I got this recipe from a flax seed site and it is one I make often. The recipe says it makes 12 muffins, but because it has so much flax in it, I make 18. I have only made this with freshly ground flax seed as that is all I use. This has a very nutty flavor and is great with dried fruit. Please Note: Only eat one a day!!!! THESE ARE SUPER POTENT!!!

1 1/2 cups flour
1 1/2 cups ground flax seeds
3/4 cup brown sugar
1 tablespoon baking powder
3/4 teaspoon nutmeg
1 1/2 teaspoons cinnamon
2 cups milk
1 egg
1/2-1 cup dried fruit

Steps:

  • Preheat oven to 350°F.
  • Grind flax seeds.
  • Mix first 6 ingredients together.
  • Add milk and egg.
  • Spray muffin pan with cooking spray or use liners.
  • Fill until 3/4 full.
  • Bake at 350 F for 25-30 minutes.

I found this recipe in a new cookbook that I just received called "Prevention's Diabetes Diet Cookbook'. These warm and tasty quick breads make getting out of bed worthwhile. The flaxseed contains soluble fiber like the kind found in beans and oat bran. I can't wait to make these for my dad who is a diabetic!

2 1/4 cups whole grain wheat flour or 2 1/4 cups whole wheat pastry flour
4 teaspoons baking powder
1/4 cup flax seed, ground
1/2 teaspoon salt
2/3 cup blueberries
2/3 cup raspberries
1 cup 2% low-fat milk
2 eggs
2/3 cup sugar
1/3 cup canola oil
1 teaspoon almond extract

Steps:

  • Preheat the oven to 400.
  • Line a 12-cup muffin pan with paper liners.
  • In a large bowl, whisk together the flour, baking powder, flaxseed and salt.
  • Add the berries and stir to coat.
  • In another bowl, combine the milk, eggs, sugar, oil and almond extract.
  • With a fork, beat until smooth.
  • Pour the egg mixture into the berry mixture and gently mix with a fork to moisten the dry ingredients (Don't overmix - a few lumps in the batter are normal).
  • Dollop the batter into the prepared muffin cups.
  • Bake for 20-24 minutes or until a toothpick comes out clean.
  • Let stand for 5 minutes on a rack before serving.

3/4 cup oat bran
1/2 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 1/2 cups carrots, shredded
2 apples, peeled and shredded
1/2 cup raisins (optional)
1 cup nuts, chopped
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla

Steps:

  • Mix together flax seed, oat bran, sugar, baking soda and powder, salt and cinnamon.
  • Stir in carrots, apples, raisins, and nuts.
  • Combine milk, eggs, vanilla.
  • Pour wet ingredients into dry.
  • Stir until dry ingredients are moistened.
  • Do not over mix.
  • Fill muffin cups 3/4 full.
  • Bake at 350°F for 15-20 minutes.

  • Preheat oven to 400. Combine all ingredients in bowl. Add any other desired fruit - apples, dates, apricots, bananas, etc. Spring flaxseed over mixture. Spoon into muffin tin. Bake for 20-25 minutes.

These are low-fat and low-sugar, which is good for us diabetics. I use a little real sugar with the Splenda, because the texture turns out better, and my blood-sugar levels are under control, but some diabetics may want to use a cup of Splenda and no brown sugar. (or use Splenda Brown Sugar Blend-I have never used it so don't know the proportions)

1 cup all-bran cereal (shredded, not flakes)
1/4 cup Egg Beaters egg substitute
1 cup nonfat milk
2 tablespoons canola oil
1/2 cup unsweetened applesauce
1/4 cup light brown sugar
1 cup unbleached flour
1 teaspoon cinnamon
2 tablespoons flax seeds
3/4 cup Splenda granular
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 375°F.
  • Coat a 12-count muffin tin with nonfat cooking spray.
  • In a large bowl, combine liquid ingredients with All-Bran and brown sugar. Stir until moist and set aside for 5 minutes.
  • In another bowl, combine remaining ingredients. Add to bran mixture and stir gently until blended. Do not overmix.
  • Spoon batter into muffin cups (batter will be thin) until they are 1/2-3/4 full. Bake 15-20 minutes or until wooden pick inserted in center of muffin comes out clean. DO NOT OVERBAKE! Remove from oven and let sit 5 minutes. Remove to wire rack to cool.

  • In a large bowl, mix the flour, flax seed meal, sugar, baking soda, baking powder, salt, and cinnamon. In a separate bowl, combine the milk, eggs, and vanilla. Mix well, and slowly pour the liquid ingredients into the dry ingredients, stirring. When the wet and dry ingredients are combined, add the apple puree and blueberries, and gently stir to combine.
  • Using a measuring cup or scoop, evenly divide the batter between the muffin cups. (They will fill nearly all the way to the top, and because these are gluten-free muffins, they aren't going to rise too much.) Sprinkle the flax seeds on top of each muffin. Bake, uncovered, for 20-30 minutes or until a toothpick inserted in the center of the muffin comes out clean. Cool in the muffin tin for 5 to 10 minutes.
