set to 200 degrees F on a baking sheet if needed. Serve with onion dip.
- Cut the onions in half and then cut into 1/8-inch thick slices. (about 3 cups)
- Heat the butter and oil in a large skillet over medium heat until butter is melted.
- Add the onions, beef bouillon cubes, cayenne, pepper, and black pepper.
- Saute for 10 minutes, being sure to smash the bouillon cubes and mix the granules in with the onions.
- Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized.
- Remove from heat, and allow the onions to cool.
- Place the cream cheese, sour cream, and mayonnaise in a mixing bowl and beat together with a hand mixer.
- Add the onions and fold into the dip base until onions are incorporated.

- Preheat oven to 400°F (200°C). Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
- In a large bowl, whisk together the egg, oil, lemon juice, parsley, garlic, salt and pepper.
- Dip chicken tenders into egg mixture and let sit for 5 minutes while preparing crumb mixture. OPTIONAL: Cover and allow to marinate in the refrigerator for 30 minutes to an hour (if time allows).*
- In another bowl, combine both breadcrumbs, paprika, garlic powder, onion powder and parmesan cheese.
- Dredge the egg coated chicken in the breadcrumb/parmesan mixture, lightly pressing to evenly coat.
- Arrange tenders on the baking sheet / tray and lightly spray with cooking oil spray.
- Bake for 10 minutes. Flip and bake for a further 5-10 minutes or until cooked through. (Broil in the last 2-3 minutes for a golden crispy crumb!)

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
- Season chicken strips with salt and pepper.

These are great to have while watching football. The preparation time for the onion dip is 15 minutes with a 30-minute cook time. The onion dip makes about 2 cups. You can prepare it ahead of time if you like and serve it at room temperature. The preparation time for the chicken tenders is 15 minutes prep time and 15 minutes cook time. I have combined these times for the preparation and cook time in the recipe. Of course, you can just make the chicken tenders without the dip.

- In a shallow dish, combine flour and 1/2 teaspoon each salt and black pepper. Add chicken to flour mixture and turn to coat. Place milk in a separate shallow dish. - Pat chicken dry, and season both sides with salt and pepper.
- In a medium bowl, stir together the sour cream, chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken and turn to coat. (Chicken can sit in the marinade for up to 8 hours. Refrigerate, then let come to room temperature before cooking.)
- In a shallow bowl or lipped plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.
