MOM'S MEAT LOAF

Steps:
- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

Steps:
- In a large bowl, combine beef, cracker crumbs, onion, egg, milk, 1/4 cup catsup, Worcestershire sauce, salt and pepper; mix thoroughly.
- In a shallow baking pan, shape into loaf.
- Spread remaining catsup over top.
- Cover and bake at 350º for 30 minutes.
- Drain off fat and continue baking, uncovered, 30 minutes longer.
MOM'S MEATLOAF

- Preheat oven to 350 degrees F.
- In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
- In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
- Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
- Bake uncovered for 45 to 60 minutes.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MOM'S MEATLOAF
Lot's of meatloaf recipes out there, but what makes this one different is the brown sugar/soy sauce glaze that cooks over the top. This is my mom's recipe and I haven't found one better than hers. I had submitted it to the local newspaper a couple of years ago. Yesterday I ran into a lady and after the introductions she asked me if I was the one who had submitted a meatloaf recipe to the paper a few years back. I was stunned that she would associate a stranger with a recipe. Anyway she said that their family has really enjoyed it and they have given the recipe to all of their friends and they all love it. Wow, so I thought I would submit this one more meatloaf recipe so I coud spread the joy. Ha!

Steps:
- Preheat oven to 350.
- In a large bowl beat eggs.
- Add onion, salt, pepper, Ketchup, ground beef and breadcrumbs.
- Mix gently with a light hand.
- Free form loaf in a sprayed 13 X 9 pan, lightly pressing the mixture down so it fills the entire pan ( a flat loaf).
- In a small bowl place brown sugar; add enough soy sauce to make a thick sauce.
- Pour over the top of the meatloaf and bake.

- Preheat the oven to 375°. In a medium skillet, heat the olive oil. Add the onion and garlic and cook over moderate heat until softened, about 8 minutes. Let stand until cooled to room temperature, about 15 minutes.
- In a large bowl, mix the bread crumbs with the milk until evenly moistened. Add the 2 teaspoons of ketchup and the onion mixture, egg, Worcestershire sauce, thyme, salt, black pepper and mustard and mix until blended.
- In a food processor, pulse the bacon until finely chopped; add it to the bread crumb mixture. Add the ground beef, veal and pork and mix gently with your hands until evenly combined.
- In a medium roasting pan, form the meat into a 9-by-5-inch loaf. In a small bowl, mix the remaining 1/4 cup of ketchup with the brown sugar and cayenne. Spread the ketchup over the top of the meat loaf. Bake for about 1 hour and 10 minutes, until the glaze is browned and an instant read thermometer inserted in the center of the meat loaf registers 160°. Let the meatloaf rest for 10 minutes. Cut into slices and serve.
