Number Of Ingredients 10

1 cup milk
1/4-pound (1 stick) unsalted butter
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch nutmeg
1 cup all-purpose flour
4 extra-large eggs
1/2 cup grated Gruyere, plus extra for sprinkling
1/4 cup freshly grated Parmesan
1 egg beaten with 1 teaspoon water, for egg wash

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
  • In a saucepan, heat the milk, butter, salt, pepper, and nutmeg over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
  • Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside.

Green Chile Cheeseburgers image

3 serrano chiles
2 Anaheim chiles
2 poblano chiles
1 Vidalia onion, peeled and roughly chopped
Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
1/2 teaspoon ground cumin
Juice of 1 lime
Canola oil, for grilling
2 pounds ground brisket (80/20 blend)
Kosher salt and freshly cracked black pepper
4 large brioche hamburger buns
2 tablespoons butter, melted
8 white Cheddar slices
4 butter lettuce leaves
1 Vidalia onion, thickly sliced
1 large heirloom tomato, thickly sliced
Mayonnaise, for serving, if desired

Steps:

  • Preheat the broiler to high.
  • Begin by making the green chile salsa: Place the chiles on a roasting tray with the garlic and onions. Drizzle with olive oil, season with salt, pepper and cumin and then place under the broiler to cook, 5 to 7 minutes. Once the skins have blistered and the onions have slightly charred around the edges, remove from the oven. Let cool slightly, then remove and discard the skins of the large chiles, along with the seeds and stems. Place the chile flesh, onions and garlic in a food processor. Add the lime juice and pulse 5 to 6 times to roughly chop the vegetables up; do not over chop as you want the salsa to be chunky and still have lots of texture where you can see pieces of the chile. Taste and season once more, then set aside as you prepare the burgers.
  • For the burgers: Preheat an outdoor grill and wipe down the grates with an oil-blotted paper towel. This not only cleans the grill but creates a nonstick surface.
  • Form the ground brisket into four 8-ounce patties about 1/2-inch thick. Make them slightly bigger in diameter than your buns, as they shrink when they cook. Also, add a dimple in the center as the burger puffs up in the middle when cooked, and this will ensure a flat, even patty. Sprinkle both sides with salt and pepper, and then place on the hot part of the grill. Cook for 5 to 7 minutes on one side, then flip the patties and top with the cheese. Close the grill or place a metal bowl over the top to melt the cheese and cook for 2 to 3 more minutes. Cut open the hamburger buns and lightly toast on the grill.
  • To assemble, place the lettuce, onion and tomato on the base of the burger bun. Top with a grilled patty and place a heaping spoonful of roasted green chile salsa on top. Smear the top burger bun with mayo, if desired, and place the top half of the burger bun on top. Serve.

I found this recipe on a trip to Southern California. Since then, this versatile dish has become one of my family's favorites. I serve it as a special breakfast, for brunch or even Sunday night supper. Sausage or ham goes well with this snappy dish...and don't forget some corn muffins!

1 cup 4% cottage cheese
2 cups shredded Monterey Jack cheese

1 can (4 ounces) chopped green chiles, drained

  • In a large bowl, beat eggs well. Stir in next five ingredients. Add green chiles. Pour into a greased 8-in. square baking pan. Bake at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve immediately.

These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

½ cup water
¼ cup butter
1 pinch salt
½ cup flour
2 large eggs
1 teaspoon fresh thyme leaves
1 teaspoon ground black pepper
½ cup shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
  • Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.
  • Whisk 1 egg, thyme, and black pepper into cooled dough until egg is completely incorporated. Add remaining egg and whisk until completely incorporated into dough. Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.
  • Bake in the preheated oven until golden and puffed, 15 to 20 minutes.

Very nice as a quick snack or to serve with soup. They are mild spicy and you can spice them up by adding some ground cayenne or chilipepper. The original recipe uses fresh chillies but the canned ones make these puffs more moist. If you want to make them with fresh, use 2 green chillies, seeds removed and finely chopped.

1/2 cup milk
2 cups grated cheddar cheese
salt (to taste)
1 (4 ounce) can green chilies (drained)
1 1/4 cups all-purpose flour (1/4 cup less if you fresh chilies)
2 teaspoons baking powder
1 cup Rice Krispies

Steps:

  • Preheat oven to 375°F.
  • Mix together in a bowl: egg, milk, salt (if using) cheese and the drained chillies.
  • Sift the flour together with the baking powder over the bowl and mix well.
  • Now add the rice krispies, and mix again.
  • Place rounded teaspoons on greased but better still, lined with parchment paper, baking trays and bake for 10 to 12 minutes.

  • Preheat oven to 350 degrees.
  • Beat eggs until light and lemon colored.

  • Add cottage cheese, mozzarella, green onions, cheddar, melted margerine, and green chilies.
  • Stir until well mixed.
  • Pour into Pam sprayed 9x13 inch baking dish.
  • Bake about 40 minutes, or until top is slightly brown around the edges and center appears firm.
  • Serve immediately.
  • Can be served with salsa on the side.

2 eggs, slightly beaten
1/4 cup finely chopped chives
1/4 teaspoon white pepper
1 lb phyllo dough, leaves thawed
1/4 cup butter

Steps:

  • Grate cheese into a bowl, stir in eggs, chives and white pepper until well mixed.
  • Lay one sheet of phyllo on your work space and brush with butter. Lay another sheet on top and brush with butter. Cut the sheets into 3 long strips. (Keep remaining dough covered with wax paper and damp towel to prevent it from drying out.).
  • Place a heaping teaspoon filling at the end of each strip, fold end over end into a triangular shape (flag fold).
  • Place on grease cookie sheet. Puffs can be covered and refrigerated no longer than 24 hours at this point.
